MONTE CRISTO BREAKFAST SANDWICH

- Make the French toast: Whisk together the eggs, milk and vanilla in a medium bowl until smooth. Place the bread slices in the bowl of egg mixture and coat both sides. Heat 2 skillets (each large enough to hold 2 slices of bread) over medium heat. Add half of the butter to each. When the butter begins to foam and brown slightly on the edges, arrange 2 slices of bread in each skillet. Cook until the undersides have browned, 3 to 5 minutes. Turn the slices over and cook for an additional 3 to 5 minutes, reducing the heat to medium-low if the bread is browning too quickly. Transfer the French toast to a plate and let cool slightly. Wipe out the skillets. Preheat the oven to 350 degrees F.
- Cook the sandwiches: Return the skillets to medium heat and add about 1 tablespoon butter to each. Allow the butter to melt and froth, swirling to coat the bottoms of the skillets. Divide the eggs between the skillets and spread evenly on the bottoms. Arrange two slices of the French toast, slightly apart, in each skillet. Cook, shaking the skillets a little bit so the eggs don't stick, until the eggs on the bottom of the skillet sear and firm up, 1 to 2 minutes.
- Finish: Divide and spread the remaining butter on the tops of the 4 slices of French toast. Slide a spatula underneath the eggs and flip everything over so the buttered French toast slices are now on the bottoms of the skillets. Season with salt. Layer on top of one piece of French toast per skillet with the cheese, ham and turkey. Slide the spatula under one slice of the French toast and fold it over the other so it looks like a sandwich! Repeat with the second skillet. Transfer the skillets to the oven until the cheese melts and the centers get hot, about 3 minutes.
- Transfer the sandwiches to a cutting board and cut each in half. Serve two halves on each plate with maple syrup for drizzling and dunking.
MONTE CRISTO EGG BAKE
I LOVE Monte Cristo sandwiches! This is perfect for those Sunday brunches or when guests are staying at your house. You can make it the night before and pop it in the oven the next morning. Oh and the crunchy top is SO yummy!

- Spray a 13x9 baking dish with nonstick spray. Arrange a single layer of 8 bread slices in the baking dish. Top each slice with a slice of ham, turkey and cheddar. Cover with remaining 8 bread slices.
- In a large bowl, combine the eggs, milk, onion salt, and dry mustard; pour over top of sandwiches in dish. Cover and refrigerate overnight or for at least 8 hours.
- The next day, take dish from fridge to warm slightly on counter. Preheat the oven to 350 degrees. Meanwhile, in a large bowl, combine crushed corn flakes and melted butter; mix well. Spread on top of the egg dish. Bake at 350 degrees F. until crisp and golden, about 1 hour.
MONTE CRISTO BAKE
This is like Monte Cristo Sandwiches, but is much easier! (It is essentially a strata!) Make sure that you eat these "sandwiches" with a fork (at the least) and enjoy! Note: Cooking time does not include time in the fridge.

- Trim 4 pieces of bread and put in the bottom of a 9 x 9 glass casserole.
- Evenly sprinkle 1 cup of cheese over the bread.
- Layer the turkey and ham evenly over the cheese.
- Evenly sprinkle the remaining cheese over the meat.
- Cover with the remaining pieces of bread.
- Beat together the eggs, milk, mustard, and onion powder, then pour over the bread.
- Press lightly on the bread with a fork, pushing down into the egg mixture.
- Cover and chill for 6 hours or overnight.
- Bake at 325 degrees F for 60 minutes or until the top and sides are golden.
- Cool for 10 to 15 minutes before serving, sprinkled with the powdered sugar.
- Serve with raspberry preserves on the side.

THE BIG EGG MONTE CRISTO

- For the French toast batter: Whisk the eggs, sugar, lemon zest, cardamom, salt, cream and vanilla in a bowl until blended.
- Dip the bread in the batter and cover all sides. Put the breadcrumbs on a plate and coat the dipped bread in the breadcrumbs.
- Add butter to a pan on medium-high heat to melt and place coated bread in the pan.
- Once it is golden brown, add more butter and flip the bread over. Remove the French toast from the pan once golden brown.
- Pour the maple syrup on each piece of toast. Crumble Gorgonzola cheese on one piece of French toast per sandwich. Grill off the Black Forest ham and place on top of the cheese.
- Cook an egg (any style) and place on top of the ham.
- Put the other piece of French toast on top of the ham and dust with powdered sugar.
MEMPHIS MONTE CRISTO

- Preheat oven to 350 degrees F. Heat a large griddle pan over medium heat with vegetable oil.
- In a medium bowl, whisk the eggs, cream, sugar, salt, and cayenne until blended. Pour into an 8 by 8-inch baking pan.
- Spread some of the barbecue sauce onto each slice of bread. On 4 pieces bread, add 1 slice each of cheese, ham, and turkey, and repeat layer. Top with the other pieces of bread and press the sandwiches together with your hands. Dip into the wet batter turn to coat.
- Add the battered sandwiches to the hot griddle and cook until golden brown on 1 side. Flip and continue cooking the other side until golden. Remove to a rack-lined sheet tray. Put into the preheated oven and bake until the cheese melts, about 5 more minutes. Remove to a cutting board and slice into triangles. Dust with Neely's dry rub, if desired, and serve.

- Heat oven to 450°F.
- Fill bread slices with 2% Milk Singles and ham.
- Beat egg whites and milk in shallow dish or pie plate. Dip each sandwich into egg mixture, turning to coat both sides (let bread soak about 5 sec. on each side). Place sandwiches on baking sheet sprayed with cooking spray.

One of my sons could not get past the Monte Cristo sandwich at the Blue Bayou Restaurant in Disneyland. I made this casserole for him and he loved it. I hope you do to.

Steps:
- Preheat oven to 375^F.
- Pour milk in a microwaveable container and heat until hot.
- Whisk eggs in small bowl and add hot milk to eggs, blend.
- Cut French toast into 3/4 inch cubes; place in a large bowl.
- Pour egg mixture over bread cubes, toss gently, set aside.
- Combine ham, turkey, cheese and parsley in a bowl.
- Spray a 13x9x2 inch baking pan with cooking spray.
- Layer half the french toast cubes with half the meat mixture in bottom of pan.
- Repeat.
- Let stand for at least 10 minutes (It can be held overnight.) Set at room temperature for a few minutes before baking-or bake a little longer if it's cold.
- Bake 30-35 minutes until golden brown and set in center.
- Cool 10 minutes.
- Sprinkle with powdered sugar.
- Slice strawberries.
- Combine strawberries with strawberry ice cream topping in a small bowl.
- Cut casserole into squares.
- Serve topped with strawberry mixture.
