CREAM OF PIMIENTO SOUP

If you like pimientos, this is a rich, delicious, elegant soup, great for a first course. I got it many years ago from a Southern Living Magazine.

Number Of Ingredients 9

1 (4 ounce) jar diced pimentos (do not drain)
2 1/2 tablespoons flour
2 tablespoons butter
1 (14 1/2 ounce) can chicken broth (or homemade)
1 1/2 cups half-and-half
2 teaspoons grated onions
1/2 teaspoon salt
1/4 teaspoon hot sauce
2 teaspoons finely chopped fresh parsley

Steps:

  • Place the pimientos, with the juice, in the container of an electric blender.
  • Process until smooth, stopping once to scrape down the sides.
  • Set the pimiento mixture aside.
  • Melt butter in a heavy saucepan over low heat.
  • Add flour& stir until mixture is smooth.
  • Cook for 1 minute, stirring constantly.
  • Add chicken broth& half and half gradually to flour mixture, and continue cooking over medium heat, stirring constantly, until broth mixture is thickened and bubbly.
  • Stir in the reserved pimiento puree, onion, salt& hot sauce.
  • Cook over low heat, stirring constantly, until thoroughly heated.
  • Sprinkle each serving in the middle with about 1/2 tsp.
  • fresh chopped parsley.
  • Makes 3 3/4 cups, enough to serve 4.

1 (14 1/2 ounce) can ready-to-serve chicken broth
1 1/2 cups half-and-half
2 teaspoons grated onions
1/2 teaspoon salt
1/4 teaspoon hot sauce
sour cream (optional)

Steps:

  • Place pimento in container of an electric blender and process until smooth, stopping once to scrape down sides. Set pimento aside.
  • Melt butter in heavy saucepan over low heat; add flour and stir until flour mixture is smooth. Cook 1 minute, stirring constantly.
  • Add chicken broth and half-and-half gradually to flour mixture, and cook over medium heat, stirring constantly, until broth mixture is thickened and bubbly.
  • Stir in pimento, onion, salt, and hot sauce; cook over low heat, stirring constantly, until thoroughly heated.
  • Garnish with sour cream, if desired.

This great soup can be on the table in less than 30 minutes.It's so easy, and I've made it so many times, that I memorized the recipe! Serve with lots of whole-wheat bread for dipping, mmm.

2/3 cup chopped onion
3 -4 garlic cloves, minced
1 medium jalapeno pepper, chopped (size depending on how hot you like it)
3 cups cooked pinto beans
2 cups sodium-free vegetable broth or 2 cups bean stock
1 1/2 cups fresh tomatoes, chopped or 1 1/2 cups use canned tomatoes
1 1/2 teaspoons cumin
3/4 teaspoon oregano
1/4-1/2 teaspoon salt (optional)

Steps:

  • Soften the onions, garlic and pepper in water for 5-10 minutes. Prepare other ingredients.
  • Add remaining ingredients except salt and bring to a boil. Reduce heat to a simmer and cook, mostly covered, 10-15 minutes.
  • In 2 batches, puree the soup in a food processor until creamy(haven't tried the blender, though that would probably work too). Add salt to taste, if desired.
  • Return to pot and keep over low heat until ready to serve.

3 cups medium noodles or 1 cup elbow macaroni
1 cup celery, chopped
1/2 cup onion, chopped
2 tablespoons butter or 2 tablespoons margarine
1 (11 ounce) can condensed cheddar cheese soup or 1 (10 3/4 ounce) can condensed cream of mushroom soup
3/4 cup milk
1 (9 1/4 ounce) can tuna, drained and broken into chunks
1/4 cup pimiento, chopped
2 tablespoons parmesan cheese, grated

Steps:

  • Cook noodles or macaroni according to pkg directions and set aside.
  • Meanwhile, in a saucepan cook celery and onion in butter or margarine till softened. Stir in soup and milk.
  • Gently stir in tuna, pimiento and the cooked noodles or macaroni.
  • Sprinkle with Parmesan cheese and bake at 375 degrees for 25 to 30 minutes or until heated through.
  • Extra-Creamy Tuna Noodle Casserole: Prepare as above, but substitute 8 oz carton of sour cream or plain yogurt for the milk.
  • Stir 1 to 2 tbsp of milk into mixture if needed to obtain desired consistency.
  • Vegetable Tuna Noodle Casserole: Prepare as above and stir in 1 cup cooked vegetables with tuna.

8 boneless skinless chicken breast halves
seasoning salt, to taste
black pepper, to taste
6 tablespoons margarine
1 cup chopped celery
1 onion, chopped
1 small bell pepper, chopped
1 (4 ounce) jar chopped pimiento, drained
1 cup uncooked rice
1 (10 ounce) can cream of chicken soup, undiluted
1 (10 ounce) can cream of celery soup, undiluted
2 (8 ounce) cans milk
1 (8 ounce) can slices water chestnuts, drained
1 1/2 cups shredded cheddar cheese

Steps:

  • Place chicken breasts in large 11x14 , greased baking dish, and sprinkle with seasoned salt, and pepper.
  • Melt margarine in large skillet and saute celery, onion, and bell pepper.
  • Add pimentos, rice, soups, and milk, and water chestnuts, and mix well.
  • Pour mixture over chicken breasts.
  • Cook chicken covered at 325 degrees for 1 hour.
  • Uncover and cook another 10 minutes.
  • Remove from oven and sprinkle cheese over top of casserole, and bake for 5 minutes.
