Time 1h50m

Yield 2 dozen cookies

Number Of Ingredients 14

2 cups all-purpose flour (see Cook's Note)
2 teaspoons baking powder
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
2 sticks (1 cup) unsalted butter, at room temperature
1 cup packed light brown sugar
1 cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs plus 2 egg yolks
2 cups mixed red and green candy-coated chocolates, such as M and M's
2 cups rolled oats
2 cups roughly chopped pretzel rods
1 1/3 cups chopped peppermint puffs
1 1/3 cups white chocolate chips

Steps:

  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
  • Whisk together the flour, baking powder, baking soda and salt in a bowl until evenly combined. Combine the butter, brown sugar and granulated sugar in a large bowl and beat with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the vanilla, then add the eggs and yolks 1 at a time, beating well after each addition. Add the flour mixture and beat on low until the dough just comes together. Add the chocolate candies, oats, pretzels, peppermint puffs and white chocolate chips and stir with a large spoon until evenly mixed.
  • Scoop eight 1/3-cup portions of dough, roll into balls and divide between 2 baking sheets, spacing the cookies evenly apart. Press the dough balls into thick disks with the palm of your hand. Bake, rotating the baking sheets top to bottom and front to back halfway through, until the cookies are golden brown at the edges and barely brown in the very middle, 18 to 20 minutes. Cool the cookies on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining dough.

THE BEST MONSTER COOKIES

The Best Monster Cookies image

The Best Monster Cookies are loaded with peanut butter, oats, chocolate chips, and m&m's! They are thick, chewy, and a soft-baked cookie, with a surprise ingredient, that are crazy delicious.

Provided by Jessica

Categories     Dessert

Time 23m

Number Of Ingredients 13

1/2 cup butter (softened)
1 cup brown sugar
1/2 cup creamy peanut butter
1 large egg
2 teaspoons vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cornstarch
¼ teaspoon baking powder
¼ teaspoon salt
1½ cups quick oats
1 cup mini semi-sweet chocolate chips
1 cup mini M&M candies

Steps:

  • Preheat oven to 350°. Line cookie sheets with parchment paper, use a silpat liner, or spray with cooking spray.
  • In a large bowl (or bowl of a stand mixer) cream together the butter, brown sugar, and peanut butter until light and fluffy, about 1-2 minutes.
  • Mix in the egg and vanilla, scraping down the sides of the bowl as needed.
  • In a separate bowl, add the flour, baking soda, cornstarch, baking powder, and salt and whisk to combine.
  • With the mixer on low speed, slowly add the flour mixture to the wet ingredients and mix until just combined.
  • Add the oats, chocolate chips, and M&M candies. Mix on low speed just until dough is combined.
  • Use a medium cookie scoop, or about 2 tablespoons cookie dough, and place on the baking sheets. They should look like golf balls.
  • Bake the cookies for 7-9 minutes until the edges are just starting to brown and the top still looks slightly undercooked.
  • Remove from the oven and cool for 5 minutes on the baking sheet before moving them to a wire rack to cool completely.
  • ** These cookies don't spread much after baking. If you gently press additional m&m's onto the tops of each cookie that will help flatten the cookie to more of a "cookie shape". You can also tap the hot cookie sheet against the countertop or stove top to help the cookies to fall.

MONSTER COOKIES

I was surprised when I first saw this recipe as usually Monster Cookies are made with huge amounts of ingredients. This one does not have flour, and I was told by the friend to use Quick oats other wise the cookies come out very dry. I used the medium size scoop from Pampered Chef to make these cookies. Very good!

MONSTER COOKIES

Monster Cookies image

These are very crisp, crunchy cookies that are full of chocolatey goodness. A big hit in our house. For this recipe I recommend weighing your oats, I found that when using a measuring cup I get way too many oats as opposed to using the weight on the carton. I also used a medium cookie scoop to measure out the cookies (probably 1/8th of a cup). Since it makes 66 cookies I recommend making some dough balls and freezing them until firm, then putting them in a freezer bag to bake at a later time. Then you can just pull out what you need and bake them. Prep time is an estimate.

MIMI'S MONSTER COOKIES

Mimi's Monster Cookies image

These are huge cookies that the kids will love to get their little hands on. They are great to take to picnics or gatherings. I used to take them to Sunday School picnics when my grandkids were little. I even did a double batch for a treat at AWANA. Adults like them, too. They have delicious flavor. You may notice that there is no flour in the recipe--that is correct--there is no flour. The oats bind it together.

MONSTER COOKIE PROTEIN BALLS

Monster Cookie Protein Balls image

Clock in 9 grams of protein with this yummy snack idea - Monster Cookie Protein Balls! Made with all of your favorite monster cookie ingredients + protein powder.

Provided by Lee Funke

Categories     Snack

Time 15m

Number Of Ingredients 10

1 cup drippy all-natural peanut butter (we use Trader Joe's Brand or Good and Gather)
1/3 cup vanilla protein powder (we used Garden of Life)*
1/2 cup rolled oats
1 tablespoon chia seeds
2 tablespoons honey
1 teaspoon vanilla extract
¼ teaspoon salt
1/4 cup mini chocolate chips
¼ cup mini m&ms
Optional: 1-4 teaspoons water*

Steps:

  • Place peanut butter, protein powder, rolled oats, chia seeds, honey, vanilla extract, salt, mini chocolate chips and m&ms into a medium bowl.
  • Use a wooden spoon or your hands to mix the dough together. At this point, you'll begin to add water by the teaspoon.
  • Depending on how drippy your peanut butter is, you'll need to add more or less water. The water not only helps moisten things so your balls hold shape, but they actually help your balls become less chalky.
  • Use a 1 tablespoon cookie scoop to scoop dough into your palms. Roll into balls until all dough is gone. You should get somewhere between 14-16 balls.
  • Store in the refrigerator for up to a week or in the freezer for up to 3 months.
