Monster Cookie Bars with Peanut Butter and Oatmeal image

We have been making this monster cookie bar recipe for years since we got it from our friends. It is easy and fast, and is a hit in any event!

1 cup packed brown sugar
⅔ cup melted butter
¼ cup light corn syrup
¼ cup peanut butter
½ teaspoon vanilla extract
4 cups quick-cooking oats
1 cup semisweet chocolate chips
½ cup butterscotch chips
⅓ cup peanut butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking pan.
  • Combine brown sugar, butter, corn syrup, 1/4 cup peanut butter, and vanilla extract in a bowl. Add oats gradually. Press bar mixture into the prepared pan.
  • Bake in the preheated oven until golden brown, 12 to 14 minutes. Let cool for 4 minutes.
  • Melt chocolate chips, butterscotch chips, and 1/3 cup peanut butter in a microwave-safe bowl in 15-second intervals, stirring after each melting until blended, 1 to 3 minutes. Spread over warm bars. Let cool before cutting, 2 to 3 hours.

½ teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon sea salt
¼ cup creamy peanut butter
⅓ cup rolled oats
1 cup milk chocolate chips
½ cup candy-coated milk chocolate pieces (such as M&M's®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x8-inch baking pan.
  • Cream together butter and brown sugar. Mix in egg and vanilla.
  • In a separate bowl, whisk flour, baking powder, and sea salt together. Gradually incorporate dry ingredients into the butter/sugar mixture. Mix thoroughly.
  • Stir in creamy peanut butter, oats, chocolate chips, and candy-coated chocolates. Spread mixture evenly in prepared baking pan.
  • Bake until set, 25 to 27 minutes. Allow to fully cool before cutting into bars.

1/2 cup butter (1 stick)
1 cup light brown sugar
1 cup white sugar
3 large eggs
1 1/2 cups peanut butter
1 1/2 teaspoons corn syrup
1 1/2 teaspoons vanilla
1 cup all-purpose flour
2 teaspoons baking soda
3 1/2 cups old fashioned oats
1 cup M&Ms
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350°F. Line cookie sheets with silicone mats or parchment paper; set aside.
  • In a large mixing bowl, cream butter, brown sugar and white sugar with an electric mixer until light and fluffy.
  • Beat in peanut butter, corn syrup and vanilla, mixing well.
  • Add eggs one at a time, beating until incorporated.
  • Stir in flour, baking soda and oats. Fold in M&Ms and chocolate chips, just until combined.
  • If dough is too sticky to handle, refrigerate for at least 30 minutes. Drop 3 tablespoons of dough on prepared cookie sheet, spacing cookies at least 2 inches apart. Press a few extra M&Ms on the tops for more colorful appearance, if desired. Bake at 350°F for 6-9 minutes.
  • Shorter cook time (6 minutes) will result in softer, chewier cookies. Cookies will look slightly under-baked; allow to cool on cookie sheet for 5-10 minutes after removing from oven.
  • Use the longer bake time (9 minutes) if the dough has been chilled or if crisp cookies are preferred. Cool on cookie sheet for 2 minutes, then remove to wire rack to cool completely.

This is the bar form of one of my favorite cookies, the monster cookie! The monster cookie originated in Michigan and contains oats, peanut butter and candy-coated chocolates, and traditionally does not have flour. I love the chewy consistency and nutty flavor from the oats and peanut butter. It's kind of like a more indulgent granola bar!

3 1/2 cups quick-cooking oats
1/2 cup shredded sweetened coconut
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon kosher salt
3/4 cup unsweetened peanut butter
2/3 cup packed brown sugar
1/2 cup (1 stick) unsalted butter, melted but not hot
1/2 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
1 cup roasted peanuts
1 cup chocolate coated candies, plus more for topping

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9-inch square metal pan with parchment paper that comes up on two sides to give you little wings.
  • In a medium bowl, combine the oats, coconut, baking soda, cinnamon and salt. In a large bowl, whisk together the peanut butter, brown sugar, butter and granulated sugar until combined and creamy. Add the eggs one at a time, whisking well after each. Add the vanilla. Using a rubber spatula, fold in the oat mixture until combined, then fold in the peanuts and chocolate-coated candies. Press into the baking pan. Press a few additional chocolate-coated candies into the top.
  • Bake until browned around the edges; begin checking for doneness at 28 minutes. Let cool in the pan completely, then carefully lift out of the pan and use a sharp serrated knife to slice into bars. Store in an airtight container at room temperature for a few days.

Steps:

  • Combine the butter and sugars. Blend well. Blend in eggs and baking soda. Add peanut butter in mix and blend until smooth. Adding a cup at a time, start mixing in the oatmeal by hand. Slowly fold in the M&M's and chocolate chips Spread in a well greased 9x13-inch pan for 15 to 20 minutes at 350°F. Be careful to not overbake as these taste better just a little on the soft side. Store in an airtight container.
