MONGOLIAN LAMB

Mongolian Lamb image

Recipe video above. At "posher" establishments, Mongolian Lamb arrives at the table on a hot iron plate, sizzling and spitting for theatric effect. Sizzle aside, this homemade version is a near perfect replica. Even the velveted texture of the lamb! The sauce is sweet and savoury, with Chinese Five Spice and Hoisin the dominant flavours. It's completely addictive! Also excellent made with beef - see Note 1.

MOROCCAN LAMB WITH COUSCOUS

Moroccan Lamb With Couscous image

This is a really simple recipe to make it can be on the table in 30 Min's not including the marinating time. The marinade is easy to make and something you can do the night before or before work and it is ready to go when you walk through the door. I love couscous and I think it pairs very well with this dish. I use quick cooking couscous which comes in sachets of 100g each to serve 1-2 people depending on whether making as is or serving as an accompaniment like I did. The brand I buy only takes 2 Min's to cook and you place the sachet in boiling water, so when you get to the part where you add stock and hot mango chutney to the water, please note that this is just to flavour couscous and not to be mixed with it.

Time 35m

MOROCCAN LAMB CASSEROLE ( SLOW COOKER)

Moroccan Lamb Casserole ( Slow Cooker) image

Provided by Irena Macri

Categories     Main

Time 4h25m

Yield 4

Number Of Ingredients 20

1 tablespoon coconut oil or ghee
1 medium white onion, chopped
1/2 teaspoon salt
700 g /1.5 lb lamb steak, diced
1 large carrot, sliced thick
4 peels of lemon (not 4 lemons, but rather 4 small peeled ribbons of the rind)
1 teaspoon cinnamon powder
1 1/2 teaspoon cumin powder
1 1/2 teaspoon coriander seed powder
1/2 teaspoon allspice (optional, a few cloves can be used instead
1 teaspoon onion powder
2 tablespoons lemon juice
2 large cloves of garlic, sliced
6-7 dried apricots, sliced in thirds
1 tablespoon tomato paste
2 bay leaves
1 1/2 cups water
1 teaspoon salt
1/4 cup toasted almond slivers
Handful of chopped fresh parsley

Steps:

  • If your slow cooker vessel is heatproof, place it on the stove over medium-high heat. Alternatively, use a large frying pan or saucepan for this first step.
  • Add the onion, coconut oil and salt and sauté for 2 minutes. Follow with the lamb, carrots and lemon peel, and stir through for a minute. Now add the spices and stir through to release the aromas before adding the rest of the ingredients (except for almonds and parsley). Stir through and bring to a boil.
  • Place the vessel with the lamb stew back on the slow cooker base and set to HIGH for 4 hours, MEDIUM for 6 or LOW for 8 hours. If using a different saucepan, transfer the contents to the slow cooker vessel and set the timer as mentioned above.
  • After 4 or more hours, as per your heat setting, transfer the slow cooker vessel to the stove and set the heat to high. Again, if the vessel is not heatproof, transfer the casserole contents into a saucepan. Cook uncovered for 10 minutes, stirring regularly, allowing some of the liquid to evaporate. Add the almonds half way through and mix together (reserve a few almonds for garnish). Taste for salt and feel free to add some chilli, if you like.
  • Serve with cauliflower rice or couscous, regular rice or some greens.

CRISPY MONGOLIAN LAMB

Crispy Mongolian lamb image

Braise lamb breast with aromatics then grill until crisp and serve with noodles for a cheap but chic meal for two

Provided by Good Food team

Categories     Dinner, Main course

Time 4h

Number Of Ingredients 10

1 breast of lamb , about 750g
thumb-size piece ginger
2 garlic cloves , crushed
6 tbsp dark soy sauce
1 tbsp Chinese five-spice powder
150ml Shaohsing rice wine
2 tbsp soft light brown sugar
1 round lettuce , leaves separated
3 spring onions , cut into finger-length pieces then shredded
¼ cucumber , cut into matchsticks

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the lamb in a casserole dish with a lid. Add remaining ingredients plus enough water to just cover. Cook with the lid on for 3 hrs until the meat is tender and the bones pull out easily. Allow to cool still covered in the cooking liquid with the lid on. You can do this 1-2 days in advance and let the lamb cool completely in the fridge. This will make the next step easier.
  • When cold, lift the lamb out of the liquid and transfer to a baking tray. Skim fat from the sauce. Reserve half the sauce for the noodles (in 'Try' section, below) and bubble the rest, still in the pan, until thick and syrupy. Pour into a small serving bowl. Heat grill to medium and grill lamb until crisp and hot through, but not too dark.
  • Shred the lamb, discarding most of the fat and all the bones, but keep the nice, crisp skin. You can cut the skin off first and leave it in a hot oven while you shred the rest of the meat. To serve, take everything to the table and eat the lamb rolled up in the lettuce leaves with the cucumber, spring onions and sauce, plus the noodles on the side.

Provided by Good Food team

Categories     Dinner, Main course

175g dried chickpeas
2 tbsp olive oil
4 lamb shanks (medium)
2 medium onions , chopped
2 tsp finely chooped fresh root ginger
3 garlic cloves , finely chopped
2 fresh green chillies , seeded and finely chopped
2 tsp ground cumin
2 tsp ground coriander
1 tsp freshly ground black pepper
1 tsp paprika
2 large tomatoes , peeled, seeded and chopped
pinch of saffron strands
2cm/0.25in piece of cinnamon stick
450g carrots , cut into thick slices
140g ready-to-eat dried apricots
1 tsp clear honey

Steps:

  • Soak the chickpeas overnight. Drain, tip into a saucepan and cover generously with fresh cold water. Bring to the boil, simmer for 45 minutes and drain.

  • Preheat the oven to 160C/Gas 3/fan oven 140C. Mix together the ginger, garlic, chillies, cumin, coriander, pepper and paprika. Add half of this to the onions, tip in the tomatoes and cook for 2-3 minutes. Put in the lamb and chickpeas, cover generously with water (about 850ml/11⁄2 pints), bring to the boil and simmer for 5 minutes. Cover and cook in the oven for 11⁄2-2 hours until the chickpeas are really tender. (You can prepare up to this stage the day before. Cool, cover and refrigerate. Bring back to simmering point before starting step 4.)
  • Remove from the oven and stir in the remaining spice mixture, the saffron and cinnamon, carrots, apricots, honey and salt. Cover and return to the oven for 45 minutes-1 hour until the lamb is tender and the vegetables cooked. Scatter the almonds and coriander on top.

MONGOLIAN LAMB

Mongolian Lamb image

This is a basic Mongolian lamb recipe. Original recipe had cucumber slices as garnish also. Any nice cut of lamb works well, you may want to bi carb any tougher cuts to soften before marinating. For a beef version swap chicken stock for beef and i add black fungi, which seems to work well with steak. This recipe could be simplified by using a frozen Asian stir fry veg mix and jarred garlic and ginger, though the flavour will not be as good particularly the ginger. Please remember a recipe is just a guideline

  • Wash cut and cook the meat with some salt and spices for 30-40 minutes covered in a standard pot.
  • Cook the couscous as per pack instructions. Ideally is to steam it but for quickness I put the desired couscous in a bowl, mix it with some salt and pepper and pour boiling water over to cover it about two fingers above the level of the dry couscous. Cover with a plate and set aside for at least 20 minutes.
  • Add the chickpeas or the lentils to the meat along with the vegetables. Add some salt pepper and the spices. Cook for another 10 min and then add the tomato paste and the chopped tomatoes and cook for 20-30 minutes more. If you are using a pressure cooker to make this dish, put everything in at once (meat, lentils/chickpeas and veggies cover and cook for 30 minutes, depends really on the meat cut but lamb is tender so 30' should be suffice. If it is mutton or beef which can also be used, you can cook into two sessions, first cook meat alone and then the rest. I would not cook the veggies for longer than 30 min as they would just get murdered. ??? ***
