¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

3-4 lb 1 inch thick or less round steak
1 medium onion
2 celery stalk
1 14 ounce can crushed tomatoes
2 1/2 c beef stock
5 Tbsp flour, plus 1 cup to dredge meat in
3 Tbsp canola oil
salt and pepper to taste
1 green pepper (optional)

Steps:

  • 1. 8 am. dice up the onion and celery, place in crock pot. Pour in can of tomatoes, including juice.
  • 2. whisk together beef broth and 5 tbs of flour. add to mixture in crock pot. add salt and pepper to taste, stir.
  • 3. trim any fat off steak and cut into app 3 ounce serving size pieces. salt and pepper, then dredge in flour and flash brown steaks in canola oil. They do not have to be cooked all the way done, we are just browning the outsides!
  • 4. add steak to crock pot, sinking the meat below the surface of the sauce. Put lid on pot, set to low and cook until 5 pm or so!! enjoy!

Mom's Swiss Steak is the perfect family dinner! With tender braised beef in a hearty pepper, onion, mushroom and tomato sauce.

2 1/2 to 3 pounds chuck steak, 1 inch thick
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper
14.5 ounces petite diced tomatoes (1 can)
1 large onion, cut into strips
3 medium green and red bell peppers, cut into strips
8 ounces mushrooms, cleaned and sliced thin
3 garlic cloves, minced
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt and pepper
3 tablespoons Worcestershire Sauce (Lea & Perrins Original for gluten-free)
Optional: 1 tablespoon cornstarch and 2 tablespoons water to thicken sauce if desired

Steps:

  • Preheat oven to 350 degrees and place the rack in the middle position of the oven.
  • Cut the beef into serving-sized pieces. If some pieces are thicker than others, pound them with a meat tenderizer so they all are 1 inch thick.
  • Season both sides of the meat with garlic powder, onion powder, salt and pepper, and place in a 9x13 baking dish.
  • Add the tomatoes, onion, bell pepper, mushrooms, garlic, 1 teaspoon salt and pepper, 2 teaspoons onion powder and garlic powder, and three tablespoons Worcestershire sauce to a large mixing bowl. Fold it all together and pour over the steak in the 9x13 baking dish.
  • Cover the dish and cook on 350 degrees for 1½ - 2½ hours covered. (The total cook time depends on the thickness of your meat and the cut of meat you use. It could require more time in the oven if it's not as tender as desired.)
  • When the meat is tender, remove from the oven and allow to sit for 5 -10 minutes uncovered.
  • If you'd prefer a thicker sauce, pour the liquid from the pan into a sauce pan over medium high heat. In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoon water. Bring the sauce to a boil and stir in the cornstarch slurry for 1-3 minutes until it's thickened.

Mom's Swiss Steak is comfort food at it's very BEST! Sliced round steak with a flavorful onion gravy, and baked until tender. Economical and delicious!

2 pounds round steak
1 teaspoon Salt and Pepper
1/2 cup Vegetable oil ((approx. 1/2 cup) Enough to fully cover bottom of large skillet)
1 large large brown onion (, cut into thin round slices)
1/2 cup Flour ((enough to dredge meat in - approx. 4 heaping Tablespoons))
4 cups water
3 Tablespoons flour

Steps:

  • Preheat oven to 350 degrees.
  • Cut round steak into serving pieces (approx 10- remember each piece will become slightly "larger" after being flattened out by pounding). One at a time, lay each piece of meat between plastic wrap. Pound with flat side of meat mallet until flattened and thinned down and tenderized. Repeat process for each piece of meat. Salt and Pepper each piece of meat, then dredge/fully cover each piece (all sides) in flour (put flour on a dinner plate to do this).
  • Heat oil on medium high heat. Once hot, brown meat (turning once) until browned on both sides. (You may need to cook the meat in batches, depending on quantity and size of skillet). When done, reserve 1/4 cup of the oil and drippings in skillet ; discard the rest of oil.
  • Place browned meat pieces in a single layer in casserole dish. Top each piece of meat with a slice of onion. Add another layer of meat, then onion, until all pieces are in dish.
  • Make a really thin gravy by adding 4 cups water to 1/4 cup of oil/pan drippings remaining in skillet. Mix 1 cup water with 3 HEAPING Tablespoons flour. Mix well, then add to skillet and whisk to combine. Season this thin gravy to taste with additional salt and pepper. Bring "gravy" to a boil. It will slightly thicken. Remove "gravy" from heat, and carefully pour it over meat.
  • Cover dish with lid or tightly cover with aluminum foil. Bake at 350 degrees for 1 1/2 hours.
  • Remove from oven when done. Serve meat, topped with onions and gravy... and enjoy!

2 (10 3/4 ounce) cans cream of mushroom soup
1 cup water

Steps:

  • Mix flour and pepper.
  • Dredge the steaks in the flour.
  • Fry in a nonstick pan using no oil or butter.
  • Lightly brown both sides.
  • Mix soup and water together.
  • Pour in a large medium depth casserole pan.
  • Add steaks in the pan (don't stack them).
  • Bake at 375°F in oven for 45 minutes. Flip once or twice.
  • Enjoy.

2 lbs. round steak (cut into 1-2 inch pieces)
2 Tbsp vegetable oil or coconut oil
1/3 cup beef broth (can use water instead if you prefer)
29 oz diced tomatoes (2 (14.5 oz) cans)
1/2 cup green pepper (chopped)
1 onion (cut into rings)
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • Mix together flour, 1/2 tsp salt and 1/2 tsp black pepper in a plastic bag
  • Add in steak and mix until meat is covered in flour.
  • Heat oil in a heavy pan.
  • Add the meat and onions and cook until the meat is browned on both sides and the onions are softened.
  • Add in water, cover and let simmer for about 1 hour or until beef is fork tender.
  • Add more water if needed. Check ocassionally to make sure the water hasn't evaporated.
  • Mix together diced tomatotes, green pepper, onion powder, salt and pepper.
  • Pour over beef and stir to combine
  • Simmer for 30 minutes or until thickened.

2 lbs beef chuck steaks, 1-inch thick, trimmed
1 medium onion, sliced
1 bell pepper, sliced
1 (10 ounce) can cream of mushroom soup
1 (14 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
8 small new potatoes, unpeeled and quartered
1 (9 ounce) package green beans, frozen, fresh

Steps:

  • Heat oven to 425. Line 9 x 13 baking pan with heavy-duty aluminum foil, leaving 1 1/2 inch overhang all around.
  • Cut steaks into equal portions and place in prepared pan. Top with sliced onions and bell peppers. (I always use more onion and bell peppers, personal preference).
  • Whisk together soup, tomatoes with juice, Worcestershire sauce, thyme, salt, garlic powder, and pepper in a bowl until well blended. Pour over steaks, onions and bell peppers.
  • Cover pan with large sheet of heavy duty foil; roll edges tightly with overhang to seal.
  • Bake at 425 for 45 minutes.
  • Add potatoes; reseal with foil. Bake additional 45 minutes.
  • Uncover pan; add green beans. Reseal.
  • Bake an additional 15 minutes or until beans are tender and steak is cooked through.
  • Stir well before serving.

This is an old recipe from my mom. She called it stroganoff. It's a pretty healthy recipe considering it uses tomato juice and doesn't use sour cream (instead, it uses evaporated milk and lemon juice). Round steak is relatively low in fat also (compared to some cuts).

1 lb beef round steak, 1/2 inch thick
2 tablespoons oil
1/4 cup onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
1 1/2 cups tomato juice
4 ounces canned mushroom pieces, drained
1/2 cup evaporated milk
1 tablespoon lemon juice
cooked noodles

Steps:

  • Cut round steak into 3 x 1 inch strips.
  • Heat oil. Brown strips in it. Add onion, salt and pepper. (Note you can probably omit the salt if your tomato juice has salt in it.) Cook long enough to soften onion.
  • Blend in flour, then tomato juice and mushrooms.
  • Cover and cook over low heat one hour or until meat is tender.
  • Mix together evaporated milk and lemon juice and then stir it into the meat. Warm, but do not boil.
  • Serve over cooked noodles.
  • Do not freeze leftovers.

1 lb beef round steak
6 slice bacon
1 small onion
1 1/2 c flour
1 can(s) tomatoes, canned whole/cut
2 can(s) mushrooms, canned
1 Tbsp garlic salt
1/2 tsp black pepper

Steps:

  • 1. fry bacon and onion together in electric skillet. Cook until onion is done. Remove bacon and onion and set aside.
  • 2. Cut round steak into 4 sections. Set aside
  • 3. Put flour and garlic salt, pepper into bag and shake until well blended.
  • 4. Add steak sections to flour mixture. Shake until well coated. Place into the bacon dripping and lightly brown. Remove from skillet.
  • 5. Add the bacon and onions back to skillet and turn to simmer. Add the meat. Pour can of whole tomatoes over the meat. Simmer for about 1 1/2 hour.

1 ½ teaspoons dried oregano
1 bay leaf

Steps:

  • Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
  • Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender. If you wish to thicken the gravy, remove the meat to a plate. Stir together the cornstarch and water; stir into the pan juices. Let simmer for about 2 minutes to thicken. Return the beef to the pot.

Steps:

  • Combine flour, salt and pepper in a flat bowl. Cut steak into serving size pieces, removing any excess fat. Coat the steak with the flour mixture.
  • Heat oil in frying pan and add steak to brown both sides. Remove any remaining oil. Cover steak in frying pan with both cans of soup and water. Bring to boil, reduce heat and simmer for 2 to 3 hours. Remove meat from sauce.
  • In a small bowl, combine cornstarch and enough water to make a watery paste. Bring liquid in frying pan to a boil and slowly stir in the cornstarch and water mixture to make a gravy. Salt and pepper to taste.
