EASY SPINACH QUICHE
You're going to love this cheesy Spinach Quiche! The ultra creamy filling is perfectly complemented by the flaky crust. This quiche recipe is great for breakfast, brunch, lunch, dinner or anything in between. Easy and delicious!

- Place a baking sheet in the oven and preheat the oven to 350 degrees F.
- If using a frozen pie crust, thaw, and keep in the fridge until needed.
- Put the thawed spinach in a colander and squeeze and drain as much water as possible. Make sure it is very well drained. Set aside.
- Slice the mushrooms and sauté over medium high heat in a medium skillet with 1 to 2 teaspoons extra virgin olive oil. Season with salt and pepper. Sauté, stirring frequently, for about 5 to 6 minutes.
- Cook bacon and chop into small pieces. Place on paper towels to absorb any excess grease. Try baking bacon or making air fryer bacon.
- Remove the pie crust from the refrigerator. If using a frozen pie crust, place the pie tin in a larger pie dish.
- In a medium-sized bowl, whisk together the eggs, evaporated milk, ricotta cheese, flour, garlic powder, onion powder, salt, and pepper together until smooth. Stir in the spinach, cheddar cheese, and mushrooms until combined.
- Pour the mixture into the prepared pie crust. Arrange the crumbled bacon on top. (The bacon can also be mixed in with the filling if you prefer.)
- Carefully place the quiche on the heated baking sheet and bake for 50 to 60 minutes, or until the middle is just set and is no longer jiggly. Let cool for 15 minutes before cutting into pieces and serving.

SPINACH QUICHE
Steps:
- Preheat the oven to 375° with a baking sheet on the center rack. Fit the pie crust into a 9-inch pie plate (about 1-inch deep). Fold the edges of the crust under and crimp as desired. Chill in the refrigerator while preparing the filling.
- Melt the butter over medium heat in a medium skillet. Add the onion and bell pepper. Cook, stirring now and then, until softened, about 10 minutes. Add the garlic and cook, stirring often, until fragrant, about 2 minute. Remove from heat.
- Whisk together the eggs, half-and-half, sour cream, salt, pepper, and nutmeg in a large bowl. Stir in the spinach, cheddar cheese, parmesan cheese, and bell pepper mixture. Pour into the prepared crust.
- Place the quiche on the preheated baking sheet and bake until it has puffed in the center, is just set and the crust is golden, 40 to 50 minutes. Transfer the quiche to a wire rack to cool. Serve warm or room temperature.

- Preheat oven to 350 degrees.
- Cook spinach and onion together in skillet until onion is soft and spinach is completely thawed, cool slightly.
- Cut cream cheese into small cubes and place in the bottom of pie crust. Top with spinach and onion mixture.
- In a mixing bowl beat eggs. Add shredded cheese, milk, salt, black pepper and cayenne pepper.
- Pour egg mixture into crust.
- Bake at 350 degrees for 45-55 minutes or until center is set. You may have to cover it with foil for the last 10-15 minutes so the crust doesn't get too dark.
- Take out of the oven and let cool for 5-10 minutes. Serve warm.
FOUR CHEESE SPINACH QUICHE
A woman in my mother's group (MOPS) brings this to our morning breakfasts. It is always eagerly received. She got it out of a Southern Living Holiday Cookbook. Good find! She uses a 12-inch tart pan when she brings it to us.

Steps:
- Roll both pie crusts together to fit 11 inch tart pan or quiche pan. Top with parchment paper and add pie weights.
- Bake at 400 for 12 min or until lightly browned.
- Quickly remove weights and parchment paper, sprinkle with Parmesan cheese and let cool.
- Drain chopped spinach well by pressing between paper towels.
- Stir together spinach, eggs, cream, salt and pepper.
- Sprinkle Mozzarella, cheddar cheese, and onion into prepared crust.
- Add spinach mixture.
- Top with red bell pepper and sprinkle with feta cheese.
- Bake at 350 for about 40 minutes, until set. Cover loosely with aluminum foil, and let stand 30 minute.
