MOM'S SIMPLE SALAD
This is a very simple green salad my mom used to put on the table every night. She was able to get kids who never ate their vegetables to love this salad. I think the secret is in the vinaigrette: it's got the perfect level of acidity to balance out all the greens.

- For the salad: In a large bowl, add the lettuce, celery, and tomato. Thinly slice the cabbage. Cut the carrots in half lengthwise, then slice. Shave the radishes on a mandoline. Thinly slice the green tops of the onions. Add everything to the bowl and refrigerate while making the vinaigrette.
- For the vinaigrette: In a jar with a tight-fitting lid, add olive oil, vinegar, ½ teaspoon salt, pepper, and lemon juice. Cover and shake. Spoon vinaigrette from the bottom of the jar onto a piece of lettuce and taste.
- Assemble the salad: Season the chilled greens with ¼ teaspoon salt and a few grinds of pepper. Give the dressing a stir and then drizzle around the outer edge of the bowl. Gently toss with your hands to combine. Taste one more time, adjust seasoning, and serve.

MOM'S ELEGANT SALAD
This salad is served at every family function from B-days to Thanksgiving! I don't know the origin of it, my mom started making it from when we were all very little. It's a MUST HAVE at my house! Don't substitute the ingredients, though, it won't turn out. Been there, tried it, failed, lol. It's awesome just as is!!!!

- Note: The bottle says equivilant to 1 1/2 lbs bacon and do NOT sub immitation; You can also use the new kind that comes in a sealed pouch, use 3/4 to 1 cup, depending on how much bacon flavor you like.
- In large bowl, toss all ingredients.
- Add enough Miracle Whip to lightly coat all.
- Stir all well, chill at least one hour or overnight.
- Best overnight, though.

- Combine the romaine, tomatoes, cucumber and onions in a large bowl.
- Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
- Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.
MOM'S BEST POTATO SALAD
This recipe was shared with me by my mom. This is THE BEST potato salad I have ever had! Whenever we have family get-togethers, I always ask my mom to bring this salad! The vegetables add such a nice refreshing crunch. My mom also likes to add 1/4 cup diced green pepper and 1/4 cup diced cucumber, but I prefer it without.

- Boil potatoes, with skins on, until tender.
- Drain and allow potatoes to cool.
- Once cool enough to handle, remove skins and cut into bite-size cubes.
- Meanwhile, dice onion, carrot, radish, and celery.
- Mix ingredients for dressing and refrigerate until needed.
- Combine potatoes, vegetables, and 2 sliced hard boiled eggs.
- Pour dressing over and mix well to combine.
- Top with remaining sliced egg and sprinkle with paprika if desired.

A great salad that uses uncooked vegetables. It is crisp and tasty. The green olives and bacon give it a great taste.

Steps:
- In a 2" sauce pan fill with 4-6 peeled chopped potato's (about 1/2" squares).
- pour in larger pan and pour water about 1/2" below top of potato's.
- salt and pepper.
- Bring to boil and simmer for 5-10 min, or until potato is "fork tender".
- chop/dice dill pickle.
- dice medium onion.
- fine dice celery.
- mix 1 cup mayo and 2-3 tablespoons of regular mustard.
- drain potatoes in collander (don't rinse).
- pour hot water from eggs and let sit in cold water.
- peel when cooler and chop.
- salt and pepper dill, onion, and celery in serving bowl, mix, then GENTLY fold in potato (while hot).
- GENTLY mix in mayo/mustard and 4 chopped hard boiled eggs.
- slice 2-4 eggs to put on top of salad, salt pepper and sprinkle light with cayenne.
- Cover with saran wrap and let sit over night for best flavor or serve immediately.
- tastes great hot too.

MOM'S SALAD DRESSING
WARNING: This salad dressing might not fit your tastes. Proceed with caution! :) My brother and I had one choice of dressing for our salads growing up...Mom's. I've tried for years to get her to give up the recipe but all she would say is "Sissy, I don't measure. You have to make this one from your memories." This is my attempt to create the dressing I grew up with and loved! It's not for everyone but it sure is a hit in our family. (My brother pretty much refuses to eat any salad without it.) Thanks Mom!

MOM'S MACARONI SALAD
My mom's macaroni salad recipe. I leave out the bell peppers because Hubby doesn't care for them, and I chop the onions very fine because I don't like biting into big pieces. I also recommend making extra dressing to add later. The macaroni will absorb the moisture as it sets, which could make the salad seem too dry.

- Boil macaroni according to package directions, being sure not to overcook.
- Drain macaroni in a colander, then run under cold water or return to the pot and fill with cold water to chill.
- Combine the dressing ingredients in a large bowl and mix well.
- Combine macaroni, dressing and your choice of add-ins in a large bowl (preferably one with a lid for storage) and mix thoroughly.
- Chill for at least 2-3 hours so flavors can blend.
- Add extra dressing if needed.
