MOM'S RAISIN PUDDING CAKE
This cake is one we have every Christmas . I like to make it for breakfast too. Very moist- great with a cup of coffee or tea.

- 1. Take out 1/4 cup cake flour mix. Set aside.Combine remaining cake mix, pudding , eggs, sour cream and oil in a large mixer bowl. Blend well, then beat at medium speed for 2 minutes. Stir together the raisins and reserved cake flour and add this mixture to the batter.Stir well. Pour into a greased and floured 10 inch bundt pan or a 9x13 inch baking pan. Bake at 350^ for 1 hour. Check after 30 minutes and turn bundt cake. If using 9x13-inch pad it should be done after 35 minutes. Cool 15 minutes. If using bundt pan remove from pan; finish cooling on rack and glaze. --- Glaze: Blend ingredients and spread over cake.
RAISIN PUDDING
This old-fashioned dessert tastes like the comforting long-cooked pudding Grandma used to make, but it really is quick and easy to prepare. The flavor is wonderful. - In a saucepan, combine pudding mix, milk and water; cook over medium heat until thickened. Remove from the heat; stir in the raisins and vanilla. Cool for 15 minutes; stir in yogurt. Spoon into individual desserts dishes. Chill for 2-3 hours. If desired, garnish with whipped topping and sprinkle with nutmeg.

MOM'S RAISIN BREAD PUDDING
The recipe was a favorite of my mom's. Although mom is gone, her recipe lives on and is now made by my daughter and granddaughters. We all love it. You can pour lemon sauce or homemade whipped cream over the top and it's twice as good.

- 1. In a 1/2 quart casserole beat milk, eggs, sugar, vanilla and salt with a wire whisk or fork until blended.
- 2. Stir in bread cubes.
- 3. Set casserole in an 8"x8" baking pan; place pan on oven rack.
- 4. Pour hot water into pan to come halfway up side of casserole.
- 5. Bake at 325 for 1 1/4 hours or until knife inserted in center comes out clean.
- 6. Serve pudding warm with lemon sauce or homemade whipped cream.
- 7. Can be covered, refrigerated and served cold.
MUM'S HALF HOUR PUDDING

- 1. CAKE: Mix dry ingredients and raisins in a bowl. Put this mix into a greased pudding baking dish. (small round casserole dish).
- 2. SAUCE: Pour 1 1/3 cups boiling water into a heat-safe bowl, add 1 cup brown sugar and 1 tsp vanilla. Mix this together and pour over batter.
- 3. Bake in moderate oven for 30 minutes or so. (Mum says moderate oven is about 350F)

This really good and easy cake recipe from Favorite Hometown Recipes from Temple Beth El Sisterhood, Bradford, PA 1983, I will post it as written by Betty Schecter, but I use vanilla pudding mix, not lemon.

- Preheat oven to 350 degrees.
- Grease and flour either a 10 inch tube pan or bundt pan.
- I use Bakers Joy spray,.
- In a large bowl combine cake mix, pudding mix, eggs, sour cream and vegetable oil.
- Blend well, then mix for 3 minutes at medium speed.
- Stir in raisins and walnuts.
- Pour into prepared pan.
- Bake for 1 hour.
- Cool in pan for 15 minutes.

BAKED RAISIN PUDDING
This is an old-fashioned raisin pudding, with brown sugar and butter, baked in a casserole dish.

- Gather the ingredients.
- Combine the brown sugar, water, and butter in a saucepan. Boil for 5 minutes.
- Pour the sugar and butter syrup into a buttered 2-quart casserole dish.
- In a separate bowl, combine the flour, sugar, salt, baking powder, raisins, milk, and vanilla; blend thoroughly and gently until there are no lumps. But don't overmix.
- Pour the batter over the hot mixture in the casserole dish.

LEMON PUDDING CAKE WITH FRESH MIXED BERRIES
Steps:
- Preheat oven to 325 degrees F. Butter and lightly sugar 4 ramekins (about 1-cup size).
- In a mixer, add egg yolks, buttermilk, lemon juice and lemon zest and beat until well combined. Reduce the speed to low and sift in flour, sugar and salt. Continue to mix until combined. Beat egg whites until you get stiff peaks then combine the 2 mixtures by gently folding them together, a little at a time. Divide evenly amongst ramekins then bake in a water bath - set ramekins in a roasting tray and fill with water halfway up the sides of the ramekins.
- Bake for 45 minutes until the top springs back when gently pressed and the cakes have a nice golden brown color. Allow to cool slightly, then carefully invert onto a plate. Serve with fresh berries and dust with powdered sugar.

- Heat oven to 180C/160C fan/gas 4. Mix the dates with the hot milk and set aside for 20 mins. Mix the raisins with the rum and do the same. Grease 9 dariole or small pudding moulds and sit them in a deep roasting tin or baking dish. Put the kettle on.
- Whizz the dates and milk together in a food processor until you have a smooth purée, then scrape into a large bowl and mix with the oil and eggs, before stirring in the bicarbonate of soda, flour and sugar. Finally fold in the rum-soaked raisins and any rum left in the bowl. Divide between the darioles, then carefully pour boiling water into the tin or dish so it comes two-thirds to halfway up the sides of the darioles. Bake for 20-25 mins on a low shelf in the oven.
- Check the puds are done with a skewer, then lift out and cool a little. For the sauce melt the butter, sugar and cream together, then turn up the heat until it bubbles and comes together into a smooth, shiny sauce. Stir in the rum and raisins and cool. Turn out the puddings from the moulds, scraping around the sides of each with a blunt cutlery knife first. Line up in a shallow baking dish and cover with cling film. Keep the puds and sauce somewhere cool for up to 24 hrs.
- To serve spoon a little sauce and raisins over each pud, then pour the rest around (if the sauce has separated a little just gently reheat and stir back together). Cover the whole dish with a tent of foil. When the Christmas dinner is ready turn the oven down to 120C/100C fan/gas ¼ and reheat puddings for about 30-40 mins until hot. Serve with crème fraîche.

- Add hot milk gradually, stirring constantly.

RAISIN CAKE
My mom always made this cake at Christmas time. She would cut it in bar size pieces and put it with the Christmas cookies. It was always one of my favorites, and my dad's as well. Don't over bake and make sure you keep it in a air tight container until you are ready to eat. Measurements for the frosting are approximates. Only add enough water to make the glaze easily spreadable. These can be frozen for a couple weeks.

- Cook 1 pound raisins and 1 cup water over medium high heat for 15 minutes.
- Add 1 cup cold water.
- In large mixing bowl cream ½ cup shortening and 2 cups sugar.
