CRISP-TENDER ROAST DUCK WITH CHERRY-ROSEMARY SAUCE



Crisp-Tender Roast Duck with Cherry-Rosemary Sauce image

One 5-pound Pekin (aka Long Island) duck
Kosher salt and freshly ground pepper
1 shallot, peeled and chopped
3 cloves garlic, chopped
1 cup cherries fresh or frozen, halved and pitted
1/2 cup chicken stock, preferably homemade, or low-sodium store bought
2 tablespoons cherry or berry whole-fruit preserves
2 teaspoons honey
1 teaspoon fresh rosemary leaves, chopped
2 tablespoons fresh lemon juice
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 300 degrees F.
  • Rinse the duck inside and out and pat dry. Trim any excess fat from the neck and cavity, snip off wingtips and discard. Mix 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl, and sprinkle the bird inside and out. Using a paring knife, make dozens of slits through the skin and fat (taking care not to pierce the meat) all over both sides and all parts of the bird.
  • Put the duck breast-side up on a rack in a roasting pan and roast for 1 hour. Take the bird out of the oven, transfer to a platter and carefully drain the fat from the pan into a measuring cup (you'll end up getting 2 to 3 cups). Return the duck to the pan, prick with the knife again, turn it breast-side down and roast another hour. Repeat each hour, roasting the duck for a total of 4 1/2 hours.
  • While the duck cooks, make the sauce: In a small saucepan, heat 1 tablespoon duck fat over medium heat and cook the shallots until soft, about 4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the cherries, stock, preserves, honey and rosemary, and simmer until slightly thickened, about 10 minutes. Remove from the heat, add the lemon juice, swirl in the butter and taste for salt and pepper. Set aside until the duck is finished.
  • After 4 1/2 hours of roasting, turn the oven temperature up to 350 degrees F, prick the duck skin one last time, salt the skin again and return bird to the oven, breast-side up. Roast for 30 minutes until the skin is nicely browned.
  • Remove from the oven, tent with foil and let rest for 20 minutes. Gently reheat the sauce over low heat. Carve the duck, put the pieces on a serving platter and serve with sauce.

For the Duck:
1 Duck (5-6 lbs)
Coarse salt
Freshly ground pepper
2 lbs rutabaga, peeled and cut into 1/2 inch pieces
1/4 C white wine vinegar
4 tbsp honey
2 sprigs mint, leaves julienned
For the glaze
1 C dried sour cherries
1 C red-wine vinegar
1 C sugar
2 750 ml bottles of zinfandel or other dry red wine
3 tbsp hot mustard
Salt

Steps:

  • Roast duck: 1. Preheat oven to 225F, with racks in upper and lower thirds. Bring a large pot of water to a boil. 2. Score the fat on the breast of the duck, making crosswise slashes, being careful not to cut the meat. Using kitchen twine, truss the duck, leaving enough twine to form a handle. 3. Holding twine handle, lower duck into the boiling water for 10 seconds. Remove; drain. Place breast side up on a wire rack in a roasting pan. Add 1 inch of water to pan to prevent the fat from smoking. Season with salt and pepper. 4. Season rutabagas with salt and pepper and put in an ovenproof saucepan. Drizzle with vinegar and stir. Cover saucepan and place on upper rack of oven with the duck on the lower rack. Roast until duck is golden brown and most of the fat has rendered. 2 1/2 to 3 hours. 5. Remove rutabagas; set aside. Raise oven temperature to 500F. Transfer duck to upper rack continue roasting until the skin is well browned and crisp, ~10 minutes. 6. Meanwhile, pass rutabaga through a food mill fitted with a large disk into a medium saucepan. Add butter and honey; season with salt and pepper, stirring to combine. Stir in mint. Transfer to a serving dish; keep warm. 7. Remove duck from oven, and immediately brush with the sour cherry glaze. Transfer to a serving platter. Serve duck with rutabagas and remaining glaze. Make glaze: 1. In a small saucepan combine cherries and vinegar over medium heat just until steam rises from pan. Remove from heat and let cherries rehydrate (~20 minutes). Drain, reserving liquid, and chop. 2. Put sugar in a large skillet over medium heat; cook, stirring, until sugar dissolves and turns a light caramel color, ~10 minutes. 3. Remove caramel from heat. Add reserved vinegar carefully as it may spatter. Stir until caramel melts. Add wine; simmer over medium low heat until mixture has reduced by about two thirds to the consistency of a thin syrup. Stir in cherries. Whisk in mustard and season with salt.

Six 1 by 3-inch strips orange zest
1 small onion, halved
Kosher salt and freshly ground black pepper
1 1/2 tablespoons unsulfured molasses
1 1/2 tablespoons honey
1/4 teaspoon coriander seeds, lightly crushed
8 whole black peppercorns, lightly crushed
2 tablespoons fresh orange juice
2 tablespoons balsamic vinegar
2 large garlic cloves, crushed and peeled

Steps:

  • A day before roasting, remove the giblets and neck from the cavity of the bird and discard. If necessary pluck any stray pinfeathers off the duck with tweezers. Trim the neck flap and excess fat from around the cavity. Rinse and dry the bird well. Set the duck on a rack on a baking sheet, and refrigerate, uncovered, for 24 hours.
  • Heat the oven to 300 degrees F. Pierce the duck's skin all over (including the back), every 1/2-inch, with a skewer or small knife. Season the cavity with salt and pepper and stuff with 3 strips of the orange zest and the onion. Set the duck on a rack in a roasting pan, and pour a cup of water in the pan. Roast the bird for 3 hours, removing the duck from the oven every hour to prick the skin again.
  • Meanwhile, make the glaze: Combine the remaining orange zest, molasses, honey, coriander, pepper, orange juice, vinegar, and garlic in a small saucepan. Heat, stirring, over medium-high heat until warm. Remove glaze from the heat and set it aside at room temperature while the duck cooks.
  • Remove the duck from the oven and carefully, pour off the excess fat from the pan. (If desired reserve this fat for frying potatoes or wilting greens.) Raise the oven temperature to 450 degree F. Return the duck to the oven and roast until crisp and brown, about 30 minutes more.
  • Let the duck rest at room temperature for 10 minutes before carving. Brush the duck's skin with glaze 4 to 5 five times during the resting period. Carve the duck and transfer pieces to warm serving platter. Serve the remaining glaze at the table to drizzle over the duck, if desired.

1 (6 lb) duck (approx)
salt
garlic pepper seasoning
4 1/2 cups cooked brown rice
1 cup chopped onion
7 -8 sprigs fresh sage, chopped
6 tablespoons sweet butter (also called unsalted)
3/4 cup chopped pecans
1 teaspoon salt
1 (15 ounce) can pitted cherries, drained
2 cups red wine
1/4 cup honey
1/2 cup balsamic vinegar

Steps:

  • Preheat oven to 375ºF.
  • To prepare the stuffing: Sauté onion in butter until onion is transparent.
  • Remove from heat.
  • In a large bowl Add salt, and combine with rice, chopped sage and pecans.
  • Taste and adjust seasoning to your taste.
  • You may wish to add more salt and if you like you can add a bit of garlic pepper, but that is optional.
  • Remove the bag from the duck cavity that contains the giblets and neck bone and set aside in refrigerator, you won't need it for this recipe.
  • Rinse and dry the duck.
  • Stuff the duck with the prepared brown rice stuffing and sew the stuffed cavity closed or secure with round tooth picks.
  • Place the stuffed duck on a rack in a roasting pan breast side up and sprinkle all over top and bottom with salt and garlic pepper.
  • Ducks contain lots of natural fat so require no basting.
  • Roast at 375ºF for about 22 minutes a pound.
  • A 6 pound duck should be done in about 2 1/4 hours.
  • When duck is done let it set for about 20 minutes to let the juices settle before carving.
  • While the duck is resting prepare the cherry sauce: In a medium size saucepan, combine the 15 ounce can of cherries, honey, wine, and Balsamic vinegar.
  • Heat over medium flame until the mixture is reduced by half.
  • Transfer to a serving touraine with a ladle.
  • Place the touraine on table beside the carved Duck and let guests spoon as much sauce as they like on their portion of duck.

Pinch of ground cloves
6 star anise, ground, plus 2 whole
1 teaspoon ground cinnamon
2 large Yukon gold potatoes, peeled and cut into large pieces
2 carrots, peeled and sliced into 1/2-inch rounds
1 large onion, quartered
1 large turnip, peeled and quartered
1 large sweet potato, peeled and cut into large pieces
Coarse salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil
1 (4-to-5-pound) whole Muscovy duck
Duck neck and organs (not the liver), optional
6 sprigs thyme
2 bay leaves
3 sticks cinnamon
3 cups Bing cherries, stemmed and pitted, or 2 1/2 cups dried sour cherries
3 cups red wine
1/4 cup sugar
2 heads garlic, separated into cloves

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, stir together cloves, ground star anise, and ground cinnamon. Place potatoes, carrots, onion, turnip, and sweet potato in a roasting pan large enough to hold the duck; sprinkle half the spice mixture over the pan and season with salt and pepper. Drizzle with 3 tablespoons olive oil and mix to coat.
  • Rinse duck in cold water and pat dry. Rub duck all over with remaining spice mixture and 3 tablespoons olive oil; season generously, inside and out, with salt and pepper. Place duck, breast side up, on top of vegetables in roasting pan. Add neck and organs, along with thyme, bay leaves, and 2 cinnamon sticks. Cover pan tightly with parchment paper-lined aluminum foil; transfer to oven and cook for 2 hours.
  • Meanwhile, in a saucepan, combine cherries, red wine, sugar, remaining cinnamon stick, and whole star anise. Place over low heat and cook until cherries are soft and wine has reduced to a syrupy consistency, about 30 minutes. Reserve about 3 tablespoons of syrup for glazing the duck. Transfer remaining syrup to a small serving bowl; set aside and keep warm.
  • Carefully uncover duck and baste with pan juices. Add garlic cloves to pan and re-cover with parchment paper-lined foil. Return duck to oven and continue cooking until meat starts pulling away from the bone, about 2 hours more.
  • Uncover duck and brush with reserved cherry-wine syrup. Return to oven and roast until skin is crispy and dark, rich brown in color, about 15 minutes.
  • Carefully transfer duck to a large serving platter. Let stand, uncovered, while preparing the vegetables. Transfer vegetables to a large bowl. Remove meat from the neck and add to vegetables, discarding bones. Thinly slice remaining organs and add to the vegetables; mash vegetables and meat together and season with salt and pepper.
  • Transfer vegetable mixture to a serving bowl and serve immediately along with duck and cherry-wine syrup.

Drain fat from pan as it accumulates. Cover loosely with foil if duck browns too quickly. Duck is so difficult to roast badly that all experienced cooks seem to claim their procedure is the best. Having tried many methods, I can say that the results are all about the same. So I chose the one presented here, which is the easiest way to guarantee a succulent but beautifully browned bird.

1 4- to 5-pound duck
Freshly ground black pepper
1/4 cup soy sauce, more or less

Steps:

  • Preheat oven to 450 degrees. Remove giblets and neck from duck cavity and discard or reserve for another use. Cut off excess fat from duck cavity.
  • Place duck, breast side down (wings up), on a rack in a roasting pan; add water to come just below the rack. Sprinkle duck with pepper and brush with a little soy sauce.
  • Roast 30 minutes, undisturbed. Prick the back all over with point of a sharp knife, then flip bird onto its back. Sprinkle with pepper and brush with soy sauce again. Add a little more water to the pan if the juices are spattering (carefully--you don't want to get water on the duck).
  • Roast 20 minutes, then prick the breast all over , and brush with soy sauce. Roast 10 minutes; brush with soy sauce. Roast 5 or 10 minutes more if necessary, or until duck is a glorious brown all over and an instant-read thermometer inserted into the thigh measures at least 155 degrees. Let rest 5 minutes before carving and serving.
