This is a family recipe, I can't remember a time when they weren't at the table. The longer they marinate the better they are. I suggest adjusting the seasonings or changing them to your taste.

12 medium carrots (baby carrots will do)
1/4 cup olive oil
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon dried basil
1/8 teaspoon pepper
1 1/2 tablespoons vinegar (any kind)
1/2 garlic clove, crushed
1 tablespoon minced onions or 1 tablespoon chives
1 tablespoon chopped green onion
1 tablespoon lemon juice

Steps:

  • Cut carrots into strips.
  • Cook in 1 inch of boiling water with 2 teaspoons salt until crisp-tender (about 10 minutes).
  • Drain Well.
  • COmbine remaining ingredients.
  • Pour over carrots and refrigerate at least 1 hour or over night.
  • Serve cold.

My mother is the only other person I've known to make this recipe. In fact, when I take it to a potluck or picnic, no one has ever heard of pickled carrots. But once they try them, they are hooked. -Robin Koble, Fairview, Pennsylvania

Number Of Ingredients 7

2 pounds carrots, cut lengthwise into 1/4-in.-thick strips
1-1/2 cups sugar
1-1/2 cups water
1-1/2 cups cider vinegar
1/4 cup mustard seed
3 cinnamon sticks (3 inches)
3 whole cloves

Steps:

  • Place carrots in a large saucepan; add enough water to cover. Bring to a boil. Cook, covered, until crisp-tender, 3-5 minutes. Drain. Transfer to a large bowl. In another large saucepan, combine remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Pour mixture over carrots. Refrigerate, covered, overnight to allow flavors to blend., Transfer mixture to jars. Cover and refrigerate up to 1 month.

1 cup distilled white vinegar
2 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
⅔ cup water
8 large carrots, diced

Steps:

  • In a medium saucepan, mix distilled white vinegar, white sugar, salt, pepper and water. Bring the mixture to a boil. Remove from heat and allow to cool slightly.
  • Place the carrots in sterile containers. Cover with the vinegar solution. Seal the containers, refrigerate and marinate carrots 12 hours or overnight before serving.

2 large carrots
2/3 cup cider vinegar
1/3 cup water
1/4 cup sugar
1 teaspoon coarse salt

Steps:

  • Cut carrots into 1/4-inch rounds; place in a heatproof container. In a small pot, bring vinegar, water, sugar, and salt to a boil over high. Pour over carrots and let cool completely; cover and refrigerate overnight (or up to 3 days).

1 pound carrots, peeled and cut into 3-inch pieces
1 ½ cups water
1 ½ cups cider vinegar
¾ cup white sugar
¼ white onion, thinly sliced
⅓ cup dried currants
¼ cup sweet red wine
3 cloves black garlic, peeled
1 tablespoon dried jalapeno flakes
1 tablespoon dried celery flakes
1 teaspoon dried dill weed
1 star anise
1 bay leaf

Steps:

  • Fill a large bowl with cold water and ice cubes.
  • Bring to a large pot of water to a boil. Add carrots; cook until slightly softened, 2 to 3 minutes. Drain and transfer to the bowl of ice water to cool quickly. Drain.
  • Combine 1 1/2 cup water, vinegar, sugar, onion, currants, red wine, black garlic, jalapeno flakes, celery flakes, dill weed, star anise, and bay leaf in a large saucepan. Bring to a boil, stirring occasionally. Cook until sugar dissolves, about 3 minutes. Remove from heat and add carrots.
  • Cool carrot mixture to room temperature, about 15 minutes. Pour into a large jar or airtight container. Refrigerate until flavors meld, at least 24 hours.

1 lb carrot (cut into 3-inch julienne strips)
3/4 cup water
2/3 cup white vinegar
3/4 cup sugar
1 cinnamon stick (3-inch broken)
3 whole cloves
1 tablespoon mustard seeds

Steps:

  • Place 1" of water in a saucepan; add carrots.
  • Bring to a boil; reduce heat.
  • Cover & simmer for 3-4 min or until crisp-tender; drain & rinse in cold water.
  • Place in a bowl & set aside.
  • In a saucepan, combine water, vinegar, sugar, cinnamon, whole cloves & mustard seed; bring to a boil.
  • Reduce heat; simmer, uncovered, for 10 minute.
  • Cool; pour over the carrots.
  • Cover & refrigerate for 8 hrs or overnight; discard cloves & cinnamon.
  • Serve carrots w/a slotted spoon.

1 1/2 cups distilled white vinegar or apple-cider vinegar
2 teaspoons sugar
1/2 teaspoon whole black peppercorns
1/2 teaspoon coriander seeds
3 whole allspice berries
2 dried bay leaves
Coarse salt
10 ounces baby carrots, peeled and cut into 1/8-inch slices
2 thin slices habanero pepper

Steps:

  • Combine vinegar, 3/4 cup water, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with carrots. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.
