PESTO SAUCE
I like to serve this pesto over butter gnocchi with an extra sprinkle of Parmesan cheese. Gnocchi are light little potato dumplings, which are available in Italian grocery stores and cook up in mere minutes. - Place the first five ingredients in a small food processor; pulse until chopped. Continue processing while gradually adding oil in a steady stream. Add cheese; pulse just until blended. Cover and freeze for up to 3 months.

- Grow 4-5 large basil plants so you can make this all summer long. Purple basil makes the spiciest pesto (my Dad's favorite).
- Put basil, nuts, cheese and garlic in a food processor.
- Turn it on and drizzle in enough olive oil to reach the desired consistency - thick for spreading on bread or thin for tossing with cooked vegetables or pasta.
- NOTE: Do not use dried basil. This recipe can be frozen (in ice cube trays or 1/2 - 1 cup portions) for up to 6 months, but do not add the cheese until you are ready to eat or the sauce will fall apart.

- 1. Place olive oil in a sauce pan and saute garlic, basil, and add in broccoli.
- 2. Poor the mixture into a cuisine art or blender and add the cream cheese and enough hot pasta water to get a sauce consistency and finish blending.
- 3. Pour over (fresh) pasta.

This is a pretty easy recipe for a classic pesto sauce. It can be served with pasta for "Pasta & Pesto" or spread on toasted Italian bread or on sandwiches and salads... You can blend it into bread or muffin mix. You can make Pesto Pizza. You can even add heavy cream if you desire a "creamy pesto sauce". The key is to use only FRESH BASIL. - Rinse your basil and pluck off the stems. Pat your basil leaves with a paper towel to absorb excess water, and place the leaves on paper towels to air dry. (See notes.)
