SOFT PEANUT BUTTER OATMEAL COOKIES
Perfectly soft and chewy peanut butter oatmeal cookies made with quick oats, peanut butter, brown sugar. Baked to cookie perfection.

- Preheat the oven to 350 degrees F. and line a baking sheet with parchment paper or a baking mat.
- In a large bowl (or the bowl of your stand mixer) beat together the butter, peanut butter, granulated sugar, and brown sugar, until the mixture is light and fluffy, about 5 minutes (using a hand mixer if you don't have a stand mixer is a good option.)
- Add the two eggs and vanilla and mix to combine.
- Add the oats, flour, baking soda, baking powder, and salt to the bowl and mix to combine well.
- Let the mixture rest for 5 minutes and then stir again (this gives the oats time to absorb some of the moisture giving you the nice cookie dough texture).
- Using a cookie scoop or two spoons, place a large tablespoon of dough on the baking sheet, about 3 inches apart.
- Bake the cookies for 10-12 minutes, until the edges are set and lightly browned.
- Remove from the oven and let cool on the baking sheet for 5 minutes before removing from the sheet and placing on a wire rack to cool.
- Enjoy right away. Store extras in an air-tight container for up to a week or in the freezer for much longer.

- Blend flour, soda and salt then add to sugar mixture.
- Then add oats.
- Form into 1 1/2 inch balls (no need to press with fork like usual) These come out perfectly round Bake 350 degrees for 12 minutes.

These are the oatmeal cookies I grew up with. I know there are tons of recipes for oatmeal cookies on here already, but I didn't find any exactly like this one, or even quite close enough to call the same. The yield is an estimate, because I don't remember how many this actually makes. Enjoy!

- Cream shortening, sugar, and eggs til light and fluffy. Stir in buttermilk.
- Stir dry ingredients into creamed mixture. Stir in oats and raisins.

MARVELOUS PEANUT BUTTER OATMEAL COOKIES
Found under a lid from a Quaker Oatmeal container back in the 70's! I am going through my family favorite clippings and was delighted to find this oldie but goodie to share with Zaar chefs. Be sure to plan for the 2 hour chilling time.

Steps:
- Beat first three ingredients until creamy.
- Beat in water, egg and vanilla.
- Add combined dry ingredients; mix well.
- Cover; chill about 2 hours.
- Heat oven to 350°F
- Shape into 1-inch balls; placing them on an ungreased cookie sheet.
- Flatten with tines of fork dipped in granulated sugar to form crisscross pattern.
- Bake 9 to 11 minutes or until edges are golden brown.
- Cool 1 minute on cookie sheet: remove to wire rack.
- Cool completely.
- Store tightly covered.

MOM'S PEANUT BUTTER OATMEAL COOKIES
I may have discovered the best peanut butter cookie recipe. The only thing I would change is less sugar--they're a little sweeter than I like. I found this recipe on foodthoughtsofachefwannabe.com. She found one of her mother-in-law's heavenly recipes but the measurements for the ingredients weren't listed. She experimented and came up with this, and they are delicious.

Steps:
- Mix all ingredients (make sure you add the flour at the end).
- Preheat oven to 350.
- Line your cookie sheet with parchment paper. (I skipped this step and found it really wasn't necessary. The cookies are buttery enough they come off cleanly from the pan.).
- Using a cookie scoop, any size you like, gently press down on the cookies to make criss cross marks. Make sure you push them down slightly because they won't spread as much on their own.
- Bake for 11 to 13 minutes.
- Remove and put on a cooling rack.

- Preheat the oven to 350 Degrees F. Prepare a baking sheet by lining it with parchment paper or silicone mat.
- In a small mixing bowl add the eggs, vanilla and maple syrup and mix until it is combined. In a large mixing bowl add the oats, gluten-free flour, peanut butter powder, almond slivers, cinnamon, salt, baking soda and coconut oil. Mix well then add the combined eggs, vanilla and maple syrup mixture and mix until the oats are completely moist and coated. Cover and let it set in the refrigerator for about 1 hour so the moisture soaks into the oats and the oil hardens.
- Once the dough has hardened roll it into 2-inch balls and place them on the prepared baking sheet about 1 inch apart. Then smash them down using the palm of your hand keeping each peanut butter oatmeal cookie about 1 inch apart still.
- Bake for 8-10 minutes and after they finish cooking immediately flatten with the spatula right after the peanut butter oatmeal cookies come out of the oven (to form a patty). Let cool 10 minutes before moving to a cooling rack to cool completely.
