Steps:
- Place vegetable oil in a large skillet and place skillet over medium-high heat. Once hot, add chuck roast and sear for 3-4 minutes per side.
- Using a large slow cooker, add minced garlic, diced onions, onion soup mix, beef stock, Worcestershire sauce, salt and pepper; stir until well combined.
- Add chuck roast and cook on HIGH for 3-4 hours or LOW for 5-6 hours. Once the beef is tender enough to fall apart easily, break roast into bite-sized pieces. Reserve 4 cups of cooking liquid from slow cooker to make gravy.
- Meanwhile, cook egg noodles according to package instructions.
- To serve, place egg noodles on a large plate and top with beef.
- Pour several spoonsful of gravy on top of beef before serving.
- Using a small bowl, add cornstarch and water; whisk together until well combined. Set bowl aside.
- Using a large saucepan, add butter and place over medium-low heat. Once butter has melted, add flour; continue sautéing, stirring frequently, for 4-5 minutes or until mixture turns golden brown.
- Add 4 cups of reserved liquid from the slow cooker along with the ketchup and apple cider vinegar; stir until well combined. Increase heat to medium-high and bring mixture to a boil.
- Once boiling, add cornstarch mixture. Using a whisk, stir until mixture is well combined.
- Continue cooking, stirring often, for 3-5 minutes, or until gravy thickens noticeably.
- Reduce heat to low to keep gravy warm.

OLD FASHIONED BEEF STROGANOFF
This is a budget friendly, richly flavored stroganoff that doesn't use creamed soup. Though it does take some time, it is very simple to put together with ingredients you already have in your pantry. You can use whatever mushrooms you have on hand. This is my own recipe and made the way we like it...where no one flavor stands out and it makes a lot of broth. Please feel free to change it up and make it your own.

Steps:
- In a large skillet brown ground beef (Use 1 to 2 pounds, depending on how meaty you like it) & drain fat. Return beef to skillet, add onions (chop these pretty finely), sliced mushrooms (again, you can use more or less than 8 ounces, depending on what you like) & garlic (more or less to taste), cook until tender. Mix in 1 ½ cups water, 1 teaspoons flour, 2 teaspoons (or cubes) beef bouillon, pepper (to taste),1 can of condensed mushroom soup, 1 can of mushrooms, Worcestershire sauce & ketchup. Bring to a boil. Reduce heat and allow to simmer for 15 minutes. While that is cooking, mix together 1 8 oz. package of sour cream, the other teaspoons flour & parsley. Add to beef/mushroom mixture when it's done simmering. Stir very well. Add salt & pepper to taste. If you prefer the sauce to be thinner, stir in small amounts of water until you reach the consistency you prefer. Serve over egg noodles & enjoy!

Steps:
- Prepare the egg noodles according to package instructions and keep warm.
- Preheat a large saute pan over medium-high heat, add a splash of olive oil and the thinly sliced tenderloin. Season with a pinch of salt and saute until golden brown and cooked through. Remove the meat from the pan; set aside and keep warm.
- In the same pan, melt the butter, then add the sliced mushrooms, onion and garlic. Season with salt and pepper and saute until onion and mushrooms are tender. Next, sprinkle the flour into the pan, stir to incorporate it and cook for a few minutes. Then pour in the wine, beef broth and milk. Allow the mixture to come up to a simmer, then add the prepared beef. Simmer for 7 to 10 minutes, allowing the sauce to thicken.
- Sprinkle fresh dill over the sauce when ready to serve. Combine the sauce with the noodles and toss to coat.
