MOM MOMS BUTTERSCOTCH ICING



Mom Moms Butterscotch Icing image

My Grandmother(Mom Mom) made this icing and put it on everything from chocolate cake to cookies. I love it and can eat it just by the spoonful, be careful when making it as it can easliy become too stiff. I really don't mind if it does because then I would just put it in a pan and cut it like fudge.

Number Of Ingredients 4

1/2 cup butter (no substitutions)
1 cup firmly packed light brown sugar
1/4 cup milk
2 cups confectioners' sugar

Steps:

  • On stovetop melt the butter, add the brown sugar and boil over low heat for two minutes, stirring constantly. Add the milk, stir until the mixture comes to a boil again. Remove from heat and allow to cool to about room temperature.
  • Slowly beat in the confectioners sugar, using more or less sugar depending on the consistency desired. Beat until mixture is thick enough to spread.

My mom's Easy and Extra Fluffy Frosting is a light and bright, not-too-sweet topping to douse on cupcakes and cakes of all varieties!

2 egg whites, at room temperature
1/4 teaspoon salt
1/4 cup sugar
3/4 cup light corn syrup
1 teaspoon pure vanilla extract

Steps:

  • Use a stand mixer. It will change your life. You can make this using a hand mixer, but it just takes time. In a clean bowl (any grease on your bowl or utensils will ruin the icing -- egg whites hate grease!), beat the egg whites and salt on high speed until foamy.
  • With the mixer still running, slowly add the sugar. Beat mixture until soft peaks form (when you pull the mixer out of the white mixture, you should get a little point that bends over).
  • Bring the corn syrup to a boil over medium heat in a small saucepan. When the corn syrup comes to a boil, remove from heat.
  • Slowly pour the hot corn syrup into the egg mixture while your mixer is mixing on high. Beat the mixture until stiff peaks form, about 5 minutes. Add the vanilla, and mix to combine.
  • Use right away.

This goes wonderfully with my recipe for coconut cake. This icing is sweet and the coconut cake is not and it is a nice compliment to each other.

1 cup flaked coconut
2/3 cup packed brown sugar
1/2 cup chopped nuts (optional)
3 tablespoons milk or 3 tablespoons cream

Steps:

  • In a small saucepan, melt margerine.
  • Stir in remaining ingredients.
  • Spread on a warm cake.
  • Broil 5 inches from heat for 1-2 minutes, or until bubbly and a light golden brown color.
  • Watch as it burns easily.

I took this recipe from the Ghiradelli cocoa mix box and altered it a bit. I tend to find frosting recipes sickeningly sweet. This one is delicious and just the right sweetness, with a great mocha flavor. This recipe makes enough to cover the tops and sides of 2 9-inch rounds. Try it with the "Better than Box Cake" yellow cake recipe.

1/3 cup butter
4 1/2 tablespoons whole milk
3/4 cup cocoa powder (I recommend Ghiradelli)
2 1/4 cups confectioners' sugar
1 dash salt
3/4 teaspoon vanilla extract
3 teaspoons dry instant coffee

Steps:

  • Place butter, milk, and cocoa powder in a saucepan over low heat.
  • Stir mixture until all the butter has just melted.
  • Remove from heat and add the vanilla and salt.
  • Sift in the confectioner's sugar and ground coffee.
  • Mix until smooth.
  • Cool to room temperature and frost away!

3 egg whites
600g icing sugar
1 tsp liquid glucose
1 tsp lemon juice

Steps:

  • Whisk the egg whites until lightly whipped. Add the icing sugar a few tbsps at a time, whisking continuously until all incorporated. Add the glucose and lemon juice.
  • Continue whisking until the icing is thick enough to hold stiff peaks when you lift the beaters and is smooth and shiny.
  • Use a palette knife to spread the icing over the top and sides of your marzipaned cake. For a snowy effect, make little dips and peaks with a teaspoon. Leave to firm up somewhere cool and dry (not the fridge) for 24 hrs before cutting the cake.
