MOM'S MELT-IN-YOUR-MOUTH DINNER ROLLS
My mom made these rolls for every occasion I can remember. They are originally in a little cookbook by Beverly Nye from Cleveland, Ohio. They are practically no fail, since there is no kneading involved. They are always light, tender, and delicious, and so popular that I usually plan on at least two per person rather than the one indicated here. They are also really convenient since you make the dough the night before and refrigerate it for the first rise. The times indicated do not include refrigerating overnight or the 2 hours they take to raise before baking. (P.S. Thanks for the photo Danielle)

Steps:
- Dissolve yeast in warm water and add 1 tablespoon sugar and baking powder. Allow to stand for 20 minutes.
- Meanwhile scald milk. Add margarine, 1/3 cup sugar and salt. Cool a little and then add eggs. (I do this step in my 4 c glass measure in the microwave.).
- Combine all with flour. Cover and refrigerate overnight. (The dough will more than double in bulk, so make sure your container is big enough. If it looks like it might outgrow its bowl, you can always punch it down once or twice without any ill effects.).
- Two hours before serving, divide dough into thirds and roll out into large circles about 9 inches in diameter on a floured surface. The dough will be sticky, but don't worry. It will quickly come together and handle really well with a few sprinklings of flour (not too much). Cut into 8 wedges and make crescent rolls by starting at the wide end and rolling up. Place on greased pans to rise, covered with clean towels.
- Bake at 425 degrees for 8-10 minutes. Mom always rubbed the hot rolls with a stick of butter when they came out of the oven, and I do, too. It makes them so beautiful.

HOMEMADE HOT ROLLS
We have a small close-knit community, so when someone dies, the women get together and prepare dinner for the family. I had taken food to one of these dinners, and helped served. I was lucky enough to get in line before the hot rolls were all gone. They were DELICIOUS! I asked who made them, and found out it was a woman by the name of Alice Ash. I asked her for the recipe, but she didn't have the recipe with her. A few days later, I received the recipe from my mom, who'd gotten it from her neighbor. Alice had given it to the neighbor, to give to my mom, to give to me! That's small town networking!

Steps:
- Dissolve yeast in warm water.
- Stir sugar, salt, and half of the flour into the yeast mixture.
- Beat in the eggs and shortening.
- Add the remaining flour and beat until smooth.
- Scrape down the sides of bowl, and cover with a cloth, and let rise in a warm place, until doubled in bulk (approx. 30 minutes).
- Stir down the dough.
- Add more sifted flour until it can be worked with hands (just add gradually until it feels right).
- Knead a few times, not a lot; just get it worked in and ready to pinch off into rolls.
- Pinch the rolls off (medium sized), and place in a greased pan.
- It may take two pans; one small, and one larger, for all the dough.
- You can also make loaves of bread out of it.
- Allow it to rise again, until doubled in bulk.
- Bake at 375-400 for 15-20 minutes .
- When done, brush with butter (while hot).
- Note: You can also use this recipe to make bread loaves (it should make 2 loaves in traditional bread pans), or cinnamon rolls.
- For the cinnamon rolls, roll the dough out, sprinkle with cinnamon and sugar, and roll up like a jelly roll.
- Slice off, place in a baking pan, and bake at the same temperature as the rolls, until done.
- Coat with frosting made with powdered sugar, milk, and a dash of vanilla.

MOM'S ROLLS
I grew up on these. Now I make them for my kids. The time it takes to make these are worth it. The recipe can easily be halved for 12 rolls. You would still use 1 egg though.

- Dissolve sugar and salt in water.
- Add yeast. Let rest 10 minutes.
- Add egg and oil.
- Add flour. Make a smooth but elastic dough.
- Let rise until double (about an hour).
- Shape into rolls.
- Let rise 30 minutes.
- Bake at 400 degrees for 10-12 minutes.
- Brush tops with butter.

HOT ROLLS
These rolls are just wonderful and so simple to make. Prep time does not include the time for letting rolls rise.[Update: After finally being successful in making bread over the past year, and because of the reviews, I have reworked this recipe and hoepfully the instructions are more clear. The dough should be slightly sticky]

Steps:
- Mix yeast in water and let stand about 10 minutes.
- Add sugar, melted shortening and salt and mix well.
- Add egg to mixture.
- Stir in 4-5 cups of flour.
- Place on a flour surface and knead in the remaining cup of flour.
- Knead about 10 minutes.
- Put in large greased bowel and let rise until double in size, about 1 hour.
- Punch dough down and form into dinner rolls and place sides touching in a 9x13 greased pan.
- Let rise again until double, about 1 hours.
- Bake at 350 degrees 15-20 minutes or until golden brown.

MY MOM'S STICKY CINNAMON BUNS
A recipe handed down from my Mom. We tweaked and tweaked till we got it just right! If Pillsbury Hot Roll mix ever goes off the market, I'll have a lot of recipes that don't work anymore. I use it as a base for everything!

Steps:
- COMBINE contents of box, sugar and yeast packet in large bowl; MIX WELL.
- STIR in hot water, butter and egg until dough pulls away from sides of bowl.
- Turn dough out onto lightly floured surface.
- With greased or floured hands, shape dough into a ball.
- KNEAD dough for 5 minutes until smooth.
- Cover dough with large bowl' let rest 5 or 10 minutes.
- (skip steps 5 & 6 if making icing topped cinnamon buns).
- Make pan coating, if using, by mixing all together in a small bowl,.
- microwave for about a minute until blended.
- Make filling and set aside.
- At this point, if making stickies, spread into a buttered 9"X13" pan or two 9" pans.
- TO SHAPE roll dough to about a 10" X 15" rectangle.
- SPREAD filling mixture evenly over dough.
- Starting with narrow side, roll tightly and pinch edges to seal.
- Cut into 12 or 16 even pieces and place cut side down in prepared pans.
- Twelve look nice in the 9" X 13" pan,eight each make nice 9" pans.
- Cover loosely with plastic wrap or clean towel and let rise in a warm place 30 minute.
- Uncover rolls, bake at 375o F. for 20 to 30 minute or until golden brown.
- Cool one minute, remove from pans by flipping onto serving plate for stickies.
- You can frost right in pan when almost cool but still warm for plain cinnamon rolls.
- NOTE: prep. time includes rise time. if you have extra time, do a rise in the bowl first then go on to the shaping step. Extra rising gives a tender bread.
- The topping is only used when making sticky-style.
