MOM'S HAM 'N BISCUIT CASSEROLE

This is good old fashioned comfort food. A great way to use up leftover ham. Prep time includes making the biscuits.

Number Of Ingredients 10

1/2 sweet onion, diced
1/4 cup diced celery
1 tablespoon butter
1 tablespoon olive oil
6 tablespoons flour
2 cups milk
1 (10 3/4 ounce) can condensed cream of celery soup
2 cups chopped ham
1 tablespoon lemon juice
1 batch uncooked biscuit

Steps:

  • Make your biscuits but don't bake them yet. (I use my recipe #182802).
  • Preheat oven to 450 degrees, grease a 9 x 12 casserole or pyrex dish.
  • Make the biscuits and set them in the pan.
  • Saute onions, celery and oil.
  • Stir in flour and slightly brown, being careful not to burn.
  • Stir in milk a little at a time and add soup.
  • Bring to a boil, turn down heat and add the ham and lemon juice, stir.
  • Pour over the biscuits and bake about 30 minutes or until biscuits are done. (I put a jelly roll pan underneath in case it rises too much.).
  • Let casserole set for 5 minutes or so before serving.

This is an adaptation of 2 different recipes my mother-in-law used to fix. I took part of each one and added them together one day when I didn't have all the ingredients for just one.Also, I had 3 of my grandchildren the day I made this they loved it. There were no leftovers. .

Number Of Ingredients 8

1/2 lb ground beef
1/2 cup onion
15 ounces creamed corn
10 ounces tomato soup (or your favorite canned soup)
1/4-1/2 cup parmesan cheese, grated
1 1/2 cups elbow macaroni
4 -6 slices American cheese
12 ounces refrigerated biscuits

Steps:

  • In a heavy skillet brown beef and onion.
  • Add corn,soup,and parmesan cheese.
  • Simmer for 15 minutes, while cooking macaroni.
  • Add macaroni to the meat mixture.
  • Season to taste.
  • Pour into a greased casserole.
  • Top with cheese slices.
  • Cut biscuits in half to cover top of mixture.
  • Bake at 350° until biscuits are done and browned to your liking.

6 frozen biscuit dough
1 cup tiny peas, thawed
1 1/2-2 cups ham, cut into 1-inch cubes
2 tablespoons margarine
1/4 cup onion, finely chopped
2 tablespoons flour
1/4 teaspoon ground black pepper
1/4 teaspoon dry mustard
1 1/2 cups milk
1 cup shredded mild cheddar cheese
2 cups potatoes, cubed, cooked, drained (frozen Obriens would work too)

Steps:

  • Preheat oven to 375°.
  • In a medium saucepan melt margarine.
  • Add onion; cook until tender.
  • Blend in flour, pepper and dry mustard.
  • Add milk all at once.
  • Cook and stir over medium heat until thickened.
  • Cook and stir 1 minute more.
  • Add cheese; stir until melted.
  • Stir in potato, ham and peas.
  • Spoon mixture into a 10x6-inch baking dish; top with biscuits.
  • Bake 30 to 35 minutes or until biscuits are golden brown.

I found this recipe in my local newspaper. Sounds like a good way to use up some left over (or not) ham. I haven't tried it, but plan on doing so soon. I do think I might make a few adjustments to the recipe to suit my family's taste, but here is the recipe as printed. It was submitted by Florence Hiett. (serving size is a guess)

3 tablespoons butter
2 cups celery, diced
2 cups onions, diced
1/2 cup carrot, chopped
1 (10 1/2 ounce) can cream of chicken soup
1 tablespoon chicken bouillon granule
3 tablespoons cornstarch
1/4 cup water
2 cups frozen peas
4 cups cooked ham, diced
1 cup shredded swiss cheese
cheddar cheese
1 (25 ounce) can pillsbury grands southern-style refrigerated buttermilk biscuits

Steps:

  • Preheat oven to 350.
  • Melt butter in pan and saute celery, onion and carrots until tender.
  • Add cream of chicken soup and bouillon granules to the vegetables and mix together.
  • Bring to a low boil.
  • Mix cornstarch and water together and add to pan.
  • Stir in peas and ham, and bring to a low boil once again.
  • Lightly grease a 9x13 pan.
  • Pour mixture into greased pan, but reserve a bit of the liquid.
  • Sprinkle with shredded cheese.
  • Top with canned biscuits.
  • Spoon a little of the reserved liquid over each bisquit.
  • Bake for 30 to 35 mins, until biscuits are nicely browned.

1 lb ground beef
1/2 cup chopped onion
1/4 cup diced green bell pepper
1 (8 ounce) can tomato sauce
2 teaspoons chili powder
1/2 teaspoon garlic salt
1 (8 ounce) can refrigerator buttermilk biscuits
1 1/2 cups grated cheddar cheese
1/2 cup sour cream
1 egg, slightly beaten

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large nonstick skillet, brown the ground beef with the onion and green pepper. Drain off any excess fat.
  • Stir in the tomato sauce, chili powder, and garlic salt. Let simmer.
  • Separate the biscuit dough into 10 biscuits; split each in half. Press 10 biscuit halves over the bottom of an ungreased 8-inch or 9-inch square baking pan.
  • In a bowl, mix 1/2 cup of the cheese with the sour cream and egg.
  • Remove the meat mixture from the heat and stir in the sour cream mixture. Spoon over the biscuit dough.
  • Arrange the remaining biscuit halves on top. Sprinkle with the remaining 1 cup of cheese.
  • Bake for 25 to 30 minutes, until golden brown.

1 (14 1/2 ounce) can cut green beans, drained

1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (7 ounce) can refrigerated buttermilk biscuits
4 ounces cheddar cheese, cut into cubes
2 tablespoons butter, melted
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 375F.
  • Brown ground beef, onion and garlic in an ovenproof skillet.
  • Drain fat.
  • Add green beans, tomato sauce, basil, salt and pepper, stirring to mix.
  • Simmer meat mixture for 5-10 minutes, stirring occasionally.
  • Stir cheese into meat sauce.
  • Separate biscuits, and cut a hole in the center of each.
  • Form biscuits to look like a donut, and place biscuits in a ring around the edges of the skillet, and brush the tops with melted butter.
  • Sprinkle meat sauce with sesame seeds before baking.
  • Bake for 25 minutes or until biscuits are golden.
