MOM'S SECRET CHERRY JELL-O® SALAD
My mom always makes this for Thanksgiving and all of my siblings have carried on the tradition. The secret is in the topping.

- Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
- Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.

- 1. Boil water and pear juice, enough to make one cup. First Mixture: Stir 1 packet gelatin with a little cold water, stir in lime juice,then add the warm juice and the mashed pears add one or two Tbs. simple syrup, and stir in softened cream cheese, and whip together well.Optional: add four drops of green food coloring. Chill until thickened.
- 2. In another bowl combine 1 cup boiling hot water and Lime Jello and stir well, let cool, and then add 8 oz. of Cool Whip. Chill until thickened.
- 3. Prepare a mold by spraying with oil; I used a bundt pan. Place slices of the second can of pears in the bottom, spoon the first mixture of Pears/juice/cream cheese into the mold. Then add the final layer of Lime Jello/Cool Whip and cover tightly with foil and chill overnight. If making early in the a.m. it should be fine by evening.
- 4. Turn the mold upside down over a serving platter, and tap gently to loosen gelatin. Decorate with marashino cherries if desired. It's great for dessert or on lettuce as a salad.
RASPBERRY FRUIT SALAD
Great jello fruit salad for special occasions. My mother was famous for this special salad and made it by request for Thanksgiving and Christmas. My mom is gone, but we still make this treat for our family gatherings.

- Make Jello, using 1 1/2 cup hot water, add crushed banana, raspberries, pineapple less the juice, mandarin oranges less the fluid, in a 9 x 13 pan or serving dish, cool, until firm.
- Topping: Add water to pineapple juice making 1 cup. Heat in sauce pan adding sugar, egg, corn starch, butter. Heat while stirring until mixture thickens. Fold into Cool Whip and let cool.
- When jello is firm, spread topping over jello and continue to cool, until ready to serve.

- Drain oranges and pineapple, reserving juices. Set oranges and pineapple aside. Add water to juices to measure 2 cups. Place in a saucepan and bring to a boil; pour over gelatin in a large bowl. - In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in sugar, orange juice and lemon juice; cook and stir 6-8 minutes or until sugar is dissolved., Transfer to a bowl; refrigerate, covered, until slightly thickened, about 1-1/2 hours. Fold in fruit. Pour into a 6-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm. If using a ring mold, unmold onto a serving plate.

- Drain pineapple in a colander over a large measuring cup to save juice. Add enough water to make 2 cups total liquid. Heat juice/water mixture over medium high heat and bring just to a boil. Add jello mixes and stir until completely dissolved. Remove from heat and allow to cool slightly, about 10 minutes. In a large bowl, whisk together evaporated milk and mayo until smooth. VINTAGE THREE-COLOR JELL-O SALAD

- Spray the three 8-inch pans with vegetable spray. Prepare the first three flavors of gelatin separately, using 1 cup boiling water and 1/2 cup of ice-cold water for each flavor. Pour each flavor into an 8-inch square pan. Chill overnight to make sure they are really set and firm.Then combine the lemon gelatin, the white sugar, and the last cup of boiling water. - What You Need. Ingredients. 4 boxes of jello, 2 each of 1 flavor (you can use whatever flavors you want, but we normally stick with flavors that complement the fruit we are using)
- First Layer. The First Layer is the crushed pineapple layer. So first, you need to decide on what flavor of jello you are going to use to suspend the pineapple in.
- Making and Cooling. Once the water has been boiled and added to the jello powder and mixed as seen below in the first 2 pictures, add in ice to quick cool the jello.
- Finish the Layer. At this point, open up the can of pineapple, and drain the liquid. You dont want to add this in to the jello, so you can do what you want with this liquid, I normally drink it at this stage.
- Sour Cream. Once the first layer has firmed up, get out the Sour Cream and a spoon. We use about 8 ounces of sour cream for the middle. Spread out the sour cream across the top completely.
- Bananas. Now, slice up a few bananas, around 5 or so, and lay them out on top of the sour cream. Return the container back to the refrigerator to keep it cool and firm.
- Final Layer. Now decide on the flavor of jello you are going to use with the strawberries. We normally use strawberry jello, but even blue raspberry or orange tastes good we have found.
- Strawberries! Since you will be adding the warm jello to the rest of the jello fruit salad, we normally take this time to cut up the strawberries to allow for the jello to cool as much as possible.
- Spooning. Take your jello liquid and spoon it gently on top of the cut strawberries. You dont want to just pour it, because that can not only be messy, but it can also mess up the sour cream layer.
- Finished! Time to enjoy not only how pretty this layered jello fruit salad is, but also time to enjoy how tasty it is! Participated in the. The Instructables Book Contest.
