This is a really old recipe that I've had forever. They're simple but good. You can substitute 1 pound of asparagus for the beans if you'd like.

1 pound fresh green beans, trimmed and snapped
1 tablespoon butter
¼ cup heavy cream
2 tablespoons grated Parmesan cheese
ground nutmeg
salt, to taste
ground black pepper, to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly-salted water to a boil; drop in the green beans and return to a boil. Cook uncovered until the beans are bright green and barely tender, about 6 minutes. Drain and set aside.
  • Melt the butter in a large skillet over medium-low heat; whisk the cream, 2 tablespoons of Parmesan cheese, and nutmeg into the melted butter. Bring the mixture to a simmer. Gently stir the beans into the mixture to coat; season with salt and pepper. Return to a simmer, transfer to a serving dish, and sprinkle with 2 tablespoons of Parmesan cheese to serve.

1 (10.75 ounce) can condensed cream of celery soup
½ cup sour cream
¾ cup shredded Cheddar cheese
½ cup chopped onion
1 pinch salt
1 (14.5 ounce) can French cut green beans, drained
1 (15.25 ounce) can whole kernel corn, drained
2 sleeves buttery round crackers, crushed
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • In a bowl, stir together the cream of celery soup, sour cream, Cheddar cheese, onion, and salt until well combined. Mix the green beans and corn together in the prepared dish, and spread the soup mixture over the vegetables. Place the crushed crackers in a bowl and stir in the butter. Spread the crumbs over the casserole.
  • Bake in the preheated oven until the casserole is bubbling and the crumb topping is golden brown, about 45 minutes.

CREAM OF GREEN BEAN SOUP

I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

6 green onions, sliced
6 shallots, chopped
1 garlic clove, minced
3 tablespoons butter, melted
2 medium baking potatoes, peeled and diced
4 cups chicken broth
2 lbs fresh green beans, cut into 2 inch pieces
1/2-1 cup whipped cream or 1/2-1 cup half & half light cream
1 tablespoon lemon juice
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
  • Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
  • Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
  • Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

1 cube beef bouillon cube
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 tablespoon butter
⅛ teaspoon garlic pepper seasoning

  • Drain the green beans, reserving 1/2 of the liquid. Dissolve the bouillon cube in the reserved liquid.
  • Place green beans and liquid in a saucepan. Add Worcestershire sauce, soy sauce, butter or margarine and garlic pepper seasoning to taste. Simmer gently for 15 minutes.

milk (enough to cover beans in pan)
2 Tbsp margarine
1 pinch basil, dried
1 pinch pepper
1 pinch lawry's salt
1 pinch accent
1 pinch garlic and herb seasoning
PASTE
2 Tbsp flour
small amount of water to make paste

Steps:

  • 1. Drain water from cans of green beans and place in saucepan
  • 2. cover beans with milk. I use 2%, but you can use whole milk
  • 3. Add seasonings and margarine
  • 4. bring to slow boil, stirring every few seconds
  • 5. make a paste with 2 tbls. of flour and enough water to be almost gluelike.
  • 6. Slowly add paste to bean mixture, making sure to whisk in with a fork. Boil for at least a minute.
  • 7. For added flavor, you can use onions, and/or real bacon pieces.

This is a perfect dish for early and middle summer days when great-tasting, fresh green beans are both cheap and plentiful. These green beans represent something totally different for a stovetop side dish and you will simply not believe how terrific they taste. One plus is that it's not loaded with cheese or canned soup. This is the real thing from scratch, a recipe I developed after growing tired of the same old stuff at the supper table. It took me awhile to perfect but these beans actually made my wife turn around and look at me after her first bite -- she was very pleased, which means that I am very pleased too. This dish goes great with fried, or baked, bone-in pork chops. It's also versatile enough to complement more elegant entrees for more formal dinners. There are multiple steps involved in preparing this dish but even a beginning chef can achieve them easily enough and the end result is well worth the effort.

1 lb fresh green beans, stringless
30 ounces chicken stock
4 tablespoons salted butter
4 tablespoons all-purpose flour
2 cups whole milk, pre-warmed in microwave
1/2 teaspoon seasoning salt
1/4 teaspoon white pepper (from a can)
1/4 teaspoon Mrs. Dash seasoning mix (original)

Steps:

  • Rinse the beans in cold water and snap them into 1-inch lengths, discarding the tips. Remove any strings.
  • Pour the chicken stock into a medium-sized cooking pot and bring to a boil over medium heat. Add the beans to the stock and cover until it boils again and then lower the heat to achieve a slow boil, covered, until the beans are tender but not mushy, (about 15 minutes).
  • When the beans are done, set aside for a few minutes.
  • Make the white sauce using a double boiler (you can make an improvised double boiler with a cooking pot with an inch of water in the bottom, in combination with a stainless steel salad bowl which sets atop of the pot). This white sauce CANNOT be prepared over direct heat or it will scorch.
  • Melt the butter in the top section of the double boiler. Blend in the flour, seasoned salt, and white pepper, whisking constantly.
  • When there are no lumps, add the pre-warmed milk (about 100 degrees F.) and continue to whisk until the sauce thickens. Once the sauce has thickened a bit (after about 5 minutes), allow the sauce to bubble, still whisking with some frequency, for about 15 more minutes. At the end of the 15 minutes of simmering, the white sauce is done and should be taken off the heat.
  • Strain the chicken stock from the beans using a colander (save this stock in the refrigerator for your next batch of home made vegetable soup), reserving one-quarter cup of stock to blend into the white sauce.
  • Pour the drained beans into a cooking pot with the white sauce, including the quarter cup of broth, and add the Mrs. Dash and stir. Re-heat until it bubbles slightly and serve.

I got this recipe from Good Housekeeping UK when at the Helsinki Airport a few weeks ago. Looked good and made for Canadian Thanksgiving. It was a hit! Very tasty and easy!

1/4 cup butter
1 small onion, finely chopped
3 -4 slices prosciutto
1 garlic clove, crushed
1 tablespoon parsley, chopped
5 ounces cream or 5 ounces half-and-half

Steps:

  • Cut the ends off the beans, then cook in salted boiling water until just tender. I steam them til they are still crisp and bright green.
  • Run cold water over beans to stop the cooking process.
  • Melt butter in a large pan and gently cook onions until soft, about 5 minutes.
  • Add Prosciutto, garlic, and parsley and cook for 3 minutes.
  • Add the cream, stirring constantly, and bring to a light boil. Do not leave unattended, otherwise cream will burn.
  • Once mixture is hot, add green beans, mix to coat and warmed through.
  • I did the sauce and green beans ahead, mixed them together and reheated on the stove. Turned out great!

Easy Creamy Canned Green Beans and Mushrooms image

A quick and easy recipe that picky eaters will always like. Great way to get kids to eat their veggies.

1 (14.5 ounce) can green beans (such as Del Monte®)
1 (4 ounce) can sliced mushrooms, drained
1 ½ tablespoons butter
1 ½ tablespoons cream cheese, softened
salt and cracked black pepper to taste

Steps:

  • Drain most of the water from the green beans. Place beans in a saucepan over medium heat and bring to a boil. Reduce heat and simmer for 5 minutes. Add mushrooms and simmer an additional 5 minutes.
  • Add butter and cream cheese. Stir until melted and well incorporated, 3 to 5 minutes. Season with salt and pepper.

Crispy Potatoes with Green Beans & Eggs image

This is a one-skillet meal, reminiscent of diner fare at roadside restaurants across the U.S. It can be made with either leftover or raw potatoes. Even while making dinner in a hurry, don't rush this dish: you want to cook the potato cubes until they are crispy outside but still creamy inside.

1 cup fresh or cooked green beans, cut into 1-inch pieces
2 tablespoons extra-virgin olive oil
2 pounds boiling potatoes, peeled and cut into 1/2-inch dice, or 5 cups diced cooked potatoes
2 cloves garlic, minced
⅛ teaspoon crushed red pepper
½ teaspoon salt
Freshly ground pepper, to taste
4 large eggs
Pinch of paprika, (optional)

Steps:

  • If using fresh green beans, cook in a large saucepan of boiling water until crisp-tender, about 3 minutes. Drain and refresh under cold running water.
  • Heat oil in a large nonstick or cast-iron skillet over medium heat until hot enough to sizzle a piece of potato. Spread potatoes in an even layer and cook, turning every few minutes with a wide spatula, until tender and browned, 15 to 20 minutes for raw potatoes, 10 to 12 minutes for cooked. Stir in the green beans, garlic, crushed red pepper, salt and pepper.
  • Crack each egg into a small bowl and slip them one at a time into the pan on top of the vegetables, spacing evenly. Cover and cook over medium heat until the whites are set and the yolks are cooked to your taste, 3 to 5 minutes. Sprinkle the eggs with paprika, if desired, and serve immediately.

This holiday staple is getting an infusion of wood-fired flavor in our Braised Creamed Green recipe. You can use a mixture of kale, chard and collard greens.

garlic, pressed or minced
shallot, thinly sliced
heavy cream
ground nutmeg
salt
mixed greens such as kale, chard or collards; washed, stems removed and torn into bite sized pieces

Steps:

  • When ready to cook, set the temperature to 325℉ and preheat, lid closed for 15 minutes.
  • In a saucepan, heat 2 tablespoons of the butter over high heat until it foams. Add the garlic and shallot and cook over medium-low heat, stirring, until softened and golden, about 5 minutes.
  • Add the cream, bring to a simmer and cook until slightly thickened, about 10 minutes.
  • Add the nutmeg and salt to taste. Using a hand blender, purée until smooth.
  • In a cast iron pan, heat the remaining 4 tablespoons butter over high heat until it foams.
  • Add the greens and cook until tender but still bright green, about 5 minutes.
  • Sprinkle with salt and add the cream mixture. Cover and transfer to the grill.
  • Braise greens for 15-20 minutes until the cream is bubbling and greens are tender.
  • Season to taste with nutmeg and salt. Serve hot. Enjoy!
