MOM'S CHICKEN SALAD
A delicious chicken salad made with grapes, almond slivers and a touch of curry. Great for a summertime lunch or light dinner. We always make sandwiches with croisants, or you can use bread or crackers, or just eat it by itself. Any way you try it, it's delicious!

Steps:
- Melt butter, let it cool.
- Mix together butter, mayo, parsley, garlic, curry and marjoram.
- Toss in chicken and grapes.
- Add salt and pepper to taste.
- Cover tightly and refrigerate until serving.
- Toast Almonds in 350 degree oven on a cookie sheet for 5-10 minutes.
- Right before serving toss in almonds.

CHICKEN SALAD
An easy Chicken Salad recipe from Food Network Kitchen starts with poaching your chicken breasts in an herb-infused broth to keep them extra moist.

Steps:
- Toss together the chicken, celery, scallions, dill and parsley in a large bowl.
- In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
- Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken until firm to the touch, about 20 minutes. Remove the pan from the heat, uncover and cool the chicken in the liquid for 30 minutes.
- Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and roughly chop the meat into about 1-inch pieces. Discard the bones and skin.
- Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using.

- 1. Ingredients: 4 cups cooked chicken, diced or shredded 1 2lb box macaroni noodles 2 cans medium black olives, chopped 6 stalks celery, diced 1 cup mayonnaise Seasonings to taste: Garlic powder Onion powder Salt Pepper
- 2. 1. Cook pasta to desired tenderness. Drain well. 2. Combine all ingredients in a large bowl and mix well (add more mayo if desired). 3. Season to taste and serve immediately. (This is good warm or cold but we always liked it best when the noodles were fresh out of the pot.) 4. Some variations we've tried over the years: add 1 cup finely diced sweet onions. Mix one package ranch dressing mix with the mayo. Use leftover Thanksgiving turkey instead of chicken. I like mine with lots of celery and olives so can always add more if you'd like.

HOT CHICKEN SALAD (DAVID LETTERMAN'S MOM'S)
She got it from Alma Worthington who was the food services director at Second Presbyterian for nearly 15 years. Dave's Mom, Dorothy had worked at that Church. This is a casserole made with cooked (leftover chicken) and is different from the other hot chicken salad recipes posted. I haven't tried this yet but it is one of Dave's Mom's favorites. I found this in Home Cookin' With Dave's Mom.

MOM'S CHICKEN CACCIATORE

- Combine the flour, salt and pepper in a plastic bag. Shake the chicken pieces in flour until coated. Heat the oil in a large skillet (one that has a cover/lid). Fry the chicken pieces until they are browned on both sides. Remove from skillet.
- Add the onion, garlic and bell pepper to the skillet and saute until the onion is slightly browned. Return the chicken to the skillet and add the tomatoes, oregano and wine. Cover and simmer for 30 minutes over medium low heat.
- Add the mushrooms and salt and pepper to taste. Simmer for 10 more minutes.
