MY MOM'S FAMOUS CALICO BEANS
Steps:
- Preheat the oven to 325 degrees F. Lightly grease a 3-quart baking dish (see note).
- Drain and rinse all the beans (go ahead and throw them all together in one colander) and set aside.
- In a large skillet, cook the bacon until crisp. Drain on paper towels, leaving about 1 teaspoon grease in the skillet.
- Add the onion to the skillet over medium heat and cook until softened, 4-5 minutes. Off the heat, add the beans and bacon.
- In a liquid measuring cup or bowl, combine the ketchup, Worcestershire, dry mustard, sugar, salt, vinegar, water (or broth) and cornstarch, if using, and whisk to combine thoroughly. Pour the sauce into the skillet and stir well.
- Scrape the entire mixture into the prepared baking pan. Cover with aluminum foil and bake for 45-60 minutes. Serve immediately.

CALICO BEANS
Calico beans (aka cowboy beans or trucker beans) get their name from the variety of bean colors in the dish. Here we use a trio of canned beans: white navy beans, deep red kidney beans and light brown pork and beans. They're baked with bacon and ground beef in a tangy-sweet sauce until bubbling, resulting in the perfect summer side dish to accompany grilled meats. Calico beans are also great on their own as a main course, topped with shredded cheese and hot sauce.

Steps:
- Position an oven rack in the middle of the oven and preheat to 325 degrees F.
- Put the bacon in a large skillet and cook over medium heat, stirring occasionally, until crispy, 8 to 10 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate. Pour off all but 1 tablespoon of the bacon fat from the skillet. Add the onion and ground beef and cook, breaking up the beef, until the onion is softened and the beef is crumbled and fully cooked, about 5 minutes. If necessary, drain any excess moisture released from the meat. Add the cooked bacon, kidney beans, navy beans, pork and beans, ketchup, brown sugar, dry mustard, vinegar and salt. Stir together and then transfer to a 9-by-13-inch baking dish.
- Bake until bubbling and caramelized on top, 35 to 40 minutes.
CALICO BEANS
These are my Aunt Jessie's famous baked beans. She makes them for all our family picnics and everyone loves them. I make them vegetarian by eliminating the bacon and ground beef. It isn't necessary to replace the eliminated items but you can substitute tofu crumbles for the beef.

Steps:
- Cook bacon in skillet until crisp, then crumble and set aside.
- Cook beef in skillet until no pink remains. Add onion, sauté just until tender.
- Combine beef, onion, ketchup, salt, brown sugar, mustard and vinegar in a 3 qt baking dish or crock pot. Partially drain all the beans (I don't drain the baked beans) and add to the baking dish or crock pot, stirring gently to mix. Sprinkle with bacon.
- Bake at 350 F for 40 minutes or cook in crock pot until heated through.
- For vegetarian version just sauté onion and add to bean mixture. If using dry tofu crumbles it isn't necessary to rehydrate them first, I just stir them into the mixture. It may require addition of water to the mixture if it gets too thick, I just play it by ear. When using frozen crumbles or gimme lean ground "beef" I heat it up in the pan with the onion before adding to the bean mixture.

CALICO BEAN POT
My favorite bean casserole!!! I've taken this to many potlucks & picnics, & there's never a bean left. Everyone asks for this recipe. This is from 'The Best of the Best' cookbook. I always double this recipe & use a large crock pot; I cook for the same length of time listed below.

Steps:
- In a large kettle fry and dice bacon; set aside.
- Brown ground beef and onion.
- Add remaining ingredients and bacon.
- Bake uncovered for 1-1/2 to 2 hours at 300°.
- Enjoy with a slice of fresh buttered bread!
- Note: I like mine with a little sauce so if you want it thicker drain the second can of kidney beans.
- You can also make this in a crockpot, but personally I like it best when done in the oven.
