Broccoli soup without cream! Great with breaded pork chops or if you just want a meatless meal. Its very filling. It seems like a lot but I never have any left overs! It usually needs a generous amount of salt. Healthy comfort food.

Number Of Ingredients 6

1/2 cup olive oil
10 ounces elbow macaroni
8 garlic cloves, sliced
1 wedge kraft romano cheese, diced
1 tablespoon salt
12 ounces frozen bag broccoli florets

Steps:

  • Pour olive oil in a large pot on low heat add garlic. Saute until oil is flavored.
  • do not brown the garlic(just a few minutes).
  • Add frozen broccoli saute until thawed, about 3-5 minute.
  • pour in enough water to boil the pasta about 3-4 quarts.
  • add salt, follow directions on pasta.
  • While waiting for the water to boil, dice the cheese.
  • Once the pasta is done, remove pot from heat. Let it sit for 20 minutes uncovered to cool a little, then add the cheese one handful at a time stir briefly.
  • Serve in 15 minutes.
  • Salt to taste.

Mom's broccoli cheese soup is my favorite! My mother has been making this soup for years. It is the only way I can get my son to eat broccoli!

3 (14.5 ounce) cans chicken broth
1 head broccoli, chopped
1 head broccoli, finely chopped
½ cup shredded carrots
6 tablespoons salted butter, cubed
1 medium onion, thinly sliced
6 tablespoons all-purpose flour, or as needed
2 cups milk
½ (8 ounce) package processed cheese food (such as Velveeta®), cubed

Steps:

  • Bring chicken broth to a simmer in a large pot. Add both heads of broccoli and carrots to the simmering stock; simmer for 5 minutes.
  • Meanwhile, melt butter in a large skillet over medium heat. Add onion and saute until softened, about 5 minutes. Stir in flour, 1 tablespoon at a time. Cook and stir until a golden roux forms, about 2 minutes. Slowly add milk, 1/2 cup at a time, stirring continuously. Bring to a boil and cook until a thickened gravy forms, about 2 minutes.
  • Slowly pour onion gravy into the broccoli mixture, stirring continuously. Bring to a simmer. Stir in processed cheese food. Simmer, stirring often, until cheese melts, about 5 minutes. Do not let the soup come to a boil or the cheese could separate.

3 Tbsp. corn oil
2 carrots, chopped
2 stalks celery, chopped
1 small leek, white and light green parts coarsely chopped
2 cloves garlic, minced
3 cups water
1/2 tsp. black pepper
4-1/2 cups small fresh broccoli florets
1/2 cup long-grain white rice, uncooked
1-3/4 cups milk
1/2 cup sour cream
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oil in large saucepan on medium-high heat. Add carrots, celery, leeks and garlic; cook and stir 5 min. Stir in water and pepper; bring to boil.
  • Add broccoli and rice; stir. Simmer on medium-low heat 15 to 20 min. or until vegetables and rice are tender, stirring frequently.
  • Blend soup, in batches, in blender or food processor until smooth; return to saucepan. Add remaining ingredients; cook 3 to 5 min. or until heated through, stirring occasionally.

2 tablespoons unsalted butter or olive oil
1 medium onion, sliced
1 clove garlic, smashed
1 russet potato, peeled and diced
Pinch dried thyme leaves
1/2 teaspoon kosher salt, plus more as needed
4 cups chicken broth, homemade or low-sodium canned
1 (16-ounce) package frozen broccoli, thawed
2 to 4 tablespoons cream or half-and-half, optional
Freshly ground black pepper

Steps:

  • Melt the butter in a medium saucepan, over medium heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the potato, thyme, salt, and broth and bring to a boil. Adjust the heat to maintain a gentle simmer, and cook uncovered until the potato is fork tender, about 10 minutes. Add the broccoli and simmer for 3 minutes.
  • Puree the soup in batches in a blender or with an immersion blender. Return soup to the pot and add the cream. Bring to a simmer, taste, and season with salt and pepper.
  • Serve with optional toppings.

1 onion, chopped
1/2 cup butter or 1/2 cup margarine
3 (14 1/2 ounce) cans chicken broth
3 cups water
1/4 teaspoon garlic powder
32 ounces frozen broccoli
24 ounces frozen egg noodles
16 ounces Velveeta cheese
3 cups half-and-half

Steps:

  • In a 6 quart saucepan, saute onion in butter.
  • Add chicken broth, water, broccoli, garlic pwdr.
  • ,and noodles and bring to a boil.
  • Boil until noodles and broccoli are tender.
  • Reduce heat and add velveeta, half and half, and salt and pepper to taste.
  • Simmer until cheese is melted.
  • Can be put in a crockpot on low at this stage.
