MOMS BROCCOLI SOUP
Broccoli soup without cream! Great with breaded pork chops or if you just want a meatless meal. Its very filling. It seems like a lot but I never have any left overs! It usually needs a generous amount of salt. Healthy comfort food.

Steps:
- Pour olive oil in a large pot on low heat add garlic. Saute until oil is flavored.
- do not brown the garlic(just a few minutes).
- Add frozen broccoli saute until thawed, about 3-5 minute.
- pour in enough water to boil the pasta about 3-4 quarts.
- add salt, follow directions on pasta.
- While waiting for the water to boil, dice the cheese.
- Once the pasta is done, remove pot from heat. Let it sit for 20 minutes uncovered to cool a little, then add the cheese one handful at a time stir briefly.
- Serve in 15 minutes.
- Salt to taste.

MOM'S BROCCOLI CHEESE SOUP
Mom's broccoli cheese soup is my favorite! My mother has been making this soup for years. It is the only way I can get my son to eat broccoli!

Steps:
- Bring chicken broth to a simmer in a large pot. Add both heads of broccoli and carrots to the simmering stock; simmer for 5 minutes.
- Meanwhile, melt butter in a large skillet over medium heat. Add onion and saute until softened, about 5 minutes. Stir in flour, 1 tablespoon at a time. Cook and stir until a golden roux forms, about 2 minutes. Slowly add milk, 1/2 cup at a time, stirring continuously. Bring to a boil and cook until a thickened gravy forms, about 2 minutes.
- Slowly pour onion gravy into the broccoli mixture, stirring continuously. Bring to a simmer. Stir in processed cheese food. Simmer, stirring often, until cheese melts, about 5 minutes. Do not let the soup come to a boil or the cheese could separate.

Steps:
- Heat oil in large saucepan on medium-high heat. Add carrots, celery, leeks and garlic; cook and stir 5 min. Stir in water and pepper; bring to boil.
- Add broccoli and rice; stir. Simmer on medium-low heat 15 to 20 min. or until vegetables and rice are tender, stirring frequently.
- Blend soup, in batches, in blender or food processor until smooth; return to saucepan. Add remaining ingredients; cook 3 to 5 min. or until heated through, stirring occasionally.

- Melt the butter in a medium saucepan, over medium heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the potato, thyme, salt, and broth and bring to a boil. Adjust the heat to maintain a gentle simmer, and cook uncovered until the potato is fork tender, about 10 minutes. Add the broccoli and simmer for 3 minutes.
- Puree the soup in batches in a blender or with an immersion blender. Return soup to the pot and add the cream. Bring to a simmer, taste, and season with salt and pepper.
- Serve with optional toppings.

My mom makes this every Christmas Eve. It's easy and delicious, and very warming for a cool winter night. More noodles and/or broccoli can be added to match preferences.

- In a 6 quart saucepan, saute onion in butter.
- Add chicken broth, water, broccoli, garlic pwdr.
- ,and noodles and bring to a boil.
- Boil until noodles and broccoli are tender.
- Reduce heat and add velveeta, half and half, and salt and pepper to taste.
- Simmer until cheese is melted.
- Can be put in a crockpot on low at this stage.
