CLASSIC BELGIAN WAFFLES

2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted
2 cups milk
non-stick cooking spray

Steps:

  • Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.

1 tablespoons butter
1 pint blueberries
1/4 cup granulated sugar
1/2 lemon, juiced
1 cup heavy cream, chilled
2 tablespoons granulated sugar
1 teaspoon natural vanilla extract

Steps:

  • In a large mixing bowl, prepare your favorite waffle mix according to package directions.
  • Preheat waffle iron according to manufacturer's guidelines. Lightly spray the waffle iron with nonstick spray. Using a 4-ounce ladle or 1/2 cup measure, ladle batter for waffle into the iron, spreading evenly. Close the waffle iron and cook for 2 minutes or until waffles are golden and the steaming stops. Repeat with remaining batter. Serve with Whipped Cream and Blueberry Syrup.
  • In a small saucepan over medium heat, combine butter, blueberries, sugar and lemon. Stir gently until the berries break down and release their natural juice. The consistency should remain a bit chunky. Serve hot over waffles.
  • Using a hand-held electric beater on high speed, beat the cream in a chilled stainless steel bowl until it begins to thicken.
  • Add sugar and vanilla. Continue to beat until the cream forms stiff peaks. Refrigerate until ready to use.

We love to top ours with strawberries or blueberries, powdered sugar and whipped cream, blueberry syrup & real maple syrup!... And You didn't think weekends could get anymore special!

2 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 1/4 cups milk
6 tablespoons vegetable oil
2 large eggs
10 tablespoons blueberries (fresh or frozen, if frozen, no need to thaw) (optional) or 5 tablespoons mini chocolate chips (optional)
fruit syrup or warm fruit, compote
fruit sauce, fresh berries or chopped fruit
powdered sugar or whipped cream
chocolate syrup or fruited yogurt

Steps:

  • Place all ingredients in a large mixing bowl and combine until well blended.
  • Allow batter to rest 5 minutes before using.
  • Use in your Belgian Waffle Maker according to manufacturer's suggestion.

1/4 cup plus 2 3/4 cups warm milk, divided
3 eggs, divided
3/4 cup butter, melted
1/2 cup granulated sugar
3/4 teaspoon salt
1 1/2 teaspoons vanilla extract
4 cups all-purpose flour

Steps:

  • In a small bowl, dissolve the yeast in 1/4 cup warm milk. Beat the egg whites just until stiff peaks form. In a large bowl, mix together the egg yolks, 1/4 cup of the remaining milk, the melted butter and the sugar. Add the yeast mixture, salt, vanilla, and then alternate between the flour and remaining milk. Gently fold the egg whites into the waffle batter. Cover the batter without touching it, and then set it in a warm place to rise until it doubles in volume, about 1 hour. Cook in a waffle iron according to manufacturer's instructions.

A friend of mine shared this recipe with me, and I have made waffles this way ever since. They are so light, slightly sweet, and just perfect served with fresh fruit and a little whipped cream, or syrup. A wonderful way to start the day. Hope you enjoy them too.

  • In another bowl, lightly beat the egg yolks. To this add, milk, butter, and vanilla; mix well.
