We love this recipe around my house because we can change it from one day to the next on a whim. Just throw whatever fruit is in season into the mix, and you've got a tailor-made treat! -Christine Saxe, Ada, Michigan

Yield 2 loaves (12 slices each).

Number Of Ingredients 33

1-1/2 cups sugar
1 cup canola oil
3 eggs
2 cups A to Z ingredients (choose from list below)
3 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts
A TO Z INGREDIENTS:
Apples, peeled and shredded
Applesauce
Apricots (dried), chopped
Banana (ripe), mashed
Carrot, shredded
Sweetened shredded coconut
Dates, pitted and chopped
Figs (dried), chopped
Grapes (seedless), chopped
Oranges, peeled and chopped
Peaches, peeled and chopped
Pears, peeled and chopped
Pineapple (canned), crushed and drained
Dried plums (prunes), pitted and chopped
Pumpkin, canned
Raisins
Raspberries, fresh or frozen
Rhubarb, chopped fresh or frozen
Strawberries, fresh or frozen
Sweet potatoes, cooked and mashed
Zucchini, peeled and shredded

Steps:

  • Combine the sugar, oil and eggs in a large bowl. Stir in A to Z ingredients of your choice and vanilla. Combine flour, baking powder, cinnamon, baking soda and salt; stir into liquid ingredients just until moistened. Stir in walnuts. Pour into two greased 8x4-in. loaf pans., Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1/2 cup unsweetened applesauce
3 eggs
2 cups A to Z ingredients (choose from list below)
1 tablespoon vanilla extract
2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts or pecans
A TO Z INGREDIENTS:
Peaches, peeled and chopped
Pears, peeled and chopped
Pineapple (canned), crushed and drained
Dried plums (prunes), pitted and chopped
Pumpkin, canned
Raspberries, fresh or frozen
Raisins
Rhubarb, chopped fresh or frozen
Strawberries, chopped fresh or frozen
Sweet potatoes, cooked and mashed
Zucchini, shredded

Steps:

Mom used to make this rice and I have no idea of the origin of the recipe. It is very similar to the Mushroom Rice Casserole except this has green peppers and no mushrooms.

1 teaspoon olive oil
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
10 1/2 ounces cream of mushroom soup
10 1/2 ounces beef consomme
1 cup long-grain rice

Steps:

  • Preheat oven to 350.
  • In a large skillet or pan, saute onion and green pepper in oil.
  • Add mushroom soup and heat.
  • Stir in rice and beef consomme.
  • Pour into a greased casserole dish.
  • Bake uncovered 1 hour stirring a couple of times.

Mom's Banana Bread image

I am always buying more bananas than I can eat. My mom's recipe is my favorite way to use them. You can substitute one tsp of vinegar for the lemon juice.

Number Of Ingredients 8

1/4 cup milk
1 teaspoon lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
3 ripe bananas
1 teaspoon baking soda
2 cups flour

Steps:

  • Mix the milk and lemon juice. Set aside.
  • Preheat oven at 325 degrees.
  • Cream together the shortening and sugar.
  • Add the eggs and mix well.
  • Mash the bananas. I find a potato masher works well. Add them to the mixture.
  • Mix the baking soda into the milk, then add alternately to the banana mixture with the 2 cups of flour.
  • Pour into a greased loaf pan and bake for about 1 hour.
