SOUTHERN SPOONBREAD

Provided by James Briscione

Categories     side-dish

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 9

6 tablespoons unsalted butter
3 cups milk
3 cups water
2 teaspoons kosher salt
2 cups stone-ground yellow cornmeal
1 cup grated Parmesan
A few dashes hot sauce
4 large eggs
1/4 cup chopped chives, plus more for garnish

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with 2 tablespoons of the butter.
  • Combine the milk, water, salt and the remaining 4 tablespoons butter in a medium saucepot; bring to a boil. Add the cornmeal in a steady stream while whisking rapidly. Continue stirring until the mixture returns to a simmer. Reduce the heat and simmer, stirring occasionally, until the mixture is very thick, 6 to 10 minutes. Remove the pot from the heat, stir in the cheese and add hot sauce to taste.
  • Crack the eggs into a small bowl and beat with a whisk. Add 1 cup of the hot cornmeal mixture to the eggs and whisk together to warm the eggs and prevent them from curdling when added to the pot. Continue adding spoonfuls of the hot cornmeal mixture to the bowl of eggs until it's warm to the touch; then whisk the egg mixture back into the pot. Stir in the chopped chives.
  • Transfer the cornmeal mixture to the prepared baking dish. Place in the oven for 30 to 40 minutes; or until puffed and lightly browned. Cool slightly before garnishing with chives and serving. This may also be baked in advance and reheated before serving.

Time 1h40m

Yield 4 servings

Number Of Ingredients 16

4 tablespoons unsalted butter
1 cup plus 1 tablespoon stone-ground cornmeal
2 1/2 cups half-and-half
3/4 teaspoon kosher salt
3 large eggs, separated
1 1/2 teaspoons baking powder
1 tablespoon thinly sliced chives
Pinch cayenne pepper
Tomato Salad with Herbs, recipe follows
1 tablespoon sherry wine vinegar
1/2 teaspoon kosher salt, plus more as needed
Freshly ground black pepper, to taste
3 tablespoons extra-virgin olive oil
1 1/2 pounds assorted vine-ripened heirloom tomatoes, cored and cut into 1/2-inch wedges
1/4 cup mixed minced fresh herbs, like parsley, basil, chives, tarragon, dill or mint
2 scallions (white and green), thinly sliced

Steps:

  • Position a rack in the lower third of the oven and preheat to 375 degrees F. Lightly butter a 1 1/2 quart souffle dish or casserole with 1 tablespoon of the butter and dust with 1 tablespoon of the cornmeal.
  • In a medium saucepan, scald the half-and-half and remaining butter over medium-high heat. While whisking constantly, gradually pour in the cornmeal and salt. Lower the heat and simmer, while whisking, until thickened, about 3 minutes. Scrape the cornmeal mixture into a bowl and whisk in the egg yolks, one by one. Whisk in the baking powder, chives, and cayenne.
  • In a clean non-reactive bowl, whip the egg whites to soft peaks. Lightly mix a quarter of the whites into the cornmeal mixture to lighten it, and then fold in the rest with a rubber spatula. Pour the batter into the prepared dish and bake until puffed and golden brown, 45 to 50 minutes. Serve immediately as a side dish or as a main course with tomato salad.
  • In a large serving bowl, whisk together the vinegar, salt, pepper, and olive oil. Add the tomatoes, herbs, and scallions and toss to combine. Season with salt and pepper, if needed. Set aside for 5 minutes to allow the flavors to come together. Serve.

CHEDDAR-CORN SPOON BREAD

Cheddar-Corn Spoon Bread image

Spoon bread, a classic Southern side dish, is actually more like a pudding than a bread. It's so soft, it can be served -- and eaten -- with a spoon.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 50m

Number Of Ingredients 8

1 tablespoon butter, plus more for baking dish
2 cups milk
1 1/2 cups corn kernels
2/3 cup yellow cornmeal
Coarse salt
Pinch of cayenne pepper
1 cup sharp white cheddar cheese
4 large eggs, separated

Steps:

  • Preheat oven to 400 degrees. Butter a 2-quart souffle dish or casserole; set aside. In a medium saucepan, combine butter, milk, corn, cornmeal, 1 teaspoon salt, and cayenne. Bring to a boil; reduce heat to medium, and simmer, stirring frequently, until mixture is slightly thickened, 3 to 4 minutes. Remove from heat; stir in cheese. Let cool until just warm to the touch, about 15 minutes. Stir in egg yolks until combined.
  • In a clean mixing bowl, beat egg whites and a pinch of salt until soft peaks form. Stir 1/3 of the whites into cornmeal mixture until combined, then gently fold in the remaining whites with a rubber spatula. Pour into prepared dish.
  • Place dish in oven; reduce oven heat to 375 degrees. Bake until browned on top but still slightly loose in the center, 25 to 30 minutes. Let cool 5 minutes before serving.

SPOONBREAD, MOM'S

Spoonbread, Mom's image

This was a recipe from a southern breakfast party Mom had...with pound cake, scrambled eggs, beaten biscuits and probably something more than just coffee to drink. I'm sure there was fruit as well as bacon or sausage too! Nope, I was wrong...Fried Chicken Livers were the 'meat' she chose. I would vote bacon or sausage myself!

Provided by Megan Stewart

Categories     Savory Breads

Number Of Ingredients 7

2 c cornmeal
3 c milk
1 tsp salt
1 tsp baking powder
3 Tbsp butter
4 medium eggs
dash(es) sugar

Steps:

  • 1. Stir milk into cornmeal in a saucepan. Place over moderate heat and stir until thick as mush. Remove from heat and add salt, baking powder and butter. Beat egg yolks in a separate bowl and stir into cornmeal mixture. Beat egg whites in another bowl until they peak and add sugar. Fold into the mixture. Turn out into greased casserole and bake about an hour until browned.
  • 2. Note: Mom didn't put temperature, so perhaps 350? But check before an hour in case that cooks faster!

  • Preheat the oven to 400 if baking this right away (see notes for do-ahead). Butter a 2 quart baking dish and set aside.
  • Put 2 cups milk in a medium saucepan and bring to a low simmer. Slowly add the cornmeal, whisking constantly to avoid lumps. Cook for 3-4 minutes until thickened. Remove from the heat and stir in the butter 1 tablespoon at a time. Set aside to cool completely. Note - it will cool faster if you transfer it out of the hot pot and into a large bowl (but then you have another bowl to clean, so your call).
  • In a stand mixer, or using hand held electric beaters, beat the eggs for 4-5 minutes until thick and pale.
  • In a small bowl, mix the remaining milk, baking powder, a generous amount of cracked black pepper, and salt. Stir in the honey, then pour into the eggs and mix until combined.
