Provided by Bobby Flay

Categories     condiment

Time 5m

Yield about 1 1/2 cups

Number Of Ingredients 21

3/4 cup ancho chile powder
1/4 cup New Mexican chile powder
3 tablespoons kosher salt
2 tablespoons plus 2 teaspoons best-quality unsweetened cocoa powder
2 tablespoons plus 2 teaspoons light brown sugar
1 tablespoon plus 1 teaspoon ground cinnamon
2 teaspoons chile de arbol
1 teaspoon allspice
1 teaspoon ground cloves
1 teaspoon coarsely ground black pepper
Mole-Rubbed Braised Chicken Thigh Tacos, recipe follows, optional
8 bone-in skinless chicken thighs
Kosher salt and freshly ground black pepper
Mole Spice Rub, recipe above
3 tablespoons canola oil
1 Spanish onion, chopped
2 cloves garlic, chopped
2 cups homemade chicken stock or low-sodium chicken broth
8 sprigs cilantro
6-inch flour tortillas or white corn tortillas, for serving
Guacamole, pickled red onions and/or shredded red cabbage, for serving

Steps:

  • Whisk together the chile powders, salt, cocoa, sugar, cinnamon, chile de arbol, allspice, cloves and black pepper in a small bowl. Store in an airtight container or small jars with tight-fitting lids for up to 6 months or use in the Mole-Rubbed Braised Chicken Thigh Tacos.
  • Season the chicken with salt and pepper. Rub both sides of each thigh with some of the mole spice rub.
  • Heat the oil in a Dutch oven large enough to fit the chicken thighs in a single layer. Add the chicken and cook until golden brown on both sides, about 4 minutes per side. Remove the chicken to a plate. Remove all but 2 tablespoons of the fat from the pan.
  • Add the onion and garlic and cook, stirring, for 4 minutes. Add the broth and cilantro; bring to a simmer. Return the chicken to the pot, reduce the heat to low, cover and cook until the chicken is tender, about 40 minutes. Remove the chicken to a plate and let cool slightly then shred with a fork; discard the bones.
  • Meanwhile, continue to cook the braising liquid uncovered until reduced by half and thickened, about 15 minutes. Return the shredded chicken to the pot.
  • While the braising liquid is reducing, preheat the oven to 300 degrees F. Wrap the tortillas in aluminum foil and warm in the oven.
  • Heat a small cast-iron pan over medium heat until heated. Remove a warm tortilla from the foil and cook in the dry pan until slightly charred on both sides. Fill with the chicken, top with guacamole, pickled onions and/or shredded cabbage.

1 tablespoon cocoa powder
1 tablespoon ancho chilli powder
1 tablespoon ground cumin seed
1 tablespoon sea salt
1 tablespoon fresh ground pepper

Steps:

  • Mix all of the spices together in a mixing bowl andstir very well to combine.
  • If you are adding the spice rub to meat, then do sojust before cooking. Apply liberally andthen cook using the desired method.

MOLE (MO-LAY) SAUCE

Mole (Mo-lay) Sauce image

This is my version of mole sauce. It can hold its own against the mole at our great local Mexican restaurant. I usually double this recipe, but that's just me. The original recipe calls for 5 TBSP(yes, 5)of chili powder. I cut it in half, but you can take it from there. And don't judge the taste until you add the chocolate. It's just not done until you finish this step! Serve it over good chicken, over enchiladas,or burritos. I think it is good with lots of things. I served it the other night over leftovers from canarygirl's Chicken Verde, and it was superb!(Her recipe stands on its own as a great dish, I just enhanced my leftovers! Thanks, canarygirl!)

1 small Spanish onion, coarsely chopped
1 cup pureed plum tomatoes
Scant 1/2 cup pureed chipotle in adobo
2 tablespoons ancho chile powder
2 tablespoons white sesame seeds
1 tablespoon New Mexico chile powder
1 teaspoon ground cinnamon
1/2 teaspoon ground chile de arbol
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 cup chopped fresh mango
1/4 cup golden raisins
1/4 cup crushed blue corn tortilla chips
3 tablespoons molasses
1 tablespoon honey
1 tablespoon pure maple syrup
1 1/2 cups chicken stock, warmed
1 ounce semisweet or bittersweet chocolate, finely chopped
Kosher salt and freshly ground black pepper
1 1/2 cups long-grain white rice
Kosher salt and freshly ground black pepper
1/4 cup finely chopped fresh cilantro
3 green onions, thinly sliced
2 roasted poblano chiles, finely diced
1 1/2 pounds pork tenderloin
3 tablespoons ancho chile powder
2 tablespoons light brown sugar
1 tablespoon pasilla chile powder
2 teaspoons ground cinnamon
2 teaspoons ground allspice
1 teaspoon chile de arbol
Kosher salt
2 tablespoons canola oil
Crumbled goat cheese, for topping
Lime wedges, for serving
Fresh cilantro leaves, for garnish

Steps:

  • For the mole sauce: Put the almonds in a medium saucepan over medium heat and cook, stirring occasionally, until light golden brown, about 5 minutes. Remove the almonds to a plate.
  • Increase the heat to high, add the oil to the saucepan and heat until it begins to shimmer. Add the garlic and onions and cook until soft, about 4 minutes. Stir in the tomatoes, chipotle puree, ancho chile powder, sesame seeds, New Mexico chile powder, cinnamon, chile de arbol, allspice and cloves. Bring to a boil and cook for 10 minutes.
  • Add the mango, raisins, tortilla chips, molasses, honey, maple syrup and reserved almonds. Pour in the warmed chicken stock and cook, stirring occasionally, until the mangoes are soft and the mixture is reduced by half, about 50 minutes.
  • Carefully transfer the mixture to a blender, let cool for 5 minutes and then blend until smooth. Return the mixture to the pan over high heat. Add the chocolate and cook until reduced to a sauce consistency, about 10 minutes. Season with salt and pepper.
  • For the green rice: Add the rice and 3 cups water to a saucepan and season with salt. Bring to a boil, stir, place a lid on the pan, reduce the heat to medium and cook until all of the liquid is absorbed, 15 to 18 minutes.
  • Remove the rice from the heat and let sit for 5 minutes with the lid on. Remove the lid and fluff with a fork. Stir in the cilantro, green onions, poblanos and some salt and pepper.
  • For the spice rub and pork: Remove the pork from the refrigerator 20 minutes before cooking.
  • Preheat the oven to 450 degrees F.
  • Combine the ancho chile powder, brown sugar. pasilla chile powder, cinnamon, allspice, chile de arbol and 1 tablespoon salt in a small bowl.
  • Season the pork with salt on both sides. Dredge the pork in the spice rub and tap off any excess. Heat the oil in a medium saute pan over high heat until it begins to shimmer. Cook, turning every few minutes to sear on all sides, until the pork is golden brown, about 10 minutes. Transfer to the oven and cook to medium doneness (or until an instant-read thermometer inserted into the center registers 145 degrees F), 8 to 10 minutes. Remove the tenderloin to a cutting board and let rest 10 minutes before slicing into 1-inch-thick slices.
  • Ladle some of the mole sauce onto each plate and put 3 slices of pork on top. Put a scoop of rice on the side. Add more sauce on top, some crumbled goat cheese, a squeeze of lime and chopped cilantro.

A SIMPLE MOLE ROJO RECIPE

A Simple Mole Rojo Recipe image

Complex recipes for mole, a class of Mexican sauces with origins in pre-Hispanic times, abound. This simplified version makes it easy to enjoy at home.

Provided by Chelsie Kenyon

Categories     Sauces     Sauce

Time 3h7m

Number Of Ingredients 17

1/4 cup pork lard
1 onion (peeled and sliced)
8 cloves garlic
3 tomatoes (roasted and peeled)
1/4 cup peanuts (unsalted, or sub unsweetened peanut butter)
1 tablespoon Mexican oregano (dried and crushed)
1 stick cinnamon (broken into small pieces)
1/4 teaspoon anise seeds
3 peppercorns (whole)
1/4 teaspoon thyme
1 clove (whole)
1 teaspoon cocoa powder
12 guajillo chiles (soaked in hot water, skinned, stemmed, and seeded)
1/4 cup raisins (soaked in water to soften)
4 cups chicken broth (divided)
1/4 cup prepared masa (raw corn tortilla dough )
Garnish: toasted sesame seeds

Steps:

  • Gather the ingredients.
  • Heat the lard in a large skillet over medium-low to medium heat.
  • Add the onion and garlic and cook until the onions become translucent, about 8 to 10 minutes. When the onion softens enough to drape over your spatula, set the skillet aside. Reserve.
  • In a high-speed blender, puree the roasted tomatoes with the peanuts or peanut butter.
  • Add the Mexican oregano, cinnamon, anise seeds, peppercorns, thyme, clove, and cocoa powder and blend at high speed to make a smooth paste.
  • Add the reserved sautéed onions to the blender and puree again until the mixture becomes very smooth.
  • Add the raisins and soaked chiles and blend into a smooth paste.
  • Pour 4 cups of chicken broth in a medium pot, and reserve 1/4 for later use.
  • Whisk the masa with the reserved 1/4 cup of chicken broth to create a roux.
  • Stir the roux into the pot and whisk until smooth.
  • Add the pureed ingredients to the pan. Cover and simmer for 1 hour until the mole turns thick and aromatic.
  • Uncover, taste, and add salt, if needed.
  • Use your homemade mole as a sauce over your preferred dishes. Enjoy!
