- In a large bowl, beat butter and sugar until crumbly. Beat in egg. Stir in chocolate. Combine the flour, salt, cream of tartar and baking soda; gradually add to creamed mixture alternately with milk, beating well just until combined. , Pour into a well-greased 7-cup pudding mold; cover. Place mold on a rack in a stockpot; add 1 in. of hot water to pan. Bring to a gentle boil; cover and steam for 2 to 2-1/4 hours or until top springs back when lightly touched, adding water as needed. , Remove mold to a wire rack; cool for 15 minutes. Meanwhile, in a small saucepan, combine the sugar, cornstarch and salt. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the butter, vanilla and nutmeg. , Unmold pudding onto a serving plate; cut into wedges. Serve warm with sauce.

MOLTEN CHOCOLATE PUDDINGS
Steps:
- Preheat the oven to 425 degrees F.
- Butter 2 (8-ounce) ovenproof ramekins, and then dust them with cocoa powder, shaking off any excess.
- Melt the chocolate and butter together in a bowl over a pan of gently simmering water. While the chocolate is melting, use an electric whisk or a hand held mixer to beat together the eggs and sugar until pale and thick. Pour the melted chocolate into the egg mixture and gently fold in the flour. Spoon the pudding into the ramekins and bake for 10 minutes.
- Serve the puddings in either the ramekins or turned out onto serving plates. Dust the puddings with cocoa powder and garnish with a dollop of creme fraiche.
DAD'S HOMEMADE CHOCOLATE PUDDING
One of my all-time favorite childhood memories is Dad making pudding and enjoying it while it is still warm.

Steps:
- Place milk in medium sauce pan and begin to heat.
- Mix together dry ingrediants; gradually whisk into milk and bring to a gentle boil.
- Stir butter and vanilla; simmer and stir constantly for 20-30 minutes. There may be some small lumps, but they are tasty lumps!
- Pour immediately into individual serving bowls and enjoy while still warm.
- Pour left overs into an ice cube tray or popsicle molds for a frozen treat later on.

CHOCOLATE MALTED PUDDING
This is the first recipe I've tried out of my new cookbook, A New Way To Cook. It turned out great. I loved chocolate malt balls and the malted flavor in general. The malted milk powder also helps to keep the creamy texture even though you are using 1% lowfat milk.

Steps:
- In a small bowl, blend 1/2 cup of milk with the cornstarch.
- Combine the malted milk powder, cocoa and salt in a small heavy saucepan and slowly whisk in the remaining 3-1/2 cups of milk, the chocolate and the sugar. Heat over moderate heat, stirring occasionally, until the chocolate is melted. Whisk in the cornstarch mixture.
- Cook, stirring frequently, over very low heat until very thick and just beginning to boil, about 10 minutes. Remove from heat and stir in the vanilla.
- Let cool, stirring occasionally until the custard is just warm.
- Pour the pudding into small 1/2 c bowls.
- Cover with plastic wrap and refrigerate until set.
- You can make this up to 3 days in advance.

Steps:
- Heat chocolate, sugar and milk in the top of a double boiler over water until chocolate is melted.
- Soften gelatin in water; add to chocolate mixture.
- Pour the mixture into a moist (or lightly sprayed with cooking spray) mold and chill until firm.
- Whip egg whites until stiff and fold in marshmallow cream.
- Turn out onto a chilled serving plate and garnish with mounds of egg whites.
- Place a cherry in the center of each mound.

- 1. Heat oven to 170C. Use extra butter to grease four 150-millilitre heatproof souffle moulds or ramekins, and place on a baking tray. Melt remaining butter and 150 grams of chocolate in a heatproof bowl set over a pot of gently simmering water. Remove from heat and whisk until smooth.
- 2. Using an electric beater, beat eggs, yolks, sugar and vanilla for two minutes until pale and creamy. Fold in chocolate mixture, then sift flour over the top and fold through.
- 3. Bake for 13-14 minutes until puffed and set on top but still soft in the centre. Invert each mould on to a warm dessert plate, drizzle with cream and scatter with remaining chocolate.
- Tip New York chef Jean-Georges Vongerichten says the best way to serve them is to invert each mould on to a plate, and let sit for about 10 seconds. "Then unmould by lifting up one corner of the mould," he says.
