AVOCADO-GRAPEFRUIT SALADS
These salads make a refreshing starter. To remove the pitof an avocado without damaging the flesh, halve the avocadolengthwise, then gently tap the sharp edge of a large knifeinto the pit. Twist the knife, holding on to the avocado firmly,and the pit should come out easily.

Steps:
- Brush 2 teaspoons lemon juice over flesh of avocados; set aside.
- Remove peel and pith from grapefruit using a sharp paring knife. Working over a medium bowl to catch the juice, carefully carve out segments from between membranes. Transfer grapefruit segments to a small bowl; set aside. Reserve juice in bowl.
- Add 1/4 cup lemon juice, the salt, and tarragon to the grapefruit juice; season with pepper. Whisk in oil in a slow, steady stream. Add grapefruit sections; toss gently just to coat.
- Place each avocado half on a plate. Top with grapefruit mixture, dividing evenly. Garnish with tarragon. Serve with lime wedges.

I got this from my MIL who got it in a pamphlet with some exotic pink grapefruit from Florida. That was 30 years ago and pink (much less Ruby Red) grapefruit were still a rarity in the stores.

This is a very good and simple Salad with the Grapefruit and Avocado. The almonds add a salty touch. The reripe comes from Sunset Magazine. My Daughter-in-laws mother use to make a salad very similar to this.

Steps:
- With a sharp knife, cut peel and outer membrane from grapefruit.
- Working over a strainer set over a bowl, cut between inner membranes and fruit to relase segments into strainer.
- Squeeze juice from membranes into bowl,Discard peel and membranes.
- In a large bowl, combine oil, lime juice and grapefruit juice.
- Add salad greens and mix gently to coat.
- Place in salad bowl or put on plates.
- Top with grapefruit segments, avocado, almonds and green onion.
- Add salt and pepper to taste.

- 1. Pour boiling water over gelatin in large bowl. Stir until dissolved. Add lemon juice, horseradish and grated onion. Refrigerate until gelatin begins to set. 2. With electric beater, beat until light and fluffy. Put a thin layer of gelatin in a 6 1/2 -cup mold. Layer in fruits and cover with remaining gelatin. Refrigerate until completely set. Unmold and garnish with salad greens. Serve drizzled with mayonnaise thinned with heavy cream.

MOLDED AVOCADO CREAM SALAD

- In a saucepan, soften the gelatin in the water. Stir over low heat till the gelatin is dissolved. Remove from heat source.
- Add yogurt, mashed avocado, tomato, onion, garlic, oil, lemon (or lime) juice, chili powder & salt.
- Mix thoroughly, taste & adjust seasoning as desired.
- Turn mixture into a well-chilled 4 cup ring mold. Cover w/aluminum foil & chill for at least 4 hrs or till well-set.
- To Unmold: Have ready a round, well-chilled platter large enough to allow for the salad assembly as described below. Run the pointed tip of a knife around the edges of the mold to release it. Dip the mold up to the rim into a basin of hot water for just a few seconds. Place the platter upside down over the mold. Hold the platter & mold together & invert. Shake gently to release the molded avocado cream. Repeat process if needed & refrigerate immediately.
- To Assemble Salad: Fill the center of the ring mold w/shrimp. Surround the outside of the ring w/salad greens & top the greens w/halved cherry tomatoes, olives, lime (or lemon) slices & any remaining shrimp.

- In a mixing bowl, combine grapefruit sections and 3/4 cup of the sugar. Set aside. In a small mixing bowl, combine gelatin and 1/2 cup of the cold water. Let stand 5 minutes.
- Meanwhile, in a medium saucepan, combine the remaining sugar and remaining cold water. Heat and stir until sugar dissolves. Add gelatin mixture; grapefruit mixture; nuts; and, if desired, food coloring. Cook and stir until sugar is completely dissolved. Pour grapefruit mixture into a 2-quart mold or square baking dish. Cover; chill at least 6 hours. If using mold, unmold salad. Serve with whipped cream, if desired. Garnish with grapefruit peel curls, if desired.

- Place the mustard, lemon juice, salt, and pepper in a small bowl.
- Slowly whisk in the olive oil.

- Before serving, cut the avocados in 1/2, remove the seeds, and carefully peel off the skin.
- Cut each half into 4 thick slices.
- Toss the avocado slices in the vinaigrette to prevent them from turning brown.
- Drain the jars of grapefruit, saving 1 cup of juice.
- Place butter lettuce on platter.
- Add avocado slices, grapefruit segments and slices of red onion.
- Spoon the vinaigrette on top, sprinkle with salt and pepper, and serve.
