Easy Raisin Sauce for Ham image

This recipe came from my mother. Has always been one of my favorites! VERY easy...and inexpensive too! This is wonderful added to the top of the ham the last 30 minutes of the cooking time, or you can simply serve it with the ham in a small bowl. I hope you enjoy it.

1 ½ cups water
¾ cup raisins
⅓ cup packed brown sugar
1 teaspoon cornstarch
1 pinch salt

Steps:

  • Bring water to a boil in a saucepan.
  • Stir raisins into water, reduce heat to medium, and boil until very tender, about 5 minutes.
  • Whisk brown sugar, cornstarch, and salt into raisin mixture and simmer until thickened, about 10 minutes.

2 tablespoons cornstarch
1 teaspoon dry mustard powder
1 ¼ cups water
2 tablespoons lemon juice
1 cup dark raisins

Steps:

  • Heat brown sugar, cornstarch, and dry mustard in a 1-quart saucepan over medium heat and stir until sugar dissolves, 3 to 5 minutes.
  • Gradually stir water and lemon juice into brown sugar mixture.
  • Stir raisins into mixture and bring to a boil, stirring constantly, about 5 minutes.

From my Aunt Alta's recipe collection. My first memory of my Aunt Alta is visiting at her house in Illinois when I was a young girl, when she served us a huge holiday ham dinner(even though we were visiting her in the summer). I had never had a ham before, since my mother never served pork dishes in our house. I loved it and now I make a holiday ham for Christmas each year. She decorated the ham with pineapple rings and maraschino cherries place into the center of each ring,using whole cloves to pin them into place. I am guessing on the size of the ham here - her instructions were only for a half ham or a whole ham. Since the ham is to be a precooked one, the cook time is really just to fully heat the ham and cook the glaze, so use the appropriate heating time that your ham wrapper indicates for the size ham you have purchased. If your wrapper suggests a different temperature as well, then use that temperature, adjusting it to fit the recipe temp only after adding the glaze. I recently inherited my Aunt's recipes, and this was buried in her recipe files, splattered and crinkled and torn at the edges. She originally got the recipe from the back of a molasses bottle. I serve this with a hot fruit sauce on the side as a "gravy."

1 (8 -12 lb) precooked ham, bone-in (whole or half)
20 whole cloves, as needed
1 teaspoon mustard powder
1/2 cup molasses (Brer Rabbit)
pineapple ring, as needed (optional)
maraschino cherry (optional)

Steps:

  • Preheat oven to 325°F.
  • Remove rind from ham and score the fat with a sharp kife, creating diamond shapes all over the surface.
  • Stud ham with cloves (and pineapple & cherries, if desired- attach with either toothpicks or cloves).
  • Place ham in roasting pan so that the wide flat cut side is down.
  • Bake 2 1/2-3 hours for a whole ham, 1 3/4-2 hours for a half ham (or use the heating instructions provided on your ham wrapper, changing the cook temp if necessary as well).
  • Mix dry mustard powder with the molasses and brush all over ham 30 minutes before the ham is done, returning ham to oven to contiune cooking at 325°F.
  • TIP: Do not baste ham with pan drippings as this will make the glaze look dull.
  • Once ham is cooked, let rest 10 minutes before carving.
  • Do not eat the cloves- they provide flavoring as they bake, but should be discarded after cooking.

This is rather sweet. Servings are just an estimate.

1 tablespoon granulated sugar
4 teaspoons all-purpose flour
1 cup water
1/2 cup seedless raisin (I like golden raisins)
3 tablespoons molasses (such as Brer Rabbit)
1 tablespoon lemon juice
1 pinch salt, to taste
1 tablespoon unsalted butter

Steps:

  • Mix sugar and flour together in a small saucepan (no heat yet).
  • Gradually whisk in the water until blended.
  • Turn on heat and bring to a boil, stirring constantly.
  • Add raisins, molasses, lemon juice, and salt to taste, stirring to blend.
  • Lower heat to a simmer and let simmer 5 minutes, or longer if you like it thicker.

3/4 cup shortening
1 cup packed brown sugar
1/4 cup molasses
2 eggs
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream shortening and brown sugar. Beat in molasses. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, ginger, cinnamon, salt and cloves; gradually add to creamed mixture. Stir in raisins and nuts., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 8-10 minutes or until edges are lightly browned. Remove to wire racks to cool.

HAM BRAISED WITH MAPLE RAISIN SAUCE

Yield Makes 8 to 10 servings

Number Of Ingredients 8

1 (7- to 8-lb) fully cooked bone-in shank-end ham
6 cups water
1/4 cup pure maple syrup
1 cup granulated maple sugar*
1 teaspoon dry mustard
1/4 cup apple juice
1/4 teaspoon ground cloves (or 10 cloves stuck into ham)
2 cups raisins (10 oz)

Steps:

  • Put ham cut side down in a large deep heavy pot (about 10 quarts) and add water and syrup.
  • Bring liquid to a boil, then reduce heat to low and gently simmer ham, covered, until tender, 2 to 2 1/2 hours. Uncover and cool slightly.
  • Preheat oven to 350°F.
  • When ham is cool enough to handle, remove from pot, reserving cooking liquid, then cut off any rind and excess fat, leaving a thin layer. Transfer ham to a roasting pan.
  • Whisk together sugar, mustard, apple juice, and ground cloves, if using, in a bowl, then spoon over ham. Add raisins and 1 cup reserved cooking liquid to roasting pan and bake in middle of oven, basting occasionally, until ham is glazed and juices are bubbling, 30 to 40 minutes. Serve warm or at room temperature.

1 c raisins
1 1/2 c water
1/3 c brown sugar
1 1/2 Tbsp corn starch
1 Tbsp vinegar
1/4 tsp cinnamon
1/4 tsp dry mustard
1/4 tsp salt

Steps:

  • 1. Boil raisins five 5 minutes in water.
  • 2. Add sugar mixed with corn starch, spices, mustard and salt.
  • 3. Cook until thick, a few minutes.
  • 4. Blend in the vinegar, spread on ham. (I drizzle some pineapple juice on top as I bake pineapple slices with the ham.)
  • 5. Bake per ham directions.
