This is one of my favorite cookie recipes - making these treats seems to put me in a holiday mood. Maybe it's the soft centers, or perhaps the spicy aroma of ginger and cloves. Whatever the case, a few Molasses Creams and a glass of milk or cup of warm tea always hit the spot!

Number Of Ingredients 14

1-1/2 cups butter, softened
2 cups sugar
2 large eggs, lightly beaten
1/2 cup light molasses
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground cloves
FROSTING:
1-1/2 cups confectioners' sugar
3 tablespoons butter, softened
1 tablespoon vanilla extract
1 to 2 tablespoons whole milk

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. , Roll into walnut-sized balls. Place on ungreased baking sheets (do not flatten). Bake at 350° for 10-12 minutes or until done (centers will be slightly soft). , In a small bowl, beat the confectioner's sugar, butter, vanilla and enough milk to achieve desired consistency. Frost cookies while warm.

1 1/2 cups butter, softened
2 cups sugar
2 eggs, slightly beaten
1/2 cup molasses
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups confectioners' sugar
1 tablespoon vanilla extract
1 -2 tablespoon milk

Steps:

  • In a large mixing bowl, cream butter and sugar.
  • Add eggs, and molasses and mix thoroughly.
  • Combine dry ingredients and gradually add to creamed mixture.
  • Shape into 1-inch balls.
  • Place on ungreased baking sheets (do not flatten) Bake at 350°F for 10-12 minutes or until done (centers will be slightly soft) In a small mixing bowl beat butter, confectioners' sugar and vanilla and enough milk until creamy.
  • Frost cookies while warm.

3 oz cream cheese, softened
1/2 cup packed light brown sugar
1/3 cup mild molasses
2 cups half-and-half

Steps:

  • Blend cream cheese, brown sugar, and molasses in a food processor or blender until smooth. With motor running, add half-and-half, blending until combined.
  • Freeze in an ice cream maker, then transfer ice cream to an airtight container and put in freezer to harden.

½ cup light molasses
4 cups all-purpose flour

¾ teaspoon ground ginger
½ teaspoon ground cloves
1 ½ cups confectioners' sugar
3 tablespoons butter or margarine, softened
1 tablespoon vanilla extract
1 tablespoon milk

Steps:

  • In a large mixing bowl, cream butter and sugar. Add eggs and molasses and mix thoroughly. Blend in dry ingredients. Roll into walnut-sized balls. Place on ungreased baking sheets (do not flatten). Bake at 350 degrees F for 10-12 minutes or until done (centers will be slightly soft).
  • In a small mixing bowl, beat frosting ingredients until creamy. Frost cookies while warm.

I found this recipe in an old Pioneer Cookbook. I love sweet molasses on a piece of 'johnny cake' or a corn muffin, especially hot from the oven! This creamy syrup is a delicious treat.

1/2 cup molasses
1/2 cup butter
1/2 cup cream (I used a half and half blend)

Steps:

  • Mix all ingredients in a heavy saucepan.
  • Cook slowly over low heat until mixture turns into a smooth syrup, it will take 6 - 10 minutes.
  • Cool before serving, I like it best at room temperature.

½ cup shortening
½ cup white sugar
1 egg, beaten
½ cup molasses
⅓ cup hot, brewed coffee
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
2 teaspoons ground cinnamon
½ cup raisins
¼ cup butter
2 cups confectioners' sugar
2 tablespoons cold, brewed coffee

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, cream together the shortening and sugar. Blend in the egg, molasses and hot coffee. Sift together the flour, baking powder, baking soda and cinnamon; stir into the molasses mixture until well blended. Mix in the raisins. Pat the mixture evenly into the prepared pan.
  • Bake for about 25 minutes in the preheated oven, or until firm. To make icing, combine butter, confectioners' sugar and cold coffee in a medium bowl; beat until smooth. Frost bars while warm, but allow them to cool before cutting.
