Today, I wanted to turn a pretty standard steak into something completely not standard. This molasses chili steak marinade definitely did that.

Number Of Ingredients 9

1/4 cup brown sugar
1/4 cup molasses
3 tablespoons soy sauce
2 tablespoons rice vinegar
2 teaspoons garlic powder
1 teaspoon dried ginger
1 tablespoon chili powder
1/4 teaspoon ground black pepper
2 1 pound steaks

Steps:

  • Whisk together all ingredients except for the steaks.
  • Pour marinade into the bottom of a large resealable container, or divided between two containers large enough to hold each steak.
  • Add steaks. Coat bottoms well then flip and coat other sides.
  • Cover and refrigerate for 1 hour, flipping the steaks every 15 minutes.
  • Cook as you normally would. Note that since the marinade contains molasses and brown sugar the steaks will char if left over high heat for very long. Sear your steaks over high heat then finish them over indirect heat to prevent burning.

Years ago when my son was in boy scouts I won the chili cook off with this recipe. The boys served as judges so I guess my secret ingredient of brown sugar gave them the sweet heat that they liked.

1 1/2 lb ground beef
1 large onion diced
salt and pepper to taste
2 can(s) 14.5 oz. chili beans
1 large can 28 oz. crushed tomtoes
1 large can 15 oz tomato sauce
1 c beef broth
1/2 c molasses
1/2 c packed brown sugar
3 Tbsp chili powder
2 Tbsp each cumin and red pepper flakes
1 Tbsp smoked paprika
shredded cheddar cheese for serving (optional)

Steps:

  • 1. Brown the ground beef with the onions and season with salt and pepper. Drain. Add remaining ingredients and bring to a boil.
  • 2. Reduce heat and simmer 1 hour adding some water if it gets too thick.
  • 3. Sprinkle cheese on top to serve.

This is a marinade with amazing flavor. I used it with bison steak, but any sort of beef roast or steak would work.

½ cup molasses
½ cup brown sugar
1 cup ketchup
1 tablespoon lemon juice
1 tablespoon dried oregano
1 tablespoon garlic powder
½ teaspoon onion powder
3 rings onion

Steps:

  • Combine the molasses, brown sugar, ketchup, lemon juice, oregano, garlic powder, onion powder, and onion in a bowl; stir to combine. Pour marinade over meat and allow to sit in the refrigerator overnight before cooking.

This is a chili I have been making for years. I have made it with all kinds of ground meats (beef, turkey, deer, elk) but I prefer ground moose. The longer you let it simmer the better as the flavors will blend. Top with shredded cheddar cheese. Serve with fresh baked cornbread and sweet honey butter. Men LOVE this meal!

1 pound ground moose
1 (28 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans chili beans, undrained
2 (14 ounce) cans kidney beans, rinsed and drained
2 (14.5 ounce) cans pinto beans, rinsed and drained
2 (2.25 ounce) cans sliced black olives
1 white onion, chopped
1 green bell pepper, chopped
1 (1.25 ounce) package chili seasoning mix

Steps:

  • Brown the ground moose in a large skillet over medium-high heat.
  • Combine the moose, diced tomatoes, chili beans, kidney beans, pinto beans, olives, onion, and bell pepper in a slow cooker; stir in the chili seasoning. Set the slow cooker to Low; cook 8 to 12 hours.
