Old fashioned New England flavor using a bread machine! You can mix the bread in the machine then bake it in the regular oven using your favorite pans, I do.

1 ⅝ cups water
4 cups bread flour
2 tablespoons butter
2 tablespoons dry milk powder
⅓ cup molasses
1 tablespoon active dry yeast
2 teaspoons salt

Steps:

  • Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
  • If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
  • To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.

1 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar
1/2 cup dark molasses

Steps:

  • Preheat oven to 325 degrees.
  • Spray 9X4 inch loaf pan with non stick spray.
  • Sift dry ingredients together.
  • Mix liquid ingredients together, then add to dry mixture.
  • Blend well with electric mixer.
  • Pour into prepared loaf pan.
  • Bake for 1 and 1/2 hours.
  • Cool for 10 minutes in pan, then turn out and cool completely.
  • Delicious with cream cheese.
  • Freezes well.

This easy traditional molasses brown bread recipe is ready in three hours (including rising time). If you're new to yeast bread, this is the best beginner recipe ever.

1 cup warm water
1 tsp. sugar
1 Tbsp. yeast
3/4 cup Crosby's Fancy Molasses
1 cup rolled oats (old fashioned, not instant)
2 Tbsp. butter
2 tsp. salt
1 cup boiling water
1 cup cold water
2 cups whole wheat flour (spooned in)*
4 1/2 cups all-purpose flour (spooned in)

Steps:

  • In a small bowl dissolve sugar in the 1 cup of warm water and sprinkle over the yeast. Leave for 5-10 minutes.
  • In a large bowl mix molasses, rolled oats, butter and salt.
  • Add the 1 cup boiling water, whisk, and then add the 1 cup cold water.
  • Stir in yeast mixture.
  • Add flour gradually and scrape dough onto a floured surface to knead in the final cup of flour.
  • Cut dough in half and place in two large bread pans that have been well greased or lined with parchment paper.
  • Cover each plan with a dishtowel and set in a warm place to rise until almost double in size (about 1 1/2 hours).
  • Remove dishtowels and bake at 325 F for about an hour
  • When ready, remove from oven and let cool about five minutes before removing from pans to cool.

2 1/2 cups warm water (about 110 degrees)
1 1/2 tablespoons instant yeast
1/3 cup + 1 tablespoon unsulphured molasses
2 tablespoons unsweetened (natural cocoa powder)
3 tablespoons oil (see note)
1/3 cup honey
2 teaspoons salt
3 tablespoons vital wheat gluten (optional - see note)
3 cups white whole wheat flour
3 to 4 cups all-purpose flour
2 to 3 tablespoons butter (melted)
Old-fashioned oats for sprinkling

Steps:

  • In the bowl of an electric stand mixer fitted with the dough hook (or in a large bowl with a wooden spoon if powering through this by hand), combine the water, yeast, molasses, cocoa powder, oil, honey, salt, gluten (if using), and 2 cups of the whole wheat flour. Mix until combined.
  • With the mixer running, slowly add the rest of the whole wheat flour. Start adding the white flour gradually until the dough pulls away from the sides of the bowl. Knead for 5-7 minutes (about 10-15 if kneading by hand). The dough should be soft and slightly tacky but shouldn't leave a lot of residue on your fingers if you grab a piece.
  • Turn the dough into a large, lightly greased bowl, cover with greased plastic wrap or a light towel, and let rise until doubled, 1-2 hours.
  • Lightly punch down the dough and divide into three equal pieces. Form into tight oval loaves and place on parchment-lined or lightly greased baking sheets (I fit two loaves on one large, rimmed 11X17-inch baking sheet and the third loaf on another baking sheet). Lightly cover with greased plastic wrap or a light towel and let rise until puffy and doubled in size. Optional: right before baking, using a very sharp razor, knife or bread-slashing lame (I use this one from King Arthur Flour), cut three deep slashes in the top of each loaf.
  • Preheat the oven to 375 degrees F. Bake the loaves for 25 minutes. Remove from the oven and lightly brush with about a tablespoon of butter. Sprinkle with the oats and bake for another 5-7 minutes.

1 1/4 cups boiling water
3/4 cups large-flake rolled oats
1/3 cup Fancy molasses (*see Note 1)
2 Tbsp. butter (at room temperature or vegetable oil, in same quantity)
1 large egg (lightly beaten)
1 tsp. granulated white sugar
1/2 cup lukewarm water (about 105F)
1 Tbsp. active dry or Instant yeast (not rapid or quick-rising)
1 cup whole wheat flour
1 3/4 tsp. fine salt
3 cups all purpose flour (approximately)
1 large egg (beaten)
2 Tbsp. large-flake rolled oats

Steps:

  • In a large bowl or the bowl of a stand mixer, add the oats and boiling water. Stir and let stand 15 minutes.
  • Meanwhile, combine the white sugar, lukewarm water and yeast in a small bowl. Stir to combine and let stand 10 minutes.
  • Once oats have soaked, add the molasses, butter and egg to the bowl and stir to combine with a spoon or kneading hook on a mixer. Add the yeast mixture, whole wheat flour, salt and 1 1/2 cups of the all purpose flour.
  • Use a spoon or kneading hook to mix in thoroughly. Continue by adding the last cup of flour, in small increments, adding only as much as needed to create a moist dough that wraps the kneading hook and cleans the bowl in spots. You may not need all of the last cup or you may need a bit more that 1 cup. Dough will be quite moist.
  • Remove dough to a floured work surface and knead 1 minutes, adding additional flour if dough is sticking to hands or work surface. Form into a ball, place in a greased bowl, cover with plastic wrap and let rise until doubled in size, approximately 60-75 minutes.
  • Remove dough to a floured work surface. Press to deflate, then divide into 2 equal pieces.
  • Take one piece of the dough and roll into a 8 x 11-inch rectangle. Starting from the short side, roll the dough up jelly-roll style and pinch the seams to seal.
  • Place into a greased 8 x 4-inch loaf pan. Repeat with the other piece of dough. **If you only have 9x5-inch loaf pans, you can use them here. Roll your dough into a slightly larger 9x12-inch rectangle, so it will fill the larger pan. Your resulting loaf will be wider and shorter and the cooking time may change, so watch closely.
  • Cover the pans with greased plastic wrap or a clean tea towel and let rise until doubled, about 1 hour.
  • Preheat oven to 375F (not fan-assisted), with rack in the centre of the oven.
  • Once loaves are ready to bake, brush tops with beaten egg and sprinkle with additional rolled oats.
  • Bake in preheated over for about 40 minutes, checking after about 25 minutes and covering the tops loosely with a sheet of aluminum foil if loaves are nicely browned already, to prevent over-browning. If you have an instant-read thermometer, baked loaves until the loaves read at least 200F when inserted into the centre of the loaf.
  • Remove from oven and immediately remove loaves to a cooling rack to cool completely before slicing.

1 cup quick-cooking oats
1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)

1 teaspoon butter, melted

Steps:

  • In a bowl, pour boiling water over oats. Let stand until mixture cools to 110° to 115°, stirring occasionally. , In a bowl, dissolve yeast in warm water. Add the molasses, oil, salt, oat mixture and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough.   • Mix dry ingredients: all-purpose and whole wheat flour, salt, cocoa powder and yeast.

I saw this on NBC a few days ago and knew I had to place it here for safe keeping. It looked great. This bread stores well and picks up flavor when wrapped with a rum-soaked cloth. To store, dip a 12- to 14-inch square of muslin or cheesecloth into a cup holding 2 or 3 tablespoons dark rum, wetting the fabric all over. Squeeze out the excess rum, wrap the molasses bread with the dampened cloth and store the bread in a tin canister, or wrap with foil and store in a dark place.

3/4 cup vegetable oil (such as grapeseed, peanut, corn, coconut, or a mixture of the oils)
3 large eggs, at room temperature

Steps:

  • Preheat the oven to 350 degrees. Butter a 9 x 5 x 3-inch loaf pan, dust lightly with flour, shake out excess and set aside.
  • In a large mixing bowl, combine the oil, eggs, molasses, sugar, ginger, allspice and cinnamon and beat vigorously with a whisk until well-blended.
  • Sift together the flour, salt, baking soda and baking powder. Add the flour and buttermilk alternately to the molasses mixture, stirring with a wooden spoon after each addition. Sprinkle the walnuts or pecans all over with the flour and then stir into the batter, mixing well.
  • Pour the batter into the prepared pan, and shake gently to settle the batter. Set the pan in the center of the hot oven on the lower rack. Bake the bread for 10 minutes and then scatter the top of the loaf evenly with the crystallized sugar.
  • Bake the molasses bread for 45 to 50 minutes or until it is brown and puffy and a knife or toothpick inserted in the center comes out clean but a little moist. Don't overbake the bread and dry it out; it should be moist.
  • Remove the pan from the oven and cool on a wire rack for 15 minutes. Run a metal spatula around the edge of the bread and turn out the bread onto a rack or board lined with a tea cloth or sheet of wax paper. Then, turn the bread upright and serve warm, if desired.

  • In a separate mixing bowl, whisk together pumpkin puree, eggs, vegetable oil and applesauce until thoroughly mixed.

1 tablespoon melted butter mixed with 1 teaspoon light unsulfured molasses (glaze)

Steps:

  • Place 1/2 cup oats in large bowl of electric mixer fitted with dough hook; pour 3/4 cup boiling water over. Let stand 30 minutes (water will be absorbed and oatmeal will be very soft).
  • Pour 1 cup warm water into 2-cup glass measuring cup. Sprinkle yeast over; stir to blend. Let stand until yeast dissolves, about 10 minutes. Mix molasses, 2 tablespoons butter and salt into oat mixture in bowl. Mix in yeast mixture. Add enough flour, 1 cup at a time, to form medium-soft dough, mixing at medium speed until well blended, about 3 minutes. Turn out dough onto floured surface.   • Position rack in center of oven and preheat to 400°F. Butter 9x5-inch loaf pan. Punch down dough; turn out into floured surface and knead 3 minutes. Form into 8-inch-long loaf. Transfer to prepared pan. Cover with plastic, then towel; let rise in warm draft-free area until dough has risen about 1/2 inch above rim of pan, about 45 minutes.
  • Bake bread 10 minutes; reduce temperature to 350°F. Bake 25 minutes longer. Brush top of bread with glaze; sprinkle 1 tablespoon oats over. Bake until bread is golden and sounds hollow when tapped on bottom, about 10 minutes longer. Transfer to rack; cool in pan 10 minutes. Turn out brad onto rack; cool completely. Then sitting down by the wood burning stove looking in the oven waiting for the bread to come out. After it was baked my Mom cutting the bread while it was hot and spreading lots of butter and more molasses all over my slice of bread. So Good! Sweet Molasses Raisin Bread fresh from the oven. Cut small pieces of dough and put three in a pan. Here in Newfoundland and Labrador we like to fill the bread pan with three buns of dough, this was an old tradition by our elders. Steps:

  • Prep time: 10 minutes, mixing time: 10 minutes, rising time: 2 x 1/2 hour, baking time 30 minutes Method: 1 - Combine in large bowl: 8 cups flour, 1/2 cup brown sugar, sea salt, raisins, cinnamon and ground cloves, mix together. 2 - In another bowl, add dry fast rising or traditional yeast with 1 cup warm water and 1/2 tbsp white sugar, let rise for a five minutes. 3 - In another bowl add 1 cup of warm water and 3/4 cup molasses mix together, then melt 1/4 cup butter in a glass bowl. 4 - When yeast is ready pour over flour mixture in bowl then start adding the warm water, butter, molasses and vanilla mixing all ingredients together with a spoon or kitchen aid until it thickens then keep adding flour to work dough together, add more water if need at this stage ONLY" this will be done with your hand. 5 - Knead dough, add more flour if necessary until dough is smooth , elastic and no longer sticky and you can hear cracking sounds of the dough when folding dough inward, keep working dough into a ball. 6 - When completed sprinkle some flour over the top. I always draw the sign of a cross a few times on top then cut the top of the dough like a cross then cover with parchment paper and big towel. "Crossing your bread is optional". 7 - Let rise in a warm place on your counter top until dough rises for 30 minutes then knead it down for a couple of minutes. 8 - Repeat this step letting the dough rise again for another 30 minutes. 9 - After your dough rises " DON'T DEFLATE DOUGH" and cut in pieces forming it inwards into a ball, placing dough in bread pans, place three buns in each pan. 10 - Makes 3 loafs of bread keep covered and in a warm place until bread rises half the size you started with or just 30 minutes. Pre-heat oven at 350 degrees F, bake bread for 30 to 40 minutes or until golden brown or depending on your oven, when bread is baked take out of your pans and place them out on a cooling rack. BAKING TIPS: Sweet bread don't rise the same as white bread and it's a little heavier but ever so good. Grease bread with butter then cover with parchment paper and towel to soften tops. Don't deflate the dough on its last rising because you need the air to stay in dough when folding them into balls. Sweet Molasses & Raisin Bread (One Loaf only) Recipe: Ingredients: 2 3/4 Cups White or Wheat flour. 1 1/2 Tsp yeast 1 1/2 Tsp melted butter, or Margarine Pinch Sea salt 1/4 Cup Brown Sugar 1 Cup warm water. 1/4 Cup molasses and pinch oil in bowl 1/4 Tsp vanilla 1 Tsp cinnamon 1/4 Tsp Ground Cloves 1/2 cup raisins ( more if liked ) 1/2 Tsp White Sugar Method: 1 - Combine in large bowl: 2 1/2 cups flour, brown sugar and salt and raisins, cinnamon, cloves,salt toss together. This will be done with your hand. 5 - Knead dough, add more flour if necessary until dough is smooth , elastic and no longer sticky and you can hear cracking of the dough when folding dough. Keep working dough into a ball. 6 - When completed sprinkle some flour over the top. I always draw the sign of a cross a few times on top then cut the top of the dough like a cross then cover with wax paper or parchment paper and a towel. Crossing your bread is optional. 7 - Let rise in a warm place until dough rises for half an hour then knead it down. 8 - Repeat this step letting the dough rise again for another 1/2 hour. 9 - After your dough rises cut in pieces forming it inwards into a ball, then put in your bread pan. Make one loaf. 10 - Makes 1 loaf of bread keep covered and in a warm place until bread rises half the size you started with. FOLLOW BAKING TIME AT THE TIME.

1 1/4 sticks (10 tablespoons) unsalted butter, softened

Steps:

  • Preheat oven to 400° F. and butter a 9-by-5-by-3 inch loaf pan.
  • Into a large bowl sift together flour, baking powder, salt, and baking soda and whisk in cornmeal and sugar until combined well. In a bowl whisk together milk, molasses, and egg until just combined. Add butter to flour mixture and with an electric mixer beat until mixture resembles fine crumbs. Beat in milk mixture until just combined.
  • Pour batter into pan and bake in middle of oven 35 minutes, or until a tester comes out clean. Cool corn bread in pan on a rack 10 minutes and turn out onto rack to cool completely. Corn bread may be made 2 days ahead and kept, wrapped in plastic wrap, in a cool, dry place.
