THE ULTIMATE BLT SANDWICH
Crispy bacon, juicy roasted tomatoes and crunchy lettuce all makes this BLT sandwich with smoky garlic mayonnaise the ultimate summer sandwich.

Steps:
- Pre-heat the oven to 170°c/340°f and line a sheet pan with parchment paper.
- Place the sliced tomatoes on the sheet pan and season with salt and pepper. Drizzle over the olive oil and place in the oven.
- Allow the tomatoes to cook for 45 minutes to an hour until they start to caramelize.
- Remove from the oven and allow to cool to room temperature.
- To make the aioli, place the egg yolks, lemon juice, garlic, mustard, paprika, smoked chilli, sugar and salt in a blender and blend for 30 seconds until well combined.
- Whilst blending, slowly pour the oil in a thin stream until half of the oil has been incorporated. The remaining oil can be poured in a little quicker as the mixture has already been emulsified at this stage. If your aioli seems very thick you can add a few tablespoons of water to thin it out, just make sure that you blend it well. Taste and adjust seasoning if necessary.
- Transfer the aioli into a bowl and set aside.
- To assemble the sandwich, spread aioli onto the slices of bread.
- Layer the lettuce, roasted tomatoes and crispy bacon on top then sandwich with another slice of bread.
- Serve immediately.

Parmesan and Romano cheeses combined with Italian-seasoned breadcrumbs create a golden brown crispy coating for this chicken. I have also used Asiago cheese in place of the Parmesan.

Steps:
- Heat oven to 375 degrees F.
- Combine breadcrumbs, cheeses, black pepper, salt, parsley and paprika in shallow bowl; set aside.
- Combine butter and garlic in a 9-inch pie pan.
- Dip 1 chicken breast at a time into butter mixture; place into breadcrumb mixture, turning to coat evenly.
- Place chicken breasts into ungreased 13x9-inch glass baking dish.
- Drizzle with any remaining butter mixture.
- Bake for 25-35 minutes or until chicken is lightly browned and juices run clear when pierced with a fork. (I turn mine once during the baking).
CLASSIC BLT SANDWICH
This is a sandwich that I crave a lot. I am just posting it because I couldn't find it posted already on the Zaar...I couldn't believe that! My ex-DH wondered how I make these, so I decided to post it and send him the recipe. Nothing fancy -- just the real, simple, unabridged version. UPDATE: After reading Peg629's review, I have tried it that way, with one slice of toast spread with yellow mustard, and I must say it really, really makes an exceptional BLT! Such a subtle difference, yet genuinely makes a superior BLT, in my opinion! (Thank you Peg629 for that awesome suggestion!)

Steps:
- Cook bacon until crispy, then drain on paper towels.
- Toast the 8 slices of bread.
- Spread 1 tablespoon mayo on each slice of toasted bread. (More or less, to taste).
- Add 1 slice of lettuce to 4 pieces of mayo-spreaded toast.
- Add 2 slices of tomato on top of lettuce.
- Arrange 3 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.).
- Add 1 slice of lettuce on top of bacon.
- Put the remaining 4 pieces of mayo-spreaded toast on top to finish the sandwiches.
- Enjoy!
- NOTE: I also like to butter the toast slices before adding the mayo -- higher in fat, but tastier, in my opinion!

- Toast the bread.
- Spread the mayo on both slices of toast.
- You can put a little avocado on one side if you wish. My boys always liked this.

- Marinate the meat: I placed mine in a plastic bag and added McCormic's Grill Mates Mesquite Mix, this is where you will use the oil. refrigerate for 25 minutes. Save a little of the mix to baste halfway through the cook time.
- peal potatoes and cut them up into quarter size pieces.
- peal the onion and cut it into medium size pieces, not chopped.
- peal the carrots and cut them in half the long way and then cut them into 1 inch pieces.
- cut the celery ribs in half the long way and then cut them into 1 inch pieces.
- sear the meat on all sides: turn the heat up high and add 4 tablespoons of oil to the pan. cook the meat for about 2 minutes on all sides, I used a set of tongs to hold the meat vertical to sear the edges.
- place the vegetables into the pot with the 1/2 teaspoon of beef bouillon & water mix.
- place the meat on the top of the vegetables and cover the pot.
- set your crockpot to high for 4 hours.
- remove meat and set aside, cover it with foil to keep warm. mix your corn starch with 1/4 cup of water and add it to the vegetables stiring it up slowly the gravy will thicken.
- slice the meat to your liking and plate it, cover the meat with the vegetables and gravy and Enjoy your Mesquite Pot Roast.

NOT YOUR ORDINARY BLT SANDWICH
There's nothing better than fresh tomatoes in season & there's nothing better than this creative BLT variation. It makes a great lunch, potluck pleaser, patio party winner or picnic favorite. - Preheat oven to 400°F.
- Use tomatoes held at room temp till fully ripe. Quarter tomatoes & remove the seedy moist centers so only the "meat" of the tomato is used. Coarsely chop tomato meat, place in a lrg bowl & set aside.
- Slice off the top of each hard roll & remove the center for a later use. Brush inside of rolls (& their tops) w/2 tbsp of the creamy dressing. Bake till lightly toasted (about 5 min) & set aside.
- Add the lettuce, bacon, green onions, feta cheese & remaining Caesar dressing to the bowl w/the tomatoes & toss till well-mixed.
- Spoon BLT mix into toasted bread shells. Place tops of rolls over the filling & serve immediately.
- NOTES: If you want to do the prep ahead, but serve later -- delay the final step till just prior to serving. Sliced avocado also makes a nice "extra" w/this sandwich.

- Cook your bacon slices to a medium crisp.
- slice your tomato in thin slices, you will use 3 per sandwich.
- prepare 6 nice leaves of lettuce.
- cut your hamburger rolls in half and spread butter on the insides.
- sprinkle your parmesan and romano grated cheese on the buttered surface of the rolls.
- grill your rolls in a pan with medium heat to a nice golden brown color checking constantly to monitor level. Keep moving them to prevent sticking.
- Assemble your sandwiches:.
- spread mayonnaise on inside of your rolls.
- place your lettuce on top of the mayo.
- place your bacon on top of the lettuce.
- place your tomatoes on top of the bacon.
- add salt and pepper to taste, or leave for you and your guest to add on their own.
- Enjoy your sandwich.
