4 celery ribs, chopped
1 large onion, chopped
1-1/2 cups chopped dried apricots
1/4 cup minced fresh parsley
1 tablespoon minced fresh sage or 1 teaspoon dried sage
1 teaspoon poultry seasoning
1/4 teaspoon pepper
3-1/4 cups chicken stock
1 package (12 ounces) crushed cornbread stuffing
1 cup fresh or frozen cranberries, chopped

Steps:

  • In a Dutch oven, cook the turkey sausage, celery and onion over medium heat until meat is no longer pink and vegetables are tender, breaking sausage into crumbles; drain. Stir in the apricots, parsley, sage, poultry seasoning and pepper; cook 3 minutes longer., Add stock; bring to a boil. Stir in cornbread stuffing; cook and stir until liquid is absorbed. Gently stir in cranberries; heat through.

1 stick unsalted butter, plus more for the dish
1 pound loose breakfast sausage (or use links and remove the casings)
2 onions, chopped
4 stalks celery, chopped
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
2 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
2 large eggs
1/2 cup chopped fresh parsley
16 cups stale 1/2-inch country white bread cubes (about 2 pounds)

Steps:

  • Preheat the oven to 350˚. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat, until no longer pink, 3 to 5 minutes. Add the onions, celery, sage and thyme and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the chicken broth, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then remove from the heat.
  • Whisk the eggs and parsley in a large bowl. Add the bread cubes and sausage-broth mixture and toss until evenly combined. Transfer to the prepared baking dish, dot with the remaining 2 tablespoons butter and cover with foil.
  • Bake the stuffing until hot, about 30 minutes. Uncover and bake until golden brown, 20 to 30 minutes. Let cool at least 15 minutes before serving.

1 lb ground mild Italian sausage
¾ cup salted butter (plus more for greasing)
1 large yellow onion (diced)
4 stalks celery (leaves on and diced)
2 garlic cloves (minced)
1 tablespoon fresh rosemary (minced, (1 teaspoon, dried))
1 tablespoon fresh thyme (minced, (1 teaspoon dried))
2 tablespoons fresh sage (minced, (2 teaspoons dried))
⅓ cup parsley (minced)
2 large eggs
2 cups chicken broth

Steps:

  • Preheat oven to 200°F and cut French bread into slices and cut slices into cubes. Spread the cubes out on a baking sheet and bake for one hour.
  • Preheat the oven to 350°F and grease a 9x13-inch cake pan with butter.
  • Cook sausage in a skillet over medium heat until browned. Remove the sausage and put it in a medium bowl; set aside.
  • Add the butter to sausage dripping and melt. Once melted, add the diced onions, celery, and minced garlic. Cook for 10 minutes over medium heat or until onions are translucent.
  • Add the sausage and herbs to the onions, and remove from the heat stove.
  • Place the baked bread cubes in a large bowl and add the sausage and onions and mix to combine.
  • Beat the eggs in a separate bowl, then add them to the bread and sausage mixture with the chicken broth and mix well.
  • Press the mixture into the prepared baking dish, making sure there are no pieces sticking up or they will dry out during baking.
  • Cover with aluminum foil and bake for 45 minutes. Remove aluminum foil and bake an additional 15 minutes.
  • Remove from oven and let rest for 5 minutes before serving.

1 pound sage pork sausage
1/2 cup butter, cubed
1/2 pound fresh mushrooms, finely chopped
6 celery ribs, finely chopped

1 loaf (13 ounces) French bread, cut into 1/2-inch cubes (about 17 cups)
4 cups cubed multigrain bread (1/2 inch)
1 tablespoon rubbed sage
1 cup chicken stock
1/2 cup white wine or chicken stock
1 cup dried cranberries
1/2 cup sunflower kernels, optional

Steps:

  • In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. In a stockpot, melt butter over medium heat. Add mushrooms, celery and onions; cook and stir 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from heat. , Stir in sausage. Add bread cubes and sage; toss to combine. 1 jar (12 oz.) roasted red peppers, drained, patted dry and chopped
1 Tbsp. chopped fresh parsley
1/8 tsp. ground black pepper
1 loaf (12 oz.) Italian bread, cut into 1/2-inch cubes (about 8 cups)

Steps:

  • Preheat oven to 375 degrees.
  • Brown sausage in 12-inch nonstick skillet over medium heat, stirring frequently, 5 minutes. Add onion and cook, stirring occasionally, 5 minutes or until tender. Remove sausage and onion; set aside.
  • Stir in remaining ingredients except bread into same skillet; stir in bread.

¾ cup margarine, melted
¾ cup finely diced onion

An old recipe from a 1960's Good Housekeeping cookbook; this was my mom's classic stuffing recipe that everyone adores. I prefer the tidiness of dressing cooked separately from the turkey, and so I've adapted the recipe to be cooked in a casserole but still retain the moistness of a stuffing. Instructions for using it either way are included. Times are approximate, as they will depend on the temperature of the oven and how full the oven is. Yield is also approximate. Allow around 1 c stuffing per 1 lb of turkey.

1 quart boiling water (3 cups if using as stuffing) or 1 quart chicken broth (3 cups if using as stuffing)
turkey giblets (including neck, but excluding liver)
1 bay leaf
1 pinch salt (or to taste, may omit if using broth)
1/4 teaspoon peppercorn
1 -1 1/2 cup butter
1 cup minced onion
1/2 teaspoon black pepper
2 teaspoons poultry seasoning
1 teaspoon salt (or to taste)
1/4 cup snipped fresh parsley
1/4 cup diced celery
6 quarts day-old white bread, cut into 1/2 inch cubes (24 cups, lightly packed, or about 1 1/2-2 loaves)
1/4 cup dry mustard
2 -3 eggs (omit for stuffing option)

Steps:

  • Bring water or broth to a boil in a small saucepan. Add giblets, neck, bay leaf, salt (if using), and peppercorns, and simmer for about 45 minutes or until tender and cooked through.
  • Remove bay leaf, giblets, and neck from pan. Discard bay leaf.
  • Mince giblets. Remove as much meat as possible from neck bones and mince. Add minced giblets and meat back to broth.
  • Add butter and onion to pan, bring to a simmer, and simmer for 5 minutes.
  • Meanwhile, place remaining ingredients except eggs into a very large bowl.
  • Pour giblet mixture over bread mixture and toss to mix together well.
  • For Stuffing: Stuff turkey loosely (do not pack) and roast as usual for stuffed turkey. Bake any leftover stuffing in a covered casserole alongside turkey until done, about 30-45 minutes at 350* F, depending on quantity (should be set, not wet, in the center). Adjust times as needed to bake at same temperature as turkey. Makes enough to stuff about a 16 lb turkey.
  • For Dressing: Mix in eggs. Transfer to one large or two smaller baking dishes. Cover tightly and bake along with turkey for about 40-45 minutes for two small dishes or about 50-60 minutes for one large dish, at 350* F or until cooked through (should be set in middle, not wet). Adjust times as needed to bake at same temperature as turkey.

1 large Spanish onions or 1 large walla walla onion, medium chopped
1 cup celery, chopped with leaves

vegetable oil cooking spray
10 -12 cups dried, cubed sourdough bread or 10 -12 cups dried, cubed French bread, rolled and crushed to medium crumbs
1/2 cup parsley, chopped
1/4 cup chives (optional)
2 (10 ounce) cans sliced water chestnuts, undrained
1 granny smith apple, peeled,cored and chopped
salt and pepper
poultry seasoning

Steps:

  • Heat and spray with veggy oil a heavy large frypan.
  • scramble fry pork, onions, celery and garlic until onions are transparent.
  • Set aside, do not drain.
  • In a very large bowl, place bread crumbs, parsley and chives, if using.
  • Mix well.
  • Add water chestnuts with water, apple, salt and pepper. (I usually add one can of chestnuts with water and add the chestnuts only of the second can adding more water only if needed, a bit at a time.)
  • Mix well.
  • Add pork and onion mixture with juice from pan.
  • Mix well.
  • Add poultry seasoning a tablespoon at a time, taste and add more poultry seasoning until the taste is to your liking, make it as spicy as you wish.
  • Refrigerate until ready to stuff turkey.
  • Pack cavities firmly but not tight.
  • Any stuffing left can be cooked in a casserole in the oven with the bird, or freeze and use another time.
