OATMEAL WHOLE WHEAT QUICK BREAD

Oatmeal Whole Wheat Quick Bread image

There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!

MOIST PUMPKIN BREAD

Moist Pumpkin Bread image

VERY MOIST pumpkin bread with special topping. This makes a very nice gift-giving bread. You can make it all year long because it uses a can of 100% pure pumpkin puree. I use Libby's brand. The spices are just right in this recipe and enhance the flavor of the pumpkin. It's best served after it has mellowed for one day. A family favorite.

Categories     Quick Breads

Time 1h15m

Yield 1 loaf, 8-10 serving(s)

Number Of Ingredients 16

1 cup brown sugar
2 eggs
1/2 cup vegetable oil
1/3 cup water
1 (15 ounce) pumpkin puree
1 3/4 cups plain flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 tablespoon butter
1/4 cup brown sugar
3 tablespoons milk
1/4 cup pecans, chopped

Steps:

  • In a medium size bowl beat eggs and mix with sugar, oil, water and pumpkin.
  • In another bowl mix flour, baking soda, baking powder, salt, nutmeg, cinnamon and pumpkin pie spice. Combine wet ingredients with dry ingredients only until just blended. Do NOT overmix.
  • Pour into a greased and floured loaf pan. This bread fits perfectly in an 8.5 x 4.5 loaf pan. Bake in a 325 degree oven for 50 to 60 minutes.
  • For topping: In a small saucepan mix butter, brown sugar and milk. Boil only 2 1/2 minutes while stirring constantly. Immediately drizzle on top of loaf. Sprinkle with chopped pecans and press pecans lightly into topping.
  • Wrap and store until next day for serving. This will keep moisture inside. It is ok if bread "sweats" while wrapped.

OATMEAL BREAD

Easy Homemade Oatmeal Bread made with rolled oats, whole wheat flour and sweetened with honey.

Provided by Lauren Allen

Categories     Appetizer     Breakfast     side course

Time 4h

Number Of Ingredients 10

2 cups milk (, brought to a simmer)
1 cup rolled oats ((not quick or instant oats))
4 tablespoons butter (, softened)
1/2 cup honey
4 ½ teaspoons instant yeast
1/2 cup warm water
1 1/2 teaspoons salt
2 1/2 cups whole wheat flour
2 1/4 -3 cups all-purpose flour
egg wash: 1 egg mixed with 1 tablespoon of water

Steps:

  • Add oats and butter to the bowl of a stand mixer or large mixing bowl. Heat milk to a simmer and pour on top, stirring to combine. Set aside for about 1.5 hours. Mixture should be at room temperature.
  • Add honey, warm water, instant yeast, and salt to the bowl and stir well to combine. Add the whole wheat flour and mix on medium-low speed until combined. Add the all-purpose flour, a little at a time, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky (don't add too much flour!). Knead for a few minutes until smooth and elastic and scrape down the sides and bottom of the bowl as needed.
  • First Rise: Transfer dough to a greased bowl and cover with a dish towel or plastic wrap. Allow to rise until double in size, about 1 hour.
  • Punch down the dough and divide into two equal pieces. Shape into loaves and place in two lightly greased loaf pans. Make egg wash and gently brush some over the top of each loaf. Sprinkle a small handful of dry oats on top.
  • Second rise: Cover with a well greased piece of plastic wrap gently laid on top and let rise in a warm place until risen about 1 inch over the loaf pans, 45 minutes to 1 hour. Carefully peel off the plastic wrap.
  • Bake at 350 degrees for 30 - 40 minutes. Loaves are done when tapping lightly on the tops produces hollow sound (or when instant read thermometer registers 200° F). Cool for 15 minutes on wire rack, then turn out of pans and cool completely.

OAT WHOLE WHEAT BREAD

Oat Whole Wheat Bread image

My Danish great grandmother made a bread very similar to this when my dad was a child. Going off memories my dad helped me recreate her recipe. This bread a deep golden brown on the outside and moist on the inside. Everyone agrees it's delicious toasted.

Categories     Bread     Yeast Bread Recipes     Whole Grain Bread Recipes     Wheat Bread

Time 3h35m

Yield 20

Number Of Ingredients 7

2 cups 2% reduced fat milk
1 (.25 ounce) package active dry yeast
1 ½ tablespoons white sugar
2 ½ cups whole wheat flour
2 cups all-purpose flour, or as needed
½ cup oatmeal
1 ½ teaspoons salt

Steps:

  • Warm the milk in a small saucepan to no more than 100 degrees F (40 degrees C). Sprinkle the yeast overtop and let stand until the yeast softens and begins to form a creamy foam, about 5 minutes; stir in the sugar.
  • Whisk the whole wheat flour, all-purpose flour, oatmeal, and salt together in a mixing bowl. Make a well in the center and pour the milk mixture into the well. Stir until the dough has pulled together. Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.
  • Grease 2 8x4-inch loaf pans. Deflate the dough and turn it out onto a lightly-floured surface. Use a knife to divide the dough into two equal pieces - don't tear it. Shape into dough rounds and let rest for 10 minutes. Form the dough into loaves and place into the prepared pans. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until the top is golden brown and the bottom of the loaf sounds hollow when tapped, 25 to 30 minutes. Cool in the pans for 5 minutes before turning out onto a wire rack to cool completely.

HONEY OAT QUICK BREAD

Honey Oat Quick Bread image

Love this bread!!! I have been trying to eat 5 times a day (healthy food) and this bread fits perfectly into my plan. It is easy, quick to make, very moist and really tastes good! It is great on its own but would also be a wonderful accompaniment to soup. The recipe calls for mild or clover honey, but I used a stronger flavored honey with great results. From EatingWell magazine Jan 2007.

MOIST BAKED OATMEAL

Moist Baked Oatmeal image

This recipe is adapted from Gourmet Magazine Dec 2007 Issue. The recipe calls for dried raisins but I use whatever I have on hand which is a bunch of different dried fruits. MOIST OATMEAL BREAD

Moist Oatmeal Bread image

This recipe produces a very flavorful, satisfying bread. The gluten powder isn't necessary, but it makes a fluffier loaf. This is another heirloom recipe that comes from "Old Fashioned Bread Recipes with Historical Notes" (1987). Yeast breads require kneading by hand and are messy, but there is nothing as satisfying as the smell and taste of bread you've made by yourself.

Provided by Cooking Beast

Categories     Yeast Breads

Time 1h30m

Yield 2 loaves

Number Of Ingredients 13

1/2 ounce dry yeast (2 packets)
1/4 warm water (not boiling)
1 cup rolled oats
2 cups milk, scalded
1/2 cup molasses
2 teaspoons salt
1/4 cup vegetable oil
2 eggs, beaten
1/2 cup wheat germ
2 cups wholewheat flour
3 -4 cups sifted unbleached flour
1/2 teaspoon ground ginger
1 -2 teaspoon gluten (optional)

Steps:

  • sprinkle yeast into warm water and allow to dissolve. Set aside.
  • In a large mixing bowl, combine the wet ingredients and oats and salt. Mix well.
  • In a separate larger bowl combine dry ingredients--wheat germ, flour, etc.
  • Gradually mix dry flour mixture into oats mixture, blending well, until a soft dough is formed. (I usually do this with a wooden spoon.) Add a little more flour if dough is still sticky.
  • Coat hands well with vegetable oil so dough will stick less.
  • Knead dough by hand for 8-10 minutes on a floured bread board or hard surface.
  • Form dough into a ball, place in a greased bowl. Cover with cloth and place in a warm place and let rise to double in bulk, about 1 hour.
  • Punch down and form into two loaves. Place in two greased 9 x 5-inch loaf pans, and let rise again until well rounded above tops of pans.
  • Bake in preheated 350 degree F oven 55-60 minutes.

  • In a large bowl or the bowl of a stand mixer fitted with the kneading hook, add the rolled oats and pour the boiling water over. Stir, then let stand about 20 minutes.
  • Meanwhile, add the raisins to a bowl of very hot water and allow to sit in the water for about 20 minutes, to plump.
  • Check and make sure the oat/water mixture has cooled to about 105F for active dry yeast or 115F for instant yeast. *Important that the mixture be cooled, so you don't kill the yeast. If you don't have a thermometer to check, test with your finger and make sure the mixture is just lukewarm and doesn't feel hot at all.
  • Sprinkle in the yeast, then add the milk, honey, vegetable oil, salt cinnamon and whole wheat flour. Mix to combine. Begin by adding 1 cup of the all purpose flour and kneading in. Start adding additional flour, in small increments and kneading in between additions, until you have a moist dough that wraps around the kneading hook and is starting to clean the sides of the bowl. Drain and pat dry the raisins and toss in a bit of flour. Add the raisins to the dough and knead in, adding a bit more flour, as needed, until you have a moist dough that cleans the bowl well.
