This is a very easy recipe that has the added bonus of being lowfat! It bakes into a round loaf.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix together flour, 1/2 cup oats, salt, baking powder, and baking soda.
- In another bowl, mix together sour cream, milk, honey, and sugar. Add to the flour mixture, and mix just until well blended. Stir in melted butter or margarine.
- Turn dough onto a lightly sprayed baking sheet. Shape into a round, lightly mounded circle, about 8 inches diameter. Brush the top of the loaf with melted butter or margarine, and sprinkle with remaining 1 tablespoon oats. With a knife, score the top of the loaf into quarters.
- Bake for about 40 minutes, or until browned. Cool completely before slicing.

MOIST PUMPKIN BREAD
VERY MOIST pumpkin bread with special topping. This makes a very nice gift-giving bread. You can make it all year long because it uses a can of 100% pure pumpkin puree. I use Libby's brand. - In a medium size bowl beat eggs and mix with sugar, oil, water and pumpkin.
- In another bowl mix flour, baking soda, baking powder, salt, nutmeg, cinnamon and pumpkin pie spice. Combine wet ingredients with dry ingredients only until just blended. Do NOT overmix.
- Pour into a greased and floured loaf pan. This bread fits perfectly in an 8.5 x 4.5 loaf pan. Bake in a 325 degree oven for 50 to 60 minutes.
- For topping: In a small saucepan mix butter, brown sugar and milk. Boil only 2 1/2 minutes while stirring constantly. Immediately drizzle on top of loaf. Sprinkle with chopped pecans and press pecans lightly into topping.
- Wrap and store until next day for serving. This will keep moisture inside. It is ok if bread "sweats" while wrapped.

- In a large bowl pour the boiling water over the rolled oats. Add the scalded milk and stir. Pour in the oil and molasses. Stir well.
- In a separate bowl mix the sugar with the yeast and 1 cup of the flour. When the oatmeal mixture has cooled to lukewarm add the yeast-flour mixture. Stir in the salt and remaining 5 cups of flour. Knead dough for 6 to 8 minutes. Place the dough in a covered greased bowl and let rise until doubled, about 1 1/2 hours.

- Add oats and butter to the bowl of a stand mixer or large mixing bowl. Heat milk to a simmer and pour on top, stirring to combine. Set aside for about 1.5 hours. Mixture should be at room temperature.
- Add honey, warm water, instant yeast, and salt to the bowl and stir well to combine. Add the whole wheat flour and mix on medium-low speed until combined. Add the all-purpose flour, a little at a time, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky (don't add too much flour!). Knead for a few minutes until smooth and elastic and scrape down the sides and bottom of the bowl as needed.
- First Rise: Transfer dough to a greased bowl and cover with a dish towel or plastic wrap. Allow to rise until double in size, about 1 hour.
- Punch down the dough and divide into two equal pieces. Shape into loaves and place in two lightly greased loaf pans. Make egg wash and gently brush some over the top of each loaf. Sprinkle a small handful of dry oats on top.
- Second rise: Cover with a well greased piece of plastic wrap gently laid on top and let rise in a warm place until risen about 1 inch over the loaf pans, 45 minutes to 1 hour. Carefully peel off the plastic wrap.
- Bake at 350 degrees for 30 - 40 minutes. Loaves are done when tapping lightly on the tops produces hollow sound (or when instant read thermometer registers 200° F). Cool for 15 minutes on wire rack, then turn out of pans and cool completely.

- Warm the milk in a small saucepan to no more than 100 degrees F (40 degrees C). Sprinkle the yeast overtop and let stand until the yeast softens and begins to form a creamy foam, about 5 minutes; stir in the sugar.
- Whisk the whole wheat flour, all-purpose flour, oatmeal, and salt together in a mixing bowl. Make a well in the center and pour the milk mixture into the well. Stir until the dough has pulled together. Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.

- Position rack in middle of over and preheat to 375 degrees.
- Generously coat a 9 x 5 inch loaf pan with cooking spray.
- Sprinkle 1 Tablespoon oats in the pan, coating the sides and bottom with the oats.
- Thouroughly stir together whole-wheat flour, all-purpose flour, baking powder, baking soda and salt in a large bowl.
- Using a fork, beat together 1 cup of oats, yogurt, egg, oil and honey in a medium bowl until well blended.
- Stir in milk.
- Gently stir the yogurt mixture into the flour mixture just until thoroughly incoporated but not overmixed (excess mixing can cause toughening).
- Immedieatley scrape the batter into the pan, spreading evenly to the edges.
- Sprinkle the reserved 1 Tablespoon oats over the top of loaf.
- Bake the loaf until well browned on top and a toothpick inserted in the center comes out clean, 40 - 50 minutes. (It's normal for the top to crack).
- Let stand in the pan on a wire rack for 15 minutes. Run a table knife around and under the loaf to loosen it and turn it outo the rack.
- Let cool until barely warm, about 45 minutes.
MOIST BAKED OATMEAL
This recipe is adapted from Gourmet Magazine Dec 2007 Issue. The recipe calls for dried raisins but I use whatever I have on hand which is a bunch of different dried fruits. The texture is somewhere between bread pudding and cake. I omitted the sugar from this recipe, you might want to add between 2 Tb and 1/4 cup to the oat mixture.

- Set oven to 350°F Spray with non-stick an 8-in square baking dish.
- Mix oats, dried fruits, baking powder, 1 1/2 tsp cinnamon, and salt.

MOIST OATMEAL BREAD
This recipe produces a very flavorful, satisfying bread. The gluten powder isn't necessary, but it makes a fluffier loaf. This is another heirloom recipe that comes from "Old Fashioned Bread Recipes with Historical Notes" (1987). Yeast breads require kneading by hand and are messy, but there is nothing as satisfying as the smell and taste of bread you've made by yourself.

- sprinkle yeast into warm water and allow to dissolve. Set aside.
- In a large mixing bowl, combine the wet ingredients and oats and salt. Mix well.
- In a separate larger bowl combine dry ingredients--wheat germ, flour, etc.
- Gradually mix dry flour mixture into oats mixture, blending well, until a soft dough is formed. (I usually do this with a wooden spoon.) Add a little more flour if dough is still sticky.
- Coat hands well with vegetable oil so dough will stick less.
- Knead dough by hand for 8-10 minutes on a floured bread board or hard surface.
- Form dough into a ball, place in a greased bowl. Cover with cloth and place in a warm place and let rise to double in bulk, about 1 hour.
- Punch down and form into two loaves. Place in two greased 9 x 5-inch loaf pans, and let rise again until well rounded above tops of pans.
- Bake in preheated 350 degree F oven 55-60 minutes.

Drain and pat dry the raisins and toss in a bit of flour. Add the raisins to the dough and knead in, adding a bit more flour, as needed, until you have a moist dough that cleans the bowl well.
