This light mixed fruit cake recipe is all you ever need for an easy, moist and lightly fruited cake, perfect for Christmas and even weddings!

250 g plain flour
240 g brown sugar
275 g butter (at room temperature)
4 eggs (at room temperature)
85 g raisins
85 g sultanas
40 g ground almond
60 g glace cherries
60 g mixed peel
30 g candied ginger
1 ⅓ tbsp molasses (optional)
½ tsp mixed spices
⅛ tsp baking powder
⅓ tsp lemon juice
½ tsp vanilla essence
½ tbsp orange juice
⅛ tsp salt

Steps:

  • Preheat oven to 160 °Celsius. Grease and line cake tin with parchment paper and wrap the tin with 2 layers of brown paper or baking strips.
  • Chop the fruits if you like them chopped and mix with ground almond. Leave aside.
  • In a separate bowl, cream butter and sugar till light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in all essences, lemon juice, and molasses and mix well.
  • Gently fold in the sifted dry ingredients alternately with orange juice. Mix until flour is well incorporated in the batter.
  • Add the mixed fruits into the batter and mix well.
  • Pour batter into a greased and lined cake tin and bake for about 2 hours and 10 minutes on the lowest rack.
  • Remove cake from the oven and let it rest in the tin for 10 minutes. Remove cake from tin and let it cool completely.
  • Once completely cooled, wrap it neatly in parchment paper, followed by cling wrap and foil and store in a cool, dry place for 1 week before icing or cutting the cake.

Fruitcakes have become the punchline of many a holiday joke, but this recipe will give the notorious seasonal gift a whole new reputation. Filled with loads of real dried fruit and nuts along with brandy, warm spices and citrus, this cake tastes like the holidays. The recipe makes two loaves so you can gift one.

1 1/2 cups golden raisins
1/2 cup dried currants
1 cup dried apricots, halved
1 cup dried figs, halved
1/2 cup pitted prunes
1/2 cup whole pitted Medjool dates, halved
2 cups walnut halves
1 cup pecan halves
Finely grated zest of 2 small oranges
Finely grated zest of 2 small lemons
2 tablespoons chopped candied ginger
3/4 teaspoon pumpkin pie spice
Pinch ground cloves
1 cup brandy, plus 2 tablespoons for brushing
1/4 cup orange liqueur
1/2 cup unsulfured molasses
Nonstick cooking spray
2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon kosher salt
2 sticks (1 cup) unsalted butter, at room temperature
1 1/2 cups lightly packed dark brown sugar
4 large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract

Steps:

  • Combine the raisins, currants, apricots, figs, prunes, dates, walnuts, pecans, orange zest, lemon zest, candied ginger, pumpkin pie spice and cloves in a large bowl and toss to combine. Add 1 cup of the brandy, orange liqueur and molasses and stir to coat. Cover and set aside to macerate overnight. (Alternatively, cover the bowl and microwave 2 minutes, or until very hot. Leave covered and let sit until almost all the liquid has been absorbed into the fruit and nuts, about 2 hours.)
  • Preheat the oven to 275 degrees F. Spray two 9-by-5-inch loaf pans with nonstick cooking spray and line each with 2 pieces of parchment, one lengthwise and one crosswise, leaving a 2-inch overhang on each side. Spray the parchment with cooking spray.
  • Sprinkle 1/2 cup flour over the soaked fruit mixture and toss to coat. Whisk together the remaining 1 1/2 cups flour, baking soda, baking powder and salt in a large bowl.
  • Cream the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment on medium-high until light and fluffy, about 1 minute. Add the eggs, one at a time, making sure each is fully incorporated before adding the next and scraping down the sides of the bowl as needed. Beat in the vanilla. Reduce the speed to medium-low and beat in the flour mixture until the batter is blended and smooth. Pour the batter over the fruit mixture and fold with a rubber spatula until all the fruit is coated in batter.
  • Divide the mixture evenly between the two prepared pans, filling each about 3/4 full. Bake until the cakes begin to pull away from the sides of the pans, the tops spring back slightly when pressed and a cake tester comes out clean, about 1 1/2 hours. Transfer to a wire rack and brush with the remaining 2 tablespoons brandy. Let the cakes cool in the pans for about 15 minutes. Carefully remove each cake from its pan using the parchment overhang and place on the rack to cool completely.
  • To store, wrap each loaf tightly in plastic and then foil. The wrapped fruitcakes can be stored in a cool, dry place for up to 3 months.

2 1/4 cups raisins
3 cups sultanas
1 cup currants
1 cup glace cherries (chopped)
1 1/2 cups prunes (pitted and coarsely chopped)
1/3 cup golden syrup
1/2 cup brandy
2 teaspoons orange rind (finely grated)
250 g butter (softened)
1 cup dark brown sugar (firmly packed)
5 eggs (lightly beaten)
1 1/2 cups plain flour
2 teaspoons mixed spice
1 tablespoon brandy (extra)

Steps:

  • Place dried fruit, golden syrup, brandy and rind in a large bowl cover and stand overnight.
  • Grease a deep 20cm square cake pan, line with 3 layers of paper, allow paper to come 5cm above the sides of the pan.
  • Cream butter and sugar in small bowl with electric mixer until creamy, Add eggs one at a time, beat well between each addition. The mixture may curdle but this will not affect the end result.
  • Add soaked fruit, flour and mixed spice to butter mixture and mix thoroughly.
  • Spoon mixture into pan and drop pan onto bench to settle contents.
  • Bake at 140°C for 4 hours turning pan a quarter turn several times through the cooking time to allow it to cook evenly,.
  • If the cake starts to over brown on top, cover lightly with foil.
  • Remove cake from oven when cooked and brush top with extra brandy, allow to cool in pan.
  • When cool remove from pan and wrap in clear plastic and store in a airtight tin or wrap in foil.

I adapted this from other recipes to come up with a cake that is both light and moist, as opposed to the denser varieties of fruitcake. Feel free to drizzle on more liquor after it is cooked to keep moist if you are not eating it right away.

1 lb candied fruit (in the grocery section)
1 cup golden raisin
1 orange, zest of
1 cup dark rum
1 cup shredded coconut
8 tablespoons butter or 8 tablespoons margarine
1 1/2 cups sugar
1/2 teaspoon salt
3 eggs
2 teaspoons vanilla
4 cups self raising flour
1 tablespoon baking powder
1 tablespoon baking soda
1 cup sour cream

Steps:

  • Soak the candied fruit, the raisins and the orange zest in the rum for 2 hours.
  • Using an electric beater, cream together the butter and sugar.
  • Add the vanilla, eggs and sour cream and beat together.
  • In a separate bowl sift together the flour, salt, baking powder and baking soda.
  • Slowly add the flour mix into the butter mixture, stirring until incorporated.
  • Add the soaked fruit with its rum, and the coconut, Stir well.
  • Grease and line with greaseproof paper 2 large loaf pans.
  • Divide the cake mix between the 2 loaf pans.
  • Bake at 350°F on middle rack for 1 1/2 hours, or until an inserted knife comes out clean.
  • Cool and remove from pans.

My dad started making this fruitcake about 30 years ago. Everyone who hates fruitcake likes this, and everyone who likes fruitcake LOVES this. Many people say this is the ONLY fruitcake they will eat. I hope you'll try this. Just follow the directions EXACTLY, and you'll have the most wonderful fruitcake ever!

14 ounces sweetened flaked coconut
8 ounces chopped sugar rolled dates
16 ounces pecan pieces
8 ounces candied cherries
8 ounces diced candied pineapple
2 (14 ounce) cans sweetened condensed milk

Steps:

  • Place coconut, dates, and pecan pieces in a very large (7 quart or larger) bowl. With your hands break up chunks of dates & coconut, and stir those 3 ingredients together.
  • Add the cherries, pineapple, and sweetened condensed milk. Stir thoroughly. (I wear non-powdered surgical gloves, and stir it with my hands because the mixture is very stiff.).
  • Let set at room temperature while you prepare the pans. Spray 2 - 9"x5" loaf pans with Pam. Line the pans with waxed (or parchment) paper. (We cut parchment paper in 4 1/4"x 16 1/4" and 8"x 12 1/2" strips for this. You want the paper to come up past the sides of the pans after the mixture is packed into the pans. It seems like a lot of work, but it's well worth the effort!) Now spray the paper (after you've pressed it into the pans) with Pam.
  • Stir the ingredients well again.Divide the ingredients equally between the 2 loaf pans.
  • Pack VERY TIGHTLY and smoothly into the pans. (I wet my hands & press, pack down, & smooth top, using both hands. Wetting your hands keeps them from sticking to "batter".).
  • Place the pans on the middle rack of the oven and bake at 300 degrees F for 1 hour, or until lightly browned. (If the cakes have baked for an hour, or look a little brown around the edges, take them out of the oven & lift edges of paper a little to see if sides look brown enough. If they're brown on sides, but not on top, you may broil the tops for a few minutes-watch carefully.).
  • Remove cakes from oven and let cool for 10 minutes in the pans.
  • Gently lift the edges of the paper a couple of times on each side - kind of a rocking motion. Turn pans upside down onto a paper-lined cookie sheet. Lift pans from the cakes. Remove paper from bottom of cakes IMMEDIATELY.
  • Let cool completely. Place in a large container (don't wrap yet) and refrigerate overnight.
  • Turn cake upside down to slice. After slicing, wrap in waxed (or parchment) paper, then in heavy duty aluminum foil.
  • May be refrigerated up to 3 months or frozen up to 1 year.
