I got this recipe from a fishing magazine years back and it wound up my make again section. Goes well with a platter of rice or a hot baked potato.

4 walleyed pike fillet
6 -8 tablespoons melted butter
1 tablespoon lemon juice
1/3 cup mushroom (sliced)
2 tablespoons finely chopped onions
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Dip fish in melted butter, salt, pepper and lemon juice.
  • Place fish fillets into shallow baking pan.
  • Place mushrooms and onions over the top of fish, then spoon any remaining butter mixture over fish.
  • Bake at 350°F for 15-20 minutes until fish flakes.

Walleye Fillets 2 lbs (973 g)
Onion, White - Sliced 1/2 cup (1.25 oz) (35 g)
Olive Oil 1 tablespoon (0.55 oz) (16 g)
Lawry's, seasoned salt 1/2 teaspoon (0.1 oz) (3 g)
Morton's Seasoning Blend 1/4 teaspoon (0.05 oz) (1 g)

Steps:

  • Gather all of your ingredients to make your oven-baked walleye.
  • Pre-heat the oven to 350° Fahrenheit.
  • Using a standard baking sheet, cut a piece of foil that is double the size of the sheet pan.
  • Cover the sheet pan with ½ of the foil so that the shiny side is down, and the dull side of the foil is up. The idea of this is to be able to fold the other ½ of the foil over the fish and seal to cook.
  • Spread the olive oil on the sheet pan foil.
  • Sprinkle some of the seasoned salt and pepper onto the oiled foil.
  • Lay the walleye fillets in a single layer on top of the seasoned oil, making sure that you are doing this on the sheet pan.
  • Lightly season the fish fillets one last time.
  • Slice the onion into thin rings, separate the rings and place onto the top of the walleye fillets.
  • Fold the foil over so that you are completely covering fish. Roll the foil ends together starting with the opposite side of the folded foil. Then roll both the end sides to completely sealing the fish into the foil pouch.
  • With a sharp knife, gently poke a few holes into the top of the foil pouch. Make sure to not puncture the bottom of the foil.
  • How Long to Bake Walleye?Place the sheet pan into the pre-heated oven and bake for 30 to 45 minutes.
  • Check the oven baked walleye fish after 30 minutes to see if the fish is done. To do this, use a fork to try and flake the thickest part of the fish. You want the fish to flake easily and be white in color. If you see any translucent color or if the fillets do not want to flake apart easily, then put back into the oven and cook for 10 - 15 minutes longer.

1 (6 to 8-ounce) walleye fillet
Salt and freshly ground black pepper
Flour, for dredging
2 tablespoons butter
1-ounce sliced white mushrooms
1-ounce diced tomatoes
Garlic Wine Sauce, recipe follows
6 ounces linguini, cooked
Lemon wedges, for garnish
1 tablespoon butter
4 ounces chopped garlic
6 cups hot water
2 ounces clam base (bouillon)
1/4 cup white wine
3 tablespoons lemon pepper

Steps:

  • Season both sides of the walleye with salt and freshly ground black pepper. Coat both sides of the walleye fillet with flour, tapping off the excess. Heat the butter in a medium nonstick skillet over medium-high heat and cook the walleye on one side for 2 to 3 minutes, or until golden. Turn the fillet over and cook until fish is opaque and cooked through. Remove to a plate and keep warm. Add the sliced mushrooms and diced tomatoes to the fish pan and cook until mushrooms are golden and any liquid has evaporated. Add some of the garlic wine sauce and season with salt and pepper, to taste. Serve the fish over linguini and top with the pan sauce. Garnish with a lemon wedge.
  • Melt the butter in a medium saucepot over medium heat. Add the garlic and saute until beginning to brown, about 5 minutes. Add the water, clam base, white wine, and lemon pepper, and simmer until reduced and thickened, about 10 minutes.

I have used flounder, catfish, grouper, perch and tilapia with great results.If your fish is not getting crispy try broiling it for a minute or so to get it crispy. Oh and parmesan from a can is ok but treat yourself and use freshly grated. You will be oh so happy you did.

This is so simple, I can't believe I couldn't find it anywhere on zaar. The onion keeps the fish from drying out and gives a lovely mild flavor. We especially like Telipia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix from hubby's Indiana hometown spice factory www.marionkay.com). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.
