1 ½ cups water
1 ½ cups raisins
¾ cup dates, pitted and chopped
1 teaspoon baking soda
½ cup butter
¾ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
¼ teaspoon salt
4 tablespoons butter
½ cup brown sugar
2 tablespoons heavy cream
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. In a saucepan, combine water and raisins. Bring to a boil and cook for 5 minutes. Remove from heat and stir in chopped dates and baking soda. Set aside.
  • In a large bowl, cream together 1/2 cup butter and 3/4 cup white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, salt and date mixture. Pour batter into prepared pan.
  • Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove cake from oven, and set oven to Broil.
  • Make Topping: In a saucepan, melt 4 tablespoons of butter. Stir in brown sugar, cream and chopped nuts. Spread mixture over warm cake and place under broiler until lightly browned, about 3 minutes. Watch carefully - it burns easily under the broiler. Cool before serving.

This is one of my sister's contributions to the family cookbook. It makes a deliciously moist cake and is wonderful with a dollop of cream.

500 ml flour
400 ml sugar
1 egg
2 ml baking powder
375 ml butter
1 1/2 cups pitted dates, chopped
250 ml boiling water
5 ml baking soda
1 pinch salt
45 ml butter
45 ml milk
45 ml sugar

Steps:

  • Put dates in boiling water with baking soda and leave to cool.
  • Cream sugar, butter and vanilla extract.
  • Add egg and dates and mix in well.
  • Add all dry ingredients.
  • Place in prepared baking pan and ake at 180C for 45 minutes.
  • 5 minutes before cake comes out of oven, boil topping ingredients together for 3 minutes.
  • Stab cake with knife and pour topping over as it comes out of the oven.
  • Serve warm or cool.

1 8-ounce package chopped, pitted dates
1 1/2 cups boiling water
1 1/2 teaspoons baking soda
3/4 cup vegetable shortening (I use butter-flavor Crisco)
1 cup granulated sugar
2 larges eggs, lightly beaten
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1/3 cup chopped Fisher walnuts
1/4 cup coarse sparkling sugar, optional

Steps:

  • Preheat oven to 350°F. Line the bottom of a 9 x 13 inch pan with parchment paper and spray with nonstick cooking spray.
  • Place dates into a medium, heat-resistant bowl and pour boiling water over the dates. Stir in baking soda. The mixture may foam up a bit, this is completely normal. Set bowl aside to cool for 15-20 minutes.
  • Once dates have cooled, use an electric mixer to cream together the shortening and sugar until light and fluffy.
  • Add in eggs and vanilla and mix until fully incorporated. Stir in the dates and liquid.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the shortening mixture and mix until just combined. Fold in chocolate chips and walnuts.
  • Pour batter into prepared pan and spread the batter evenly. If desired, sprinkle the top of the batter with coarse sugar.
  • Bake in preheated oven for 40-45 minutes.
  • Tightly cover leftover cake and store at room temperature for up to 3 days.

Despite being very low in fat it has a lovely light, moist texture, thanks to the dried dates, and makes a pleasant alternative to a conventional fruited cake. It's delightfully easy to make, and keeps well too.

Steps:

  • Place the dates in a bowl with the butter and bicarbonate of soda. Pour over the boiling water and stir until the butter has melted. Set aside to cool.
  • Preheat the oven to 180ºC (350ºF, gas mark 4). Lightly grease an 18 cm (7 in) round deep cake tin and line the bottom with baking parchment.
  • Place the sugar and eggs in a large bowl and beat well to combine. Add the cooled date mixture, then sift in the flour, baking powder, mixed spice and salt. Add the walnuts and stir together until thoroughly mixed.
  • Pour the mixture into the prepared tin and level the top. Bake for 1-1 1/4 hours or until the cake is risen and nicely browned and a skewer inserted in the centre comes out clean.
  • Turn out onto a wire rack and leave to cool. The cake can be kept, wrapped in foil or stored in an airtight container, for up to 5 days.

1 1/2 cups unbleached bread flour (King Arthur's brand)
1 tsp cinnamon
2 tsp vanilla extract
1 cup pecans (chopped (walnuts would be great too))

Steps:

  • Place chopped dates in a large bowl and sprinkle with baking soda.
  • Pour boiling water over the dates and let sit until cool.
  • In the bowl of an electric mixer, cream butter and both sugars and then add the beaten eggs.
  • Mix until creamy.
  • Sift the flours with the teaspoon of cinnamon and then slowly add to the butter mixture until all is incorporated.
  • Add vanilla, dates (with water) and chopped nuts and stir until blended.
  • Pour into two 9 inch greased and floured cake pans and bake at 350 degrees for 35-45 minutes or until a toothpick inserted into the center comes out clean.
  • Cool on wire racks.
  • Sprinkle with powdered sugar before serving.
  • This can also be served topped with fresh whipped cream.

Steps:

  • Preheat oven to 350 degrees F (175 C). Grease and flour two 8 inch round cake pans. Set aside. Put dates in a bowl with soda and pour boiling water on top. Set a side.
  • In a large mixing bowl, mix together 1 cup sugar, 2 1/2 cups flour and 1 cup chopped walnuts. Add egg, 1 teaspoon vanilla, pinch of salt and tablespoon butter. Mix to combine. Finally, stir in chopped dates with liquid. Mix well. Pour batter into prepared pans.
  • Bake for 25 to 30 minutes. Cake will pull away from sides of pans and be golden brown.
  • In a medium saucepan, combine buttermilk, 1 cup sugar, pinch of salt and 4 tablespoons flour. Cook on medium heat until thickened. Stir in 1 teaspoon vanilla and remaining cup of walnuts.
  • Spread mixture between layers and on top of cake. Let filling run down the sides of cake.

2 large apples - peeled, cored and slice into 2-inch size
125g all-purpose flour
1 tsp baking powder
¼ tsp salt
113g unsalted butter - soften at room temperature
130g caster sugar
2 large eggs
2 tbsp milk
1 tsp vanilla extract
3 tbsp dark rum (omit if not available)
1 tbsp granulated sugar for sprinkling

Steps:

  • Preheat oven at 175°C.
  • Butter the base and sides of an 8-inch round or square pan generously and line the base with non-stick baking paper.
  • In a medium bowl, add flour, baking powder and salt together. Mix well with a whisk.
  • Cream butter and sugar with an electric whisk until pale and fluffy. It should come together in 2 mins.
  • Add in eggs, milk, vanilla extract, rum and mix until combined. If it looks grainy that's okay.
  • Add in flour mixture and mix on low speed until flour just disappear. Do not over mix.
  • Fold in apples with a spatula.
  • Transfer batter into the baking pan and level the top with the spatula.
  • Sprinkle sugar over the top and bake for 35 to 40 mins, until golden brown.
  • Insert a bamboo skewer into the center of the cake to test. If it comes out clean, then it is ready.
  • Transfer onto a cooling rack and allow to cool for 5 mins before removing from the pan.
  • Cool the cake for another 30 mins before cutting into it.
  • Dust with generous amount of powdered sugar and serve.

  • Preheat the oven to 170C/340F/gas 3. Grease and line 20cm/8inch cake tin
  • Place the raisins, dates, sultanas,and currents into a pan together with the butter, water and condensed milk. Slowly bring to the boil, stirring frequently to prevent the mixture from burning. Reduce the heat and simmer for 3-4 minutes
  • Transfer the mixture to a heatproof bowl and set aside to cool
  • Mix together the wholemeal flour, plain flour, salt and bicarbonate of soda in a separate bowl
  • When the fruit mixture has cooled, fold it into the flour along with the marmalade until smooth and well combined. Spoon the mixture into the prepared tin
  • Cover the tin with a double layer of baking parchmonet, then bake the cake in the oven for 13/4 hour, or until the cake is springy to touch and a skewer inserted into the middle comes out clean
  • To serve, allow the cake to coll for 10 minutes in the tin before turning out onto a cooling rack
