2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup white sugar
3 ripe bananas, mashed
1 cup mayonnaise
½ cup chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Stir the flour, baking soda, baking powder, and sugar together in a bowl. Add the bananas, mayonnaise, and chocolate chips; stir until well combined. Pour into prepared muffin cups to about 3/4 full.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly grease 10 muffin cups, or line with muffin papers.
  • In a large bowl, mix together flour, baking soda, baking powder, and salt.
  • In another bowl, beat together bananas, sugar, egg and melted butter.
  • Stir the banana mixture into the flour mixture just until moistened.
  • Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, flour and cinnamon.
  • Cut in butter until mixture resembles coarse cornmeal.
  • Sprinkle topping over muffins.
  • Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray 10 muffin cups with cooking spray.
  • Whisk 1 1/2 cups sifted whole wheat flour with baking soda, baking powder, salt, and 1/2 teaspoon cinnamon in a large bowl. Mix together mashed bananas, 1/2 cup melted unsalted butter, egg, white sugar, and vanilla extract in a separate bowl. Gently fold banana mixture into dry ingredients just until moistened; do not overmix. Spoon batter into prepared muffin cups, filling them about 3/4 full.

I often make muffins for my husband and our two teenage sons. I like to use whatever fruit is in season, and since bananas are available year-round, I make this recipe frequently.

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 large eggs
1 cup sour cream
1/4 cup butter, melted
2 medium ripe bananas, mashed (1 cup)
STREUSEL:
1/4 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt, baking soda and cinnamon. In a small bowl, beat eggs, sour cream, butter and bananas; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. , For streusel, combine sugar, flour and cinnamon in a small bowl; cut in butter. Sprinkle over muffins. Bake at 375° for 20-25 minutes.

1/2 cup shortening
1 cup white sugar
2 eggs
2 large ripe bananas, mashed
1/3 cup sour cream
1 pinch salt
2 cups sifted flour
1 teaspoon baking soda
1/4 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon cinnamon
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Preheat oven to 350.
  • Cream shortening and white sugar together.
  • Add beaten eggs and mashed bananas.
  • Stir in sour cream.
  • Sift flour, salt and baking soda together and add to banana mixture. Batter will be on the thicker side.
  • For streusel, combine sugar, flour and cinnamon in a small bowl; cut in butter.
  • Line or grease a muffin tin. Fill cups 3/4 full.
  • Sprinkle streusel topping over muffins.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

1/2 cup brown sugar, lightly packed (light or dark brown)
1/2 cup granulated sugar
1/2 cup all-purpose flour (*see note for gluten free option)
1 1/2 tsp ground cinnamon (optional, can be left out if you do not want cinnamon flavor)
1/8 tsp salt
1/4 cup unsalted butter, cold and cut into small pieces
1/8 tsp nutmeg

Steps:

  • Combine bananas and lemon juice in a small bowl and set aside for 15-30 minutes. Preheat oven to 375 F
  • In a large bowl, combine dry ingredients and whisk to get rid of any lumps. Add eggs, vanilla and milk and mix until just combined. Fold in bananas until combined. Line muffin tin with liners and scoop batter until 3/4 of the way full.
  • To make the streusel,
  • In a large bowl, stir together the brown sugar, granulated sugar, all-purpose flour, cinnamon and nutmeg.
  • Add the pieces of cold butter into the bowl and use a pastry blender or fork to cut the butter into the mixture until it is the texture of coarse meal.
  • Line a muffin tin with muffin cups. Using a large ice cream scoop, scoop the batter into the liners. Sprinkle each muffin with a generous handful of streusel mix. Bake for 13 minutes at 350.
  • Remove from the oven and let cool.
