1/4 cup brown sugar
1/2 cup milk
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Grease an 8 x 8 pan.
  • Combine all ingredients together.
  • Spread on prepared baking pan.
  • Bake for 25 minutes or until the edges are golden brown.
  • Immediately spoon into a bowl.
  • Top with warm milk, fresh fruit or brown sugar if desired.

3 cups rolled oats
2 eggs (beaten)
1/4 cup oil
1 cup vanilla-flavored soymilk
1/4 cup brown sugar
1/2 cup applesauce (or 1 mashed banana)
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla extract

Steps:

  • Mix together oil, sugar and eggs.
  • Add rest of the ingredients and thoroughly mix together.
  • Bake at 350 degrees for 25 minutes in a greased glass 9 x 12 pan
  • Serve warm and it is delicious topped with milk and bananas or with yogurt, berries, and other fruit.

Feel free to add whatever you would add to your regular oatmeal. I sometimes add nuts, raisins or blueberries. Add what you like and I hope you enjoy it!

1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 eggs, beaten
1/2 cup applesauce, I use chunky
1/2 cup brown sugar
1 cup vanilla yogurt, for topping

Steps:

  • Preheat oven to 325 degrees F.
  • In a large bowl combine the oatmeal, baking powder and salt.
  • Mix in milk, eggs, applesauce, brown sugar.
  • Pour into a greased casserole dish.
  • Bake at 325 for 45 minutes.
  • Serve hot, topping each with vanilla yogurt.

3 cups skim milk
6 tablespoons brown Sugar Twin
1 tablespoon butter
2 teaspoons ground cinnamon
1 1/2 cups old fashioned oats
1 cup peeled finely chopped apple
1/2 cup dried cranberries
1/2 cup coarsely pecans

Steps:

  • Preheat the oven to 350F degrees.
  • Coat a 9 in square pan with nonstick spray.
  • In a large saucepan, bring the milk, brown sugar, butter, and cinnamon to a boil.
  • Meanwhile, in a large mixing bowl, mix together the oats, chopped apple, cranberries, and nuts; spread evenly into the prepared pan.
  • When the milk mixture begins to boil, pour out evenly over the oatmeal mixture.
  • Bake uncovered for 30-35 minutes, ore until the liquid has been absorbed and the oatmeal is tender.
  • Cut the mixture into 6 servings, scooping each out into a cereal bowl.
  • Garnish with a sliced apple (if desired) and serve with a pitcher of milk.

100g porridge oats
1 tsp baking powder
1 banana, peeled and chopped
1 tbsp maple syrup or honey
2 eggs
pinch of mixed spice or ground cinnamon
100g chocolate chips, blueberries or raspberries, plus extra to serve
flavourless oil, for the ramekins

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Put the oats in a blender and pulse a few times until they start to resemble flour. Add the baking powder, chopped banana, maple syrup or honey, eggs and mixed spice or cinnamon, and whizz until smooth. Stir in the chocolate chips or berries.
  • Lightly oil four heatproof ramekins, then divide the batter between them. Bake for 20-25 mins, or until well-risen and the baked oats spring back when lightly pressed. Scatter with more chocolate chips or berries before serving, if you like.
