EASY HOMEMADE CROISSANT RECIPE
Steps:
- Place the flour, sugar, yeast, and salt in a large bowl and whisk together until combined.
- Slice the butter into 1/8-inch thick slices and toss in the flour mixture to coat.
- Add the milk and stir together until a stiff dough forms.
- Wrap the dough tightly in plastic wrap and chill for 1 hour.
- On a lightly floured surface, roll the dough into a long rectangle shape.
- Fold it into thirds (like a letter), turn 90 degrees, and repeat 4 to 6 more times, or until the dough has large streaks of butter in it but it is smooth and flat. (If at any point the butter starts to feel soft, chill it in the refrigerator or freezer until stiff.)
- Wrap tightly and chill for 1 more hour, then divide the dough in half and roll each portion out to a thickness of about 1/8-inch, in a long rectangle shape (approx. 10-inches wide by 22-inches long).
- Cut the dough into long, skinny triangles (about 5-inches at the wide end).
- Notch the wide end of each triangle with about a 1/2-inch cut, then roll from the wide end to the pointed end, tucking the point under the croissant.
- Place on a parchment-lined baking sheet, cover loosely with plastic wrap, and allow to proof until doubled in size (1 to 2 hours).
- Preheat the oven to 375 degrees F, and gently brush the croissants with egg wash.
- Bake for 15 to 20 minutes, or until puffed, golden brown, and flaky.

MOCK FRENCH PASTRY
This is a lovely and easy make ahead dessert. Especially good for summer...no need to turn on the oven!

Steps:
- Line a 7x11 inch pan with graham crackers.
- Cook pudding mix as per pkg.
- directions, but using only 2 1/2 cups of milk.
- Pour pudding carefully over graham crackers.
- Cool.
- Whip cream, and spread over cooled pudding.
- Cover with an additional layer of graham crackers.
- Add hot water to icing sugar and mix to a silken consistency.
- Spread quickly over graham crackers (this is only enough to make a very thin layer of glaze. I usually make 1 1/2 to 2 times the amount) Melt butter with chocolate chips.
- Drizzle over icing--I like to pipe straight lines of melted chocolate across the width of the pan, about 1/2 inch apart.
- Then, drag a knife through the lines up and down the length of the pan, about 1/2 apart.
- Makes a fancier"french pastry" presentation.
- Refrigerate overnight.

Steps:
- Using a food processor, pulse butter into flour until it resembles crumbs. pulse in sour cream just until a ball forms and it just begins to hold together, being careful not to over-mix.
- Roll out and fold over in three sections (like folding a business letter). Repeat 2-3 times to get the layers of puff pastry.
- Wrap in plastic wrap and refrigerate for a minimum of 30 minutes before using. Let sit for a few minutes or pound with rolling pin to get it pliable.

LOW CARB MOCK FRENCH TOAST
This is an awesome low carb alternative to regular french toast. Even though it is made with pork rinds, NO ONE would ever know. Even if you yourself don't like pork rinds just give this a try. The consistency is so much like REAL french toast. I eat this almost every day for breakfast.

Steps:
- (1) Mix eggs, cream, sweetener and cinnamon.
- (2) Crush pork rinds and mix with above mixture.
- (3) Allow to soak until it becomes a very thick and goopy batter (3-5 minutes).
- (4) Fry pancake style in butter until browned and flip over. Cook until done as you would french toast or pancakes.
- Serve with any LC syrup or make your own as follows:.
- (1) Cream butter until soft (use as much as you need for syrup). I melt it in the microwave.
- (2) Add maple extract and sweetener to taste.
