Nonstick baking spray
Four 1-ounce squares unsweetened chocolate
2 sticks butter
2 cups granulated sugar
4 large eggs
3 teaspoons pure vanilla extract
1 1/4 cups all-purpose flour
2 sticks butter, softened
5 cups powdered sugar
1/4 cup cocoa powder
1/4 teaspoon salt
1/2 to 3/4 cup brewed coffee, cooled to room temperature

Steps:

  • Preheat the oven to 325 degrees F. Spray an 8-inch square baking pan with nonstick baking spray.
  • For the brownie batter: Place the chocolate in a microwave-safe bowl. Melt the chocolate in the microwave in 30-second increments, being careful not to let it burn. Set it aside to cool slightly.
  • In a medium mixing bowl, cream the butter and granulated sugar. Beat in the eggs. With the mixer on low speed, drizzle in the melted chocolate. Add the vanilla extract and mix. Add the flour to the bowl and mix just until combined; do not over mix.
  • Pour the batter in the prepared baking pan. Spread it to even out the surface. Bake until the center is no longer soft, 40 to 45 minutes. Set the brownies aside to cool completely before icing.
  • For the icing: In a large mixing bowl, combine the butter, powdered sugar, cocoa powder, salt and vanilla. Mix until slightly combined, then add 1/2 cup of the coffee. Whip until the icing is light and fluffy. If the icing is overly thick, add 1/4 cup more coffee. It should be very light and fluffy.
  • Ice the cooled brownies, spreading the icing on thick. Refrigerate until the icing is firm, and then slice the brownies into squares.

1 1/3 cups all-purpose flour
1 3/4 cups sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon vanilla extract
3/4 cup butter
3 fluid ounces boiling water
3 eggs
4 ounces chocolate chips (40-50% cocoa)
5 ounces chopped walnuts or 5 ounces pecan nuts
1/3 cup butter
8 ounces sweet dark chocolate or 8 ounces dark semi-sweet chocolate
2 tablespoons light corn syrup
2 tablespoons hot espresso or 2 tablespoons very strong coffee

Steps:

  • Preheat oven to 350 deg F.
  • Line a 13 x 9 cake pan with parchment paper and grease.
  • Melt butter in a saucepan.
  • In a large mixing bowl, mix flour, sugar, cocoa powder, baking powder and vanilla extract. Add eggs, melted butter and hot water and mix until smooth.Add chocolate chips and nuts.
  • Bake at 350 degrees for about 20-30 minutes or until a wooden pick inserted in center comes out clean.
  • While cake is baking make the frosting. Mix butter, chopped chocolate, syrup and coffee and heat in a double boiler until melted. Stir until smooth.
  • Cool cake and then frost.

I doctor up my favorite brownie mix- Duncan Hines Dark Chocolate Fudge to make this and a couple other variations. This one is my husband's favorite, and mine, as well.... so far - I'm not done fooling around with this! If you like rich mocha flavor, you should enjoy this. The computer wants me to say "Duncan Hines chewy Fudge Brownie" mix, but it's the "Dark Chocolate Fudge" mix I use!

1 (19 7/8 ounce) box Duncan Hines chewy fudge brownie mix
1/3 cup oil (I've been using Enova, supposed to be better for you)
1/3 cup water
1 -2 large egg (one for "fudgy", two if you want the brownies "cake like")
1/2 teaspoon pure vanilla extract (optional)
1/2 teaspoon coffee extract (optional)
2 teaspoons instant espresso (dry)

Steps:

  • I dump the dry mix into a large mixing bowl and add the two tsps of instant espresso to the dry mix.
  • In a measuring cup I put the 1/3 cup oil and 1/3 cup water, then add the vanilla and coffee flavoring, makes it easier for me.
  • Add the egg to the dry mix and then all the rest of the wet ingredients.
  • Stir by hand, as directed on the box, about 50 strokes - or until there aren't any ( or many) dry lumps.
  • Scrape the bowl into a prepared baking pan. The box calls for a 13 x 9 pan, but I spray the bottom of an 8x8 square pan with cooking spray and use that.
  • The package calls for a much longer baking time than I find necessary. I use my Cuisinart Toaster/ Oven/ Broiler and it takes 35 minutes at 350 degrees for it to be perfect.

1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
1 teaspoon instant coffee granules or instant espresso powder
1 teaspoon instant coffee granules or instant expresso powder
1 1/2 teaspoons very hot water
1 1/3 cups powdered sugar
1/4 cup butter, softened
1/2 teaspoon vanilla
2 tablespoons semisweet chocolate chips
1/2 teaspoon shortening

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 8-inch square pan with shortening or cooking spray. Make brownie batter as directed on brownie box. Stir 1 teaspoon instant coffee granules into batter. Spread in pan.
  • Bake 35 to 38 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely on cooling rack, about 1 1/2 hours.
  • In medium bowl, dissolve 1 teaspoon instant coffee granules in hot water. Mix in remaining frosting ingredients with electric mixer on low speed until combined; increase speed to medium and blend until light and fluffy. Spread frosting over brownies.
  • In small microwavable bowl, place chocolate chips and shortening. Microwave on High 30 to 45 seconds; until chips can be stirred smooth. Place into resealable food-storage plastic bag; partially seal bag. Cut small tip from corner of bag; drizzle over frosting. Refrigerate about 15 minutes or until chocolate is set. Cut into 4 rows by 4 rows. Store covered at room temperature.

1 1/2 cups unsalted butter, room temperature
1/4 cup finely ground espresso beans
1/2 teaspoon salt
2 1/2 cups sugar
2 large eggs

1 1/4 cups all purpose flour
1 cup pecans, coarsely chopped
1/4 cup Kahlua or other coffee liqueur
1 tablespoon unsalted butter, softened
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Preheat oven to 325 degrees F. Butter and flour 9-by-12-inch baking pan. Line bottom of pan with parchment paper; butter and flour paper. Combine chocolate, butter, espresso and salt in top of double boiler over simmering water. Stir until chocolate melts and mixture is smooth. Cool.
  • In large bowl, combine sugar, eggs and 1 teaspoon vanilla and whisk until smooth. Add melted chocolate mixture and whisk until smooth. Gently fold in flour, just until it disappears. Fold in pecans. Pour into prepared pan; smooth top.
  • Bake until toothpick inserted into center comes out clean, about 35 minutes. Cool brownies on rack 1 hour.
  • Whisk Kahlua, vanilla and butter in small bowl until well blended. Add powdered sugar and whisk until smooth icing forms. Spread over brownies and let set at least 1 hour before cutting.

1 cup slivered almonds, toasted
1 stick butter, softened
4 cups powdered sugar, divided
1 1/2 teaspoons instant espresso powder
1/2 cup chocolate syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9 by 13-inch baking pan with nonstick cooking spray.
  • In a large mixing bowl, combine butter, coffee, and brown sugar. Beat with an electric mixer on medium speed until light and fluffy. Add egg, almond extract, water, and cake mix and beat until smooth. Stir in almonds.
  • Turn batter into prepared pan and smooth to edges. Bake for 30 to 35 minutes until tester comes out clean. Cool completely before icing.
  • For icing: In a small mixing bowl, beat butter with powdered sugar, adding the sugar 1 cup at a time, until light and fluffy. Beat in espresso powder and chocolate syrup until smooth.
  • Ice brownies and cut into squares.

4 teaspoons instant coffee granules, or more to taste

½ cup butter, softened
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Melt shortening and 1/2 cup butter in a small pan over low heat; pour melted mixture into a mixing bowl. Stir cocoa into butter mixture until well combined, followed by sugar.
