SLOW COOKER PASTA FAGIOLI SOUP
This Italian pasta fagioli soup is fairly healthy and tasty, and easy to make in a slow cooker.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef into a slow cooker.
- Add beef stock, diced tomatoes, spaghetti sauce, red and white kidney beans, beef broth, onion, carrots, celery, parsley, oregano, pepper, salt, and hot sauce to the slow cooker.
- Cover and cook on Low for 7 to 8 hours or on High for 4 to 6 hours, adding pasta in during the last 15 minutes.

Steps:
- Combine roast, flour, salt and pepper in a large ziplock bag.
- Seal and shake to coat beef.
- Heat oil in a large skillet over medium-high heat.
- Remove beef from ziplock bag, discard any excess flour mixture.
- Sauté beef until browned, about 5 minutes.
- Place meat into slow cooker.
- Add onion soup mix, beef broth,
- tomato paste and Worcestershire sauce.
- Cover and cook on LOW for 8 hours, until beef is tender. (Adapt cooking time if you use venison, depending on which piece you choose some are soft and other aren't)
- Open and add noodles to slow cooker and cover again.
- Cook on LOW for 15-30 more minutes, until noodles are tender.

Steps:
- Trim excess fat from beef and season with black pepper.
- Heat the oil in a heavy based pan and cook the onion and garlic until tender-about 5 minutes. Remove.
- Add the beef to the pan. Turn, browning well all over.
- Add the remaining ingredients (except the pasta) and stir to combine. Bring to the boil, then reduce heat to a simmer.
- Cover and cook for 2 1/2 hours then remove meat to a warmed covered plate.
- Increase heat under sauce and cook without a lid for 15 minutes or until reduced to a sauce consistency. Season with more black pepper if you wish.
- Slice the meat and return to the sauce; serve over genrous portions of cooked pasta.

- Combine all ingredients in a 5- or 6-qt. slow cooker. Cook, covered, on low 8-10 hours or until steak and potatoes are tender. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

SLOW COOKER STEAK SOUP
I found this recipe in Southern Living and made it the other night for dinner. I don't know why it is called a soup there is really no broth. This to me is more like a stick to your ribs stew. I used carne asada cubed. This was so good. Try it with a good garlic bread. Awesome!
