wheat, chapatis 4
chopped onion, 2 tbsp
chopped carrot, 3 tbsp
chopped capsicum, 3 tbsp
chopped tomato, 2 tbsp
grated cabbage, 2 tbsp
red chili powder, 3/4 tsp
garam masala powder, 1/2 tsp
ginger, garlic paste 1tsp
cumin seed, 1/4 tsp
tomato sauce, 3 tbsp
salt, required
oil, requaired
coriander leaves

Steps:

  • Method.
  • Heat 1 tbsp oil in a pan, add cumin seeds as seeds crack ,add chopped onion,ginger - garlic paste and fry on low flame.
  • Add tomato,carrot,cabbage mix well and stir for 3 minutes.
  • Add red chilli powder,salt,garam masala powder, coriander leaves and cook on low flame for few minutes.
  • Filling is ready now and keep aside.
  • Assembling the kathi roll.
  • Take one roti / chapati ,spread a tsp of tomato sauce on it.
  • Place a spoonful of the vegetable filling on one side of the chapati.
  • Roll the chapathi tightly ,cut into halves and serve.
  • Enjoy.

  • Rinse and chop all veggies and take them in a pan or bowl that fits inside a 3 litre pressure cooker. You can also add your choice of veggies.
  • In a small bowl, take thinly sliced onions, chaat masala, kashmiri red chili powder or a pinch of red chili powder lemon juice.
  • Heat 2 tablespoons oil in a pan or kadai. Then add ¼ teaspoon ajwain (carom seeds) and ¼ teaspoon cumin seeds. Let them splutter.

  • Remove the seeds from red chili and soak in 2 tablespoons of hot water for few minutes. Blend all the ingredients together except peanut butter, soy sauce, ginger juice, sugar, lime juice, and sesame oil. After spices are blended to paste add peanut butter and blend enough to mix t well. Note: don’t over blend peanut butter will leave the oil.
  • Heat the skillet over medium high, lightly oil the skillet, place the tortilla over skillet for about half a minute, it will change in the color lightly and puff different places. Flip the tortilla over, and lightly brush the oil, flip it again and lightly brush the tortilla. tortilla should have light golden color on both sides.
  • Take one tortilla and put it over a flat surface. Spread about 2 tablespoons of peanut sauce over tortilla, leaving 1/2 inch around. Center of the tortilla spread the vegetables moderately, spinach, carrot, bell pepper, cucumber, cabbage, and cilantro. Roll them tightly like burrito.
