1 tablespoon olive oil
Salt and pepper
1 (3 pound) whole chicken, cut into 8 pieces, back removed and saved for stock
2 cups diced chorizo
2 Spanish onions, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
1 cup Valencia rice
1/2 cup dry white wine
1 pinch saffron
3 cups chicken stock, hot
1 (16-ounce) can peeled tomatoes, drained and crushed by hand
1 cup Spanish beer
16 large shrimp fresh shrimp, cleaned and de-veined
16 Manila clams, scrubbed
2 lobsters tails, shell-on and halved lengthwise
16 mussels, scrubbed (try and mix different varieties, if possible)
1 cup fresh shelled peas
1 cup Spanish olives with pimientos
2 roasted red bell peppers, peeled and sliced thinly

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in a large skillet or paella pan. Season and sear chicken pieces, then remove from the pan. Render the chorizo; add the onion, peppers, and garlic and saute for 2 to 3 minutes.
  • Add the rice, saute until golden, stirring so it won't burn. Add the seared chicken back to the pan, with the wine and saffron, and stir until all the wine is absorbed. Add 2 cups of chicken stock, 1/4 cup at a time, stirring until the rice absorbs the stock. Add the last cup of chicken stock, tomatoes, and the beer. Add the chicken, shrimp, clams, lobster, and mussels, tucking them into the rice.
  • Bake in the oven for 8 to 10 minutes until mussels open. Add the peas and olives and bake for 2 more minutes. Top with thinly sliced roasted peppers.

3 pounds skinned and boned chicken breasts
2 lobster tails
1 pound medium shrimp
1/2 pound small to medium scallops
12 Cherrystone clams, washed
12 mussels, washed and debearded
1 cup extra-virgin olive oil
2 large sweet yellow peppers, chopped
2 large Spanish or Vidalia onions, chopped
5 cloves garlic, pressed or minced
2 cups uncooked short grain rice
8 cups chicken stock
4 large tomatoes, peeled, seeded, and chopped
1/2 teaspoon saffron, ground into small pieces
Salt and freshly ground pepper
10 ounces frozen pea

Steps:

  • Pregame prep: If you purchase your seafood more than 1 day prior to your tailgate, clean and freeze the fresh seafood items, with the exception of the scallops. Store the mussels and clams together, and the shrimp separately. The night before your tailgate, move frozen seafood to the refrigerator. Prepare and store in separate plastic bags the following ingredients: 1) chicken breasts, washed and patted dry, 2) onions and yellow pepper chopped, 3) tomatoes, peeled, seeded, and chopped, 4) measure out the rice. Game Day: Pack food on ice for transport. Once at the tailgate location, light the grill in the direct method. Brush the chorizo, chicken, and lobster tails with olive oil. When the grill is hot, cook in the following order turning occasionally: 1) chorizo sausages 15 to 20 minutes; 2) lobster tails 15 minutes; 3) chicken breast 10 minutes.
  • As meat comes off the grill, chop the sausage, chicken and shelled lobster into 1-inch chunks and set aside.
  • Place an extra large skillet or paella pan on a propane burner or the grill and heat 1/4 cup of olive oil. Saute the yellow peppers and onions. When the onions are translucent, stir in garlic, add rice, and saute for five minutes. Add 6 cups of chicken stock, tomatoes, saffron, salt, and pepper. Bring to a boil. Stir in chicken, lobster, and sausage. Reduce paella to a simmer as the fire subsides or turn the propane burner down to medium low. Simmer for 30 to 40 minutes stirring occasionally to keep from burning.
  • Test the rice. If needed, add an additional 1 to 2 cups of chicken broth stir and simmer another 10 minutes. When rice is cooked, stir the frozen peas, shrimp, and scallops into the skillet. Layer the mussels and clams on top, and cook until the mussels and clams open approximately 5 to 10 minutes. Stir before serving.

1/2 pound medium shrimp, shelled and deveined
1 pound firm white fish (such as monkfish), cut into 1-inch cubes
1 pound squid, cleaned, cut into 1/2-inch rings, tentacles halved
Coarse salt
6 cups fish stock
1/4 teaspoon crumbled saffron threads
1/2 cup dry white wine
1/3 cup olive oil
2 green bell peppers, seeded and finely chopped
10 cloves garlic, minced
1 teaspoon paprika
3 tomatoes, peeled, seeded and finely chopped
3 cups short-grain rice
1 tablespoon finely chopped parsley
2 bay leaves
1/2 cup frozen organic peas
16 mussels, cleaned
Garlic aioli (recipe follows)
8 cloves garlic, peeled
1/2 teaspoon salt
2 egg yolks*
1 teaspoon red wine vinegar
Juice of 1/2 lemon
1 cup olive oil

Steps:

  • Place the shrimp, fish and squid in a colander, sprinkle with coarse salt and let sit while preparing the remaining ingredients. Combine the stock, saffron, and wine in a saucepan, and bring to a boil while cooking fish. Heat the olive oil in a wide paella pan set over two burners. Add the shrimp, fish, and squid, and cook for 2 minutes, stirring frequently. Remove the shrimp and fish, leaving the squid in the pan. Add the peppers to the pan, and saute 2 to 3 minutes. Add the garlic and saute another minute to release the aromas. Stir in the paprika and tomatoes, and saute 1 minute to release the aromas. Add the rice, toss to coat it with the tomato mixture, and stir in the parsley and bay leaves. Preheat an oven to 350 degrees F. Add the hot broth to the pan, along with the peas. Boil for 5 to 10 minutes, or until some of the liquid reduces. (Paella should have just enough liquid to cook rice, but not be soupy). Adjust seasonings. Stir in the reserved shrimp and fish, and arrange the mussels over the paella with the edges that will open facing up. Transfer paella pan to the oven and cook, uncovered, for 10 to 12 minutes, or until rice is almost cooked and most of the liquid is absorbed. Remove paella from oven, cover loosely, and let sit for 10 minutes before serving. Serve with the Garlic Aioli.
  • Mash the garlic with the salt, and combine with the egg yolks, vinegar, and lemon juice in a bowl. Blend with a whisk. Gradually add oil, a drop at a time, whisking constantly. As mixture begins to thicken and look like mayonnaise, add oil more generously. Adjust seasonings and store in refrigerator until ready to use.

Chicken:
1 tablespoon sweet or smoked paprika
2 teaspoons oregano
1 (3 pound) frying chicken, cut into 10 pieces
Paella:
1/4 cup extra-virgin olive oil
2 Spanish chorizo sausages, thickly sliced
Kosher salt and freshly ground pepper
1 Spanish onion, diced
4 garlic cloves, crushed
Bunch flat-leaf parsley leaves, chopped, reserve some for garnish
1 (15-ounce) can whole tomatoes, drained and hand-crushed
4 cups short grain Spanish rice
6 cups water, warm
Generous pinch saffron threads
1 dozen littleneck clams, scrubbed
1 pound jumbo shrimp, peeled and de-veined
2 lobster tails
1/2 cup sweet peas, frozen and thawed
Lemon wedges, for serving

Steps:

  • Combine the paprika and oregano in a small bowl. Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator.
  • Heat oil in a paella pan over medium-high heat. Saute the chorizo until browned, remove and reserve. Add chicken skin-side down and brown on all sides, turning with tongs. Add salt and freshly ground pepper. Remove from pan and reserve.
  • In the same pan, make a sofrito by sauteing the onions, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Then, add tomatoes and cook until the mixture caramelizes a bit and the flavors meld. Fold in the rice and stir-fry to coat the grains. Pour in water and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, chorizo, and saffron. Add the clams and shrimp, tucking them into the rice. The shrimp will take about 8 minutes to cook. Give the paella a good shake and let it simmer, without stirring, until the rice is al dente, for about 15 minutes. During the last 5 minutes of cooking, when the rice is filling the pan, add the lobster tails. When the paella is cooked and the rice looks fluffy and moist, turn the heat up for 40 seconds until you can smell the rice toast at the bottom, then it's perfect.
  • Remove from heat and rest for 5 minutes. Garnish with peas, parsley and lemon wedges.

3 tablespoons extra-virgin olive oil
6 ounces chorizo, sliced
6 ounces merguez (lamb sausage), sliced
6 ounces garlic sausage, sliced
1 large onion, finely chopped
1/2 cup red bell pepper, finely chopped
3 cloves garlic, minced
1 teaspoon Spanish smoked paprika
1 1/2 cups Spanish short-grain rice
1/2 cup tomato purée, fresh or canned
Salt
Freshly ground black pepper
1/2 tablespoon chopped flat-leaf parsley

Steps:

  • Heat stock in a saucepan. Add saffron and set aside. Heat oil in a 12- to 14-inch paella pan or cast-iron skillet. Add sausages and sauté on medium heat until lightly browned. Remove.
  • Add onion, bell pepper and garlic to same pan. Sauté until soft. Stir in paprika and rice. Stir in tomato purée. Strain stock and add. Return sausages to pan. Stir once, season liquid to taste and cook, uncovered, on medium about 25 minutes, until liquid is absorbed and rice is tender.
  • Remove from heat and place sheet of parchment paper on surface for 10 minutes. Remove parchment, scatter parsley on top and serve, making sure to include any crusty bits that cling to pan with each portion.

Rice should never be stirred while cooking paella. If you do not have fresh herbs for the bouquet garni, put 2 tbsps dried parsley, 1 tbsp dried thyme, 2 tbsp dried marjoram, 2 bay leaves, 2 tbsps dried celery leaves in a cheese cloth, tied into a pouch. Steps:

  • Peel and devein the shrimp, reserving the shells.
  • Bundle the sprigs of parsley, bay leaf, sprigs of thyme, leek, and cloves into a Bouquet Garni. You may use a string to tie them together.
  • In a 3-4 quart pot, combine the quartered onion, 2 garlic cloves, sliced carrot, Bouquet Garni, and broth or water. Bring to a boil, then reduce heat and simmer 45 minutes, or until fragrant.
  • Strain, discard the solids, season with salt, and set aside.
  • Scrub the littleneck clams and place in a medium pot with white wine, 2 garlic cloves, 2 tbsp chopped onion. Bring to a boil, reduce heat, cover, and cook for 5-6 minutes, until the clams have opened.
  • Remove from heat, allow to cool enough to handle, and remove clams from shells. Set aside.
  • Strain the broth through a fine-mesh strainer lined with cheesecloth and combine with enough of the shrimp broth to measure 7 cups. Season the broth with salt.
  • Transfer the broth to a saucepan and stir in the saffron threads, set aside.
  • Heat a medium skillet over medium-high heat and add the olive oil and chorizo. Cook, turning occasionally, until browned and blistered on all sides and cooked through. This should take about 10 minutes. Remove from heat and cut into 1/2" slices. Set aside.
  • Season the fish with salt.
  • Set a 12" or larger paella pan, braising pan, or 15" nonstick skillet over medium-high heat. Add and heat 2 tbsps olive oil.
  • Add the fish and sear until the surface is opaque, about 1 minute each side. Set aside on a platter. Add the shrimp to the pan and cook, stirring, just until they turn pink, about 1 minutes. Transfer to a platter.
  • Add olive oil and onion to the pan.
  • Cook, stirring occasionally until the onion begins to color. Meanwhile, bring the reserved broth to a simmer.
  • Add 8 cloves garlic and bell pepper to the onion. Cook, stirring for 30-60 seconds ensuring the garlic does not burn.
  • Add tomatoes, paprika and salt, stir and cook until fragrant (2-3 minutes).
  • Stir in the chorizo to the onion pan, then stir in the rice until it is coated with oil.
  • Add the bay leaf, peas, and green beans.
  • Add the broth and mussels. Be sure to push the mussels down into the broth.
  • Arrange the clams, shrimp, and fish over the top without pushing into the broth. Cook uncovered, at a moderate bubble, without stirring or poking for 20-24 minutes or until the broth has been absorbed.
  • Remove from heat, cover with foil and let sit undisturbed for 10-15 minutes.
