I found this recipe calling for only apples or peaches, but found it worked wonderfully with any fruit you have available. Please experiment! If using primarily apples, try a bit of shredded cheddar cheese, sprinkled on top of crumble topping the last 10 minutes of baking. Tastes wonderful with vanilla ice cream.

3 Granny Smith apples - peeled, cored and sliced
4 fresh peaches - peeled, pitted, and sliced
1 banana, sliced
½ cup raisins
¼ cup water
½ cup rolled oats
¼ cup brown sugar
½ cup all-purpose flour
½ teaspoon ground cinnamon
1 pinch salt
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). .
  • Combine apples, peaches, banana, raisins and water in a 7x11 baking dish.
  • In medium bowl, combine oats, brown sugar, flour, cinnamon and salt. Cut in butter with two knives or pastry blender until mixture resembles coarse crumbs. Sprinkle over fruit.
  • Bake in preheated oven 35 to 45 minutes, until topping starts to brown. Serve warm.

6 cups fresh fruit (See Kelly's Notes)
2 Tablespoons all-purpose flour
2 Tablespoons sugar
1 Tablespoon fresh lemon juice
1 cup all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon baking powder
1 Tablespoon fresh thyme leaves
1 teaspoon fresh lemon zest
1/4 teaspoon salt
8 Tablespoons (1 stick) unsalted butter, cubed and room temp

Steps:

  • Preheat the oven to 375°F. Grease an 8-inch square baking dish or a 10-inch cast-iron skillet with cooking spray or butter.
  • In a large bowl, toss together the fruit with the flour, sugar and lemon juice. (See Kelly's Notes for adjusting quantities.)
  • Pour the fruit filling into the prepared baking dish and set it aside.
  • In a medium bowl, whisk together the flour, sugar, baking powder, thyme, lemon zest and salt. Add the cubed butter, and using your fingers, work it into the flour mixture until moist clumps form.
  • Sprinkle the crumble mixture evenly atop the fruit then place the baking dish atop a baking sheet.
  • Bake the crumble for 35 to 40 minutes until the crumble topping is golden brown and the fruit is bubbling. Let it cool 5 minutes then serve topped with ice cream or whipped cream.
  • Any variety or combination of fruit will work great in this recipe, such as strawberries, raspberries, blueberries, peaches, plums, etc.
  • Adjust the amount of flour and lemon juice in the fruit filling depending on the juiciness and sweetness of the fruit. Fruits with more liquids (such as peaches) may require more flour, while tarter fruits (such as blackberries) may require less (or no) lemon juice.

For the crumble
225 g plain flour
90 g caster sugar
1 pinch salt
1 teaspoon powdered ginger
115 g unsalted butter
For the filling
100 g sugar
100 ml water
4 nice ripe pears, peeled, cored and cut into chunks
5 pieces stem ginger in syrup, finely chopped
1 lime, juice and zest of, plus extra for serving

Steps:

  • You can't go wrong with an old-fashioned crumble. Everyone loves it, and it's lovely and easy!
  • Preheat your oven to 200ºC/400ºF/gas 6.
  • Sift the flour into a bowl and add the sugar, salt and ginger.
  • Cut the cold butter into chunks and rub it into the flour mix with your hands until you get a mixture that looks a bit like fine breadcrumbs. This is the crumble topping.
  • To make the filling, boil the water and sugar together, then carefully drop in the pear chunks and simmer gently for a couple of minutes.
  • Add the chopped ginger and the lime zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish or four small ones.
  • Sprinkle the crumble topping over the top of the fruit, piling it high in the middle of the dish and leaving space at the edge for the caramel to bubble up.
  • Bake in the preheated oven for 25 to 30 minutes until the pears are cooked and bubbling and the crumble is golden on top. Serve with custard or a dollop of crème fraîche with lime zest grated over, if you like.
  • Tip: This crumble will work well with apples instead, if you prefer.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.

450g fruit, chopped into 1cm chunks (we used 400g Bramley apples and 50g fresh blackberries)
75g granulated sugar
50g butter, cold and cubed
100g plain flour
50g demerara sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Mix together the fruit and granulated sugar (you will need less sugar for canned fruit) so it's evenly coated. Tip into a pie dish where it fits snugly.
  • Rub the butter into the flour to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy. Add in the demerara sugar until combined and spread over the fruit until completely covered.
  • Bake for 35-50 mins until golden brown and bubbling, and the fruit is tender. Leave to cool for 5 mins before serving.

60g flaked almonds (optional)

  • Heat oven to 200C/180C fan/gas 6. Put the flour, oats, butter and sugar in a bowl and squash together with your fingers into a crumble texture. 4 -5 pears (if using other mixed fruits instead, just be sure to have about 4 lbs total)
3 tablespoons lemon juice

2/3 cup flour
3/4 cup brown sugar
1 pinch salt

Steps:

  • Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
  • Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
  • Combine the flour, sugar, salt and spices.
  • Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
  • Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
  • Add the rolled oats and mix. If the mixture seems sticky, add more oats.
  • Spread fruit evenly in a large glass or ceramic baking dish.
  • Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
  • Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
  • Serve it hot or warm, with ice cream, whipped cream, or all by itself.

1 (21 ounce) bag frozen mixed berries

  • Separated pineapple juice from chunks and in a food processor, puree the pineapple chunks and banana.
  • In a small sauce pan, reduce the pineapple juice to a syrupy consistency.
  • Combine the pureed fruit, pineapple syrup, frozen berries, apple, and applesauce in a large sauce pan and bring to a low boil.
  • Allow to cook until the apple are soft and the juices of the fruit have thickened.

Steps:

  • Pre heat oven to 108c or Gas mark 6 .
  • In a mixing bowl, begin to rub the margarine into the flour .
  • Add the sugar and the oats.
  • Prepare the apples by washing coring and slicing, leaving out the core.
  • Place the chopped apples into a pan some lemon juice or water with some water to taste. Cook the apples until soft or until they are at the desired texture.
  • Put the cooked apples into an oven proof dish and sprinkle over the sultanas, then spoon over the crumble topping.
  • Bake for 20-25 minutes or until the topping is golden brown.
  • Enjoy !
