BREAKFAST CASSEROLE - EASY & FLEXIBLE
This breakfast casserole recipe has so few ingredients and is super easy to make. Crescent rolls are now a staple at my house since so many recipes can be made with them.

- 1. Preheat oven to 350. Brown Sausage and drain. Spray a 9x13 pan with cooking spray. Unroll crescent rolls and press into bottom of pan. Press seams together to seal. Spread sausage over crust. Whisk together eggs and milk. Add salt and pepper to taste. Pour over sausage and top with cheeses. Bake 30 minutes or until eggs are set.
- 2. This recipe can be changed to suit your taste. Replace sausage with bacon or ham. Add other extras that you like. Last time I made it, I added 2 baked potatoes diced up and 3 green onions, diced.
FLEXIBLE BREAKFAST CASSEROLE
Sometimes I add more ingredients to the whole thing and make it in a 9x13. I bake this in a water bath. The beauty of this is you can add or leave out whatever you like or have on hand. I have made many varieties of this casserole for work and it's a hit every time. Everything is done the night before and it cooks while I'm getting ready for work. It's also a great holiday breakfast.

- Cut the bread into chunks to cover the bottom of a 9x9 (or 8x8) casserole dish.
- Spread cooked meat and veggies over the bread.
- Beat eggs & milk, add salt, pepper and any herbs. Pour over the bread/meat/veggie layers Make sure it just covers the bread, but isn't up to the top of the casserole dish or it will overflow when it bakes. Sprinkle the cheese over the top. Cover and let sit in the fridge over night. Bake at 350 in a water bath for about 45 minutes with foil on top, then remove foil and bake about 10 more minutes or until eggs are set.
BEST BREAKFAST CASSEROLE
This is my family's favorite breakfast recipe, always served on holiday mornings. It's great when complemented with fruit and resurrection cinnamon rolls. You can assemble this casserole, cover it with plastic wrap, and refrigerate it overnight before baking, if desired.

- Heat a large skillet over medium-high heat. Cook and stir sausage and water in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray. Spread crescent roll dough out into prepared baking dish to cover the inside of the dish completely. Prick dough all over with a fork.
- Bake in the preheated oven until slightly set, about 5 minutes.
- Beat eggs, milk, salt, and black pepper together in a bowl.
- Spray a large skillet with cooking spray and place skillet over medium heat. Cook and stir egg mixture in hot skillet until eggs are set, 3 to 5 minutes. Break up eggs into small pieces using a wooden spoon. Spread eggs evenly over crescent roll dough, spread sausage over eggs, and top with Cheddar cheese.
- Bake in the preheated oven until crust is browned and casserole is hot, about 25 minutes.
