GLAZED SMOKED HAM

- Preheat oven to 350 degrees F. Score the ham with a cross hatch pattern through the thick layer of skin and fat. Arrange the onions in the center of a foil lined sheet pan large roasting pan and set the ham on top of them. Bake for 1 hour.
- Meanwhile, stir together the apricot jelly, water, thyme leaves, mustard, 3 tablespoons of the vinegar, the molasses, worcestershire, allspice, and cloves in a saucepan. Whisk over medium heat until the jelly has dissolved and sauce is smooth, about 4 minutes. After the ham has been baked for 1 hour, brush with the apricot mixture every 15 minutes for another 45 minutes or until nicely glazed. Transfer the ham to a serving platter, tent with foil and set aside while making the sauce.
- Discard the onions, remove foil and pour the sauce into a skillet. Add the broth and bring to a boil over high heat. In a small bowl, mix the butter and flour together until you form a paste. Whisk into the pan juices and let sauce simmer until thickened like gravy. Finish with the remaining tablespoon of vinegar and season with salt and pepper to taste.
- Thinly slice the ham and serve with the sauce.

- Preheat the oven to 350°F.
- Remove the ham from the packaging and place it into a large baking dish. Pour the water in the dish with the ham.
- Cover the dish with foil or a lid. Allow the ham to cook covered for about an hour, about 15 minutes per pound.
- Now, you can stop there, this will heat the ham through, and since it's already cooked, you can eat it. However, it's much better to add a glaze.
- Make the glaze by mixing together the butter, brown sugar, orange zest, cinnamon, ground cloves, allspice, and the pinch of salt.
- Pull the ham out of the oven and drain out the water. Brush the top and sides of the ham with one third of the glaze mixture.
- Put the ham back into the oven, uncovered, for 10 minutes. Remove it from the oven and add another third of the glaze. Put it back into the oven for 10 more minutes. Remove it from the oven and add the final third of the glaze. Bake for a final 10 minutes uncovered.
- Remove the ham from the oven, and let it rest, uncovered, for 15 minutes before slicing and serving.

- Remove completely defrosted ham from fridge about 60 minutes prior to cooking. Mix all ingredients except whole cloves and maple syrup in a dish and use your hands to evenly coat the ham with the spice mix.
- Preheat oven to 325F. Line a large roasting pan with tin foil and set aside.Place spice covered ham on a cutting board and use a sharp knife to make 1" diagonal slices (about 1/4" deep) into the layer of exposed fat. Repeat in the other direction to make a diamond pattern.
- Place one whole clove in the middle of each diamond.
- Move ham to roasting pan and place in the oven. Bake, undisturbed for 1 hour and 45 minutes.
- Remove roasting pan and baste ham with 1/2 of the maple syrup. Return to oven and continue cooking for 15 minutes.
- Remove and raise heat to 450F. Baste ham with remaining maple syrup and return to oven for an additional 15 minutes. If there are any very dark spots that you think may burn, fold a small piece of tin foil into a square and gently cover those spots.

- Preheat the oven to 325 degrees F. Score the top of the ham in a diamond pattern; making shallow cuts about 1" apart. Place the ham in a shallow, parchment paper-lined baking pan. Bake the ham for 25 minutes. While the ham bakes, make a glaze by combining the remaining ingredients in a bowl. After the ham has baked for 25 minutes, brush it with the glaze. Bake for 25 minutes more. Rest the ham 5 minutes, before slicing and serving. Note: 1/4 hams (a whole, boneless ham cut into 4 pieces) are available in the meat department.
