MISSISSIPPI SWEET AND SOUR BARBEQUE SAUCE



Mississippi Sweet and Sour Barbeque Sauce image

A sweet and sour version of barbeque sauce for shrimp, pork, and chicken. This sauce is very potent, so use sparingly as a baste while cooking shrimp, pork, and chicken. To make into a dipping barbeque sauce increase the amount of brown sugar to 1 cup and use white vinegar instead of apple cider vinegar.

1 cup ketchup
¾ cup brown sugar
1 (5.5 ounce) can tomato paste
½ cup apple cider vinegar
¼ cup dark corn syrup
2 fluid ounces pineapple juice
1 fluid ounce bourbon whiskey
2 tablespoons water
2 tablespoons minced white onion
2 teaspoons lemon juice
1 ½ teaspoons mustard powder
1 teaspoon hot pepper sauce (such as Tabasco®)
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
⅛ teaspoon ground allspice
1 pinch Chinese five-spice powder
1 pinch celery salt

Steps:

  • Combine ketchup, brown sugar, tomato paste, vinegar, corn syrup, pineapple juice, bourbon whiskey, water, white onion, lemon juice, mustard powder, hot pepper sauce, Worcestershire sauce, salt, black pepper, onion powder, garlic powder, allspice, Chinese five-spice powder, and celery salt together in a saucepan over medium heat. Bring to a boil, reduce heat to low, and simmer until flavors have blended and sauce is slightly reduced, 1 hour.

1 gallon ketchup
20 ounces Worcestershire sauce
10 ounces liquid smoke (hickory)
4 ounces Kitchen Bouquet
10 ounces louisiana hot sauce (use something with the consistency of salsa with pulp and seeds)
12 ounces premium molasses
6 ounces soy sauce
1 tablespoon garlic juice
2 tablespoons celery seeds

Steps:

  • Combine all ingredients in an 8 quart.
  • stock pot.
  • Cook slowly for 1 hour.
  • Store in jars or bottles.
  • (I used empty squeeze ketchup bottles) This does not need to be refrigerated or pressure sealed.

2 cups ketchup
1/2 cup water
1/3 cup apple cider vinegar
1/3 cup brown sugar
2 tablespoons yellow mustard
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 teaspoon cayenne
1/4 teaspoon salt

Steps:

  • Combine all of the ingredients in a medium saucepan over low heat. Stir occasionally and let simmer for 20 minutes. The sauce should be thin but not watery.
  • Remove the sauce from the heat and let it cool, about 20 to 30 minutes.
  • You can use the sauce immediately after cooling, but it is better if you allow it to sit for a day (refrigerated). Place it in an airtight container in the refrigerator (a squeeze bottle is a handy storage container). The barbecue sauce can be stored refrigerated for up to one week after preparation or three to four months in the freezer.

2 tablespoons neutral-tasting oil, such as grapeseed or vegetable
6 cloves garlic, smashed
2 tablespoons tomato paste
1 slightly heaping tablespoon chili powder
1 tablespoon paprika
1 teaspoon crushed red pepper
1/4 teaspoon ground allspice
Pinch ground cloves
2 cups ketchup
2 cups water
1/2 cup cider vinegar
1/4 cup dark molasses
1/4 cup firmly packed dark brown sugar
1 tablespoon kosher salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons English-style dried mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, tomato paste, chili powder, paprika, red pepper, allspice, and cloves and cook, stirring, until paste is dark brick red, about 3 minutes. Add the ketchup, water, vinegar, molasses, brown sugar, salt, soy sauce, Worcestershire, mustard, black pepper, and bay leaf. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove and discard bay leaf before using.

1 cup coarsely chopped onion
2 cloves garlic, smashed
1 cup tomato sauce
1/2 cup apple cider vinegar
1/2 cup ketchup
3 tablespoons packed dark brown sugar
3 tablespoons molasses
3 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 teaspoon garlic powder
Kosher salt
2 teaspoons liquid smoke

Steps:

  • Heat the vegetable oil in a medium pot over medium heat. Add the onion and garlic and cook until the onion is golden, 6 to 7 minutes. Add the tomato sauce, 1 cup water, the vinegar, ketchup, brown sugar, molasses, Worcestershire sauce, tomato paste, mustard, garlic powder and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium low and simmer until the onion is tender, about 15 minutes. Stir in the liquid smoke. Strain the sauce, pressing on the solids to extract any liquid.
