BROILED TOFU WITH MISO (TOFU DENGAKU)



Broiled Tofu With Miso (Tofu Dengaku) image

A sweet-and-salty miso glaze turns tofu into little bites of comfort food, traditionally served on skewers.

Yield Serves 6 (small plate or hors d'oeuvre)

1 (14-to 16-ounces) block firm tofu, drained
1/3 cup red (dark) miso
2 tablespoons sugar
2 tablespoons sake, dry Sherry, or dry white wine
1 teaspoon sesame seeds, toasted
Equipment: 12 two-pronged wooden picks or 24 (2½-to 3½-inch) straight wooden picks

Steps:

  • Pat tofu dry with paper towels, then wrap in fresh paper towels and put in a microwave-safe dish (see cooks' note, below). Microwave at high power 30 seconds. Pour off any liquid and wrap tofu in fresh paper towels. Microwave 1 or 2 more times for 30 seconds each time, pouring off any liquid, until tofu feels firmer.
  • Preheat broiler.
  • Stir together miso, sugar, and sake in a small saucepan. (If miso mixture is very thick, stir in 1 tablespoon water.) Cook over medium-high heat, stirring, until bubbling, glossy, and the consistency of ketchup, 1 to 3 minutes.
  • Cut tofu in half horizontally and arrange, cut sides up, on a cutting board. Cut each half into 6 squares (pieces might not be perfectly square).
  • Arrange tofu on a foil-lined broiler pan, cut sides up, and broil about 2 inches from heat until a crust just forms, 1 to 2 minutes. Remove from oven and spread crusted side of each square with about 3/4 teaspoon miso mixture. Broil until tops are just bubbling and starting to color, 1 to 2 minutes. Transfer to a plate. Skewer each square with 1 two-pronged pick or 2 parallel straight picks. Sprinkle with seeds.

GRILLED TERIYAKI TOFU SKEWERS

1/3 cup soy sauce or tamari ((ensure gluten-free as needed))
1/4 cup coconut sugar ((or sub brown sugar))
1/4 tsp garlic powder
1 ½ tsp rice vinegar
3/4 tsp toasted sesame oil
1/2 tsp arrowroot powder
1 (14-oz.) package extra-firm tofu, cut into 1-inch cubes
1/2 medium red onion, sliced into 1-inch chunks
Avocado oil
Sesame seeds
Thinly sliced green onion

Steps:

  • In a wide, shallow bowl or glass container, whisk together soy sauce or tamari, coconut sugar, garlic powder, rice vinegar, and sesame oil. Remove about 1/3 of the marinade (~2 ½ Tbsp if making the default number of servings) and reserve for making glaze.
  • Add the cubed tofu to the dish with the marinade, stir (or cover with a lid and shake) to coat well, cover, and let sit at room temperature for 30 minutes to marinate.
  • While the tofu is marinating, whisk together the arrowroot and a splash of water in a small saucepan, then add the reserved marinade. Bring to a simmer, whisking frequently until thickened to a glossy glaze - about 2-3 minutes. If it thickens too much, add a little water to thin. If it's too thin, whisk more arrowroot with water, then add to the saucepan and cook to thicken.
  • Once the tofu has finished marinating, lightly oil a grill pan or grill grate and preheat to medium-high. Thread cubed tofu and red onion onto skewers, alternating with 1 piece of red onion in between each tofu cube and ending with a piece of red onion. There should be ~8 tofu cubes per skewer.
  • Next, grill! Make sure as many tofu cubes as possible are making contact with the pan, and turn every 3-4 minutes, until browned and beginning to char in spots - about 10-15 minutes.
  • Transfer to a serving plate, brush the reserved glaze over the tofu, and sprinkle with sesame seeds and sliced green onion (both optional). These skewers are delicious served with rice and steamed broccoli or alongside our Creamy Sesame Noodle Salad.
  • Leftover grilled tofu keeps stored in the refrigerator for 2-3 days.

375g firm, smoked tofu, cut into large chunks
2 garlic cloves, crushed
thumb-sized piece of ginger, peeled and grated
1 tbsp white miso
1 tbsp honey or agave syrup
½ lime, juiced
1 tbsp soy sauce
2 tbsp sesame oil
2 spring onions, cut into 4cm lengths
2 tbsp sesame seeds

Steps:

  • Tip the tofu into a medium bowl. In a separate bowl, mix together the garlic, ginger, miso, honey or agave, the lime juice, soy sauce and sesame oil. Pour this over the tofu, toss gently to combine, cover and chill overnight to marinate.
  • The next day, thread the tofu and spring onion pieces alternately on four large, metal skewers. Light the barbecue and wait until the coals are ashen, then cook the skewers for 4-5 mins on each side until slightly charred. Alternatively, cook under a hot grill for 5-8 mins on each side until golden. Sprinkle over the sesame seeds before serving.

1 tbsp rapeseed oil
70g mixed mushrooms , sliced
50g smoked tofu , cut into small cubes
½ tbsp brown rice miso paste
50g dried buckwheat or egg noodles
2 spring onions , shredded

Steps:

  • Heat half the oil in a frying pan over a medium heat. Add the mushrooms and fry for 5-6 mins, or until golden. Transfer to a bowl using a slotted spoon and set aside. Add the remaining oil to the pan and fry the tofu for 3-4 mins, or until evenly golden.
  • Mix the miso paste with 325ml boiling water in a jug. Cook the noodles following pack instructions, then drain and transfer to a bowl. Top with the mushrooms and tofu, then pour over the miso broth. Scatter over the spring onions just before serving.

400g firm tofu , drained
100g fine green beans
2 tbsp olive oil
2 tbsp black or white sesame seeds , toasted
2 large sweet potatoes
2 spring onions , finely sliced
3 tbsp white miso (if you can't find it, use 2 tbsp brown miso paste)
3 tbsp mirin
3 tbsp lime juice

Steps:

  • Heat oven to 200C/180C fan/gas 6. Wrap the tofu in kitchen paper, place in a shallow dish and put a heavy plate on top to help squeeze out the water. When the paper is wet, replace with another wrapping and weigh down again. Chop the tofu into medium cubes (about 2.5cm). In a small bowl, mix the dressing together with a whisk.
  • Boil the beans for 1 min, then drain, rinse in cold water and set aside. Line a baking tray with parchment, spread out the tofu and pour over half the dressing. Sprinkle the sesame seeds on top and mix well. Bake for 20-25 mins until golden and crisp. Meanwhile, cut the sweet potatoes in half, place in a bowl, cover with cling film and microwave for 10-15 mins until very soft.
  • Mash the sweet potato and serve in bowls with the tofu, green beans, the dressing poured over and some spring onions sprinkled on top.
